Shortening mit der Fettcharakteristik von 20 % Fettkristallen (SFI = solid fat index) bei 20°C und 0% Kristallen bei 45°C und einer Viskosität von ca. 60 cp bei 50°C und 10.000 cp bei 20°C wurde mit direkter Ammoniakverdampfung (-20°C) in einem Schabewärmeaustauscher kontinuierlich von 60°C auf 25°C mit einer Leistung von 4.000 Kg/h gekühlt und anschließend in einem Kristallisator (Pin-worker) nachbehandelt.

Claims (4)
- Schabewärmeaustauscher zum kontinuierlichen Erhitzen oder Kühlen von viskosen oder hochviskosen Massen, insbesondere Shortenings mit einem Produktzylinder (3), der von dem Wärmeträgermedium umgeben und in dem eine drehangetriebene Welle (1) angeordnet ist, die mit dem Produktzylinder einen im Querschnitt ringförmigen Spaltraum (4) zur Aufnahme der zu behandelnden Masse bildet, wobei an der Welle langgestreckte Schabemesser (2) befestigt sind, die an der in Drehrichtung vorne liegenden Kante eine Schneide (13) und dahinter beabstandete Befestigungsstege (14) aufweisen, dadurch gekennzeichnet, daß die Schabemesser (2) in dem Raum hinter der Schneide (13) und zwischen den Befestigungsstegen (14) kammartige Zinken (11) aufweisen.
- Schabewärmeaustauscher nach Anspruch 1, dadurch gekennzeichnet, daß die Zwischenräume (12) zwischen den Zinken (11) ungefähr so breit sind wie die Zinken.
- Schabewärmeaustauscher nach Anspruch 2, dadurch gekennzeichnet, daß bei einem Abstand von ca. 50 mm zwischen den Befestigungsöffnungen (5,7) in den Befestigungsstegen (14) vier Zinken (11) und vier Zwischenräume (12) von jeweils einer Breite von ca. 6 mm und einer Tiefe von ca. 20 mm vorgesehen sind.
- Schabewärmeaustauscher nach einem oder mehreren der vorstehenden Ansprüche 2 oder 3, dadurch gekennzeichnet, daß die Zwischenräume (12) am Ende durch schmale Verbindungsstege überbrückt sind.
