Abstract
Description
- L'invention est relative à un produit sucrant dont le pouvoir édulcorant est égal à celui du saccharose tandis que son pouvoir énergétique est nettement inférieur à celui de ce dernier. Ce produit sucrant, qui a des propriétés organoleptiques pratiquement identiques à celles du saccharose, est destiné à se présenter sous la form de morceaux analogues aux morceaux de saccharose habituels.
- A cet effet, suivant l'invention, le produit sucrant est constitué par un mélange comprenant un sucre et/ou un polyalcool dérivé de sucre, un édulcorant ou un mélange d'édulcorants à haut pouvoir sucrant, un produit ou un mélange de produits ayant la propriété de stabiliser les matières pâteuses à base de sucre et se présentant sous forme de mousse et de l'eau.
- Suivant une forme de réalisation de l'invention, le mélange susdit comprend, en poids et en matière sèche, 50 à 99,4% de sucre, 0,1 à 6% d'édulcorant, et 0,5 à 50% du produit stabilisateur de mousse, l'humidité totale entrant dans la composition du mélange constituant le produit sucrant étant comprise entre 0,5 et 10%.
- Suivant une forme de réalisation avantageuse de l'invention, le produit susdit stabilisateur de mousse est soit un polysaccharide, soit un mélange de polysaccharides.
- L'invention est également relative à un procédé pour la fabrication du produit sucrant susdit.
- Suivant l'invention, ce procédé consiste, pour réaliser le produit sucrant sous la forme de morceaux durs et aérés, à mélanger, à la température ambiante, les composants du produit sucrant, à malaxer ce mélange intimement, à élever progressivement la température du mélange jusqu'à une température comprise entre 80 et 160°C, tout en malaxant ledit mélange sous une pression telle que l'eau qu'il renferme puisse se transformer en vapeur, à donner au mélange la forme d'un ruban de section rectangulaire, à le sectionner pour obtenir les morceaux précités et à refroidir ces derniers.
- L'invention est enfin relative à une installation pour la mise en oeuvre de ce procédé.
- D'autres détails et particuliarités de l'invention ressortiront de la description du dessin annexé au présent mémoire et qui illustre, à titre d'exemple non limitatif, le procédé et l'installation suivant l'invention.
- Le dessin est une vue schématique, en élévation, de l'installation précitée.
- Le produit sucrant, suivant l'invention, est essentiellement constitué par un mélange de sucre, tel que du saccharose, et d'un édulcorant à haut pouvoir sucrant, qui est souvent de 150 à 300 fois plus élevé, à poids égal, que celui du saccharose. La valeur énergétique de l'édulcorant étant soit nulle, soit pratiquement nulle vu les faibles quantités utilisées, le produit sucrant obtenu à base dudit mélange a, pour le même pouvoir édulcorant que du saccharose pur, une valeur énergétique qui est de l'ordre de 10 à 50% de celle de ce saccharose.
- Pour se différencier des produits sucrants à basse valeur énergétique, qui se présentent généralement sous forme de poudres, pastilles ou tablettes, le produit sucrant suivant l'invention se présente sous une forme analogue aux morceaux de saccharose, c'est-à-dire sous la forme de morceaux blancs ou bruns, durs et aérés. Pour obtenir des morceaux de produits sucrants présentant une structure aérée, de densité comprise entre 0,1 et 0,9, dans toute leur masse, le produit sucrant comprend, outre le saccharose et l'édulcorant, un produit ayant comme propriété de stabiliser les matières pâteuses, à base de sucre, qui se présentent, en cours de fabrication, sous forme de mousse et ce, afin que le produit final obtenu conserve, de manière permanente, une structure poreuse dans toute sa masse. Ce produit stabilisateur de mousse peut être soit un polysaccharide, tel qu'amido n, maltodextrine dont le ED est compris entre 2 et 20, sirop de glucose séché, d'un ED supérieur à 20 ou agar, soit une protéine, telle que protéine à base de soja, de blé ou de lait ou encore une gélatine. Le ED est la mesure de la quantité totale de sucres réducteurs dans un hydrolisat d'amidon qui est calculée comme dextrose et exprimée comme pourcentage sur la matière sèche totale, le dextrose ayant un ED égal à 100 et l'amidon un ED égal à 0. Le sirop de glucose utilisé est une solution aqueuse d'amidon partiellement hydrolisé.
- Le mélange permettant d'obtenir le produit sucrant sous la forme de morceaux durs et aérés comprend donc, en poids et en matière sèche, 50 à 99,4% de sucre, 0,1 à 6% d'édulcorant à haut pouvoir sucrant et 0,5 à 50% du produit stabilisateur de mousse, l'humidité totale entrant dans la composition de ce mélange, à partir duquel le produit sucrant est obtenu, étant comprise entre 0,5 et 10%.
- Pour parfaire le goût du produit sucrant et sa mise en solution, le mélange susdit peut également avantageusement comprendre 0,1 à 10% de glutamate de sodium, un carbonate ou bicarbonate, tel que bicarbonate de sodium, et un acide organique alimentaire, tel que de l'acide citrique, les quantités de bicarbonate de sodium et d'acide citrique utilisées étant chacune comprise entre 0,1 et 3%, en poids et en matière sèche.
- Le procédé suivant l'invention, pour obtenir les morceaux durs et aérés susdits, consiste soit à mélanger, en 1, tous les composants du produit sucrant, soit à mélanger, à la température ambiante, toutes les matières solides avant d'y incorporer l'eau, à malaxer intimement, en 2, le mélange final obtenu, à élever progressivement, en 3, la température du mélange, jusqu'à une température maximum comprise entre 80 et 160°C, tout en malaxant ledit mélange sous une pression telle que l'eau qu'il renferme se transforme en vapeur pour donner au mélange sa structure en forme de mousse, à mettre, en 4, le mélange sous la forme d'un ruban continu de section rectangulaire, à sectionner le ruban en 5 pour obtenir les morceaux de produit sucrant et à refroidir ces derniers, qui gardent jusqu'au refroidissement complet leur structure aérée dans la masse, grâce à la présence du produit stabilisateur de mousse. Lorsque du glutamate de sodium, du bicarbonate de sodium et de l'acide citrique sont incorporés au produit sucrant, ceux-ci ne sont pas nécessairement mélangés en 1 aux autres constituants. Ils peuvent en effet être ajoutés par la suite au mélange précité et ce, par exemple, lorsque ce mélange présente sa structure en forme de mousse.
- L'installation suivant l'invention et représentée au dessin comprend essentiellement un extrudeur 6, tel que l'extrudeur à une vis construit par la firme ALMEX-KOSTERS et dont le diamètre est de 40 mm et la filière soit circulaire de diamètre de 4mm, soit rectangulaire de 9 mm sur 14 mm. Cet extrudeur est constitué de douze chambres 7 à 18 alignées dans laquelle est disposée la vis, schématisée par son axe 19, agencée pour assurer, en continu, le transport, le mélange et le malaxage de l'extrémité d'entrée 20 de l'extrudeur vers l'extrémité de sortie 21 de celui-ci constituée par la filière 22 précitée. Une trémie d'alimentation 23 de l'extrudeur en matières sèches est agencée pour introduire le mélange de sucre, édulcorant et produit stabilisateur de mousse dans la chambre 7 de l'extrudeur, ce mélange étant dosé directement dans cette chambre. L'eau entrant dans la composition du produit sucrant est introduite dans la chambre 10 par un conduit 24. Les chambres 7 à 10 de l'extrudeur peuvent être refroidies, par circulateur d'eau, pour maintenir le mélange circulant dans ces chambres à une température de l'ordre de 15°C. Les chambres 11 à 18 sont équipées de résistances électriques non représentées qui sont agencées pour porter progressivement la température du mélange jusqu'à une température maximale de 80 à 160°C. Des moyens de coupe 25, mécaniques ou à laser, sont prévus en aval de la filiè re 22 pour sectionner le ruban de mélange sortant de cette filière en morceaux égaux. L'installation comprend ensuite une enceinte 26 dans laquelle les morceaux sont refroidis et des moyens 27 pour conditionner lesdits morceaux après leur refroidissement.
- On a obtenu d'excellents résultats en utilisant, pour former des morceaux blancs, durs et aérés, comme sucre, du saccharose raffiné ST de la Raffinerie Tirlemontoise de granulométrie MA de 0,55 et de CV au moins égal à 35, comme édulcorant, l'acésulfame potassium de la société Hoechst, connu sous le nom d'Acesulfame K et, comme produit stabilisateur de mousse, un sirop de glucose séché connu sous la marque "MOR-SWEET 01921" de la firme CPC et dont le ED est de 21,2 et l'humidité de 4,8%. En ce qui concerne la granulométrie susdite, le MA (ouverture moyenne) est l'ouverture en mm du tamis qui laisserait passer 50% de sucre et le CV (coefficient de variation) est l'indice de dispersion autour de l'ouverture moyenne (c'est l'écart type exprimé en % de l'ouverture moyenne, ce coefficient étant d'autant plus petit que le grain est régulier).
- Il doit être entendu que l'invention n'est nullement limitée à la forme de réalisation décrite et que bien des modifications peuvent être apportées à cette dernière sans sortir du cadre du présent brevet.
- C'est ainsi que si l'on emploi l'Aspartame comme édulcorant, la température maximale à laquelle pourra être portée le mélange susdit ne pourra pas excéder 130°C.
- On pourrait prévoir plutôt que de former le ruban susdit, de mouler, à la sortie de l'extrudeur 6, le mélange sous forme de mousse pour obtenir les morceaux durs et aérés.
