Abstract

Emulsiones nutritivas acuosas que presentan un contenido elevado de fibras. Una emulsión acuosa que comprende grasas, proteínas e hidratos de carbono, que incluye entre aproximadamente 0,5% y aproximadamente 9,0% en peso de un concentrado de proteínas de la leche, entre aproximadamente 2,0% y aproximadamente 6,0% en peso de glicerina, entre aproximadamente 2,3% y aproximadamente 9,0% en peso de fibras, fructosa y al menos aproximadamente 0,15% en peso de leucrosa, con una proporción en peso entre la fructosa y la leucrosa de al menos 2:1, donde la emulsión acuosa presenta una viscosidad menor que aproximadamente 300 centipoise a 20ºC. Estas emulsiones con un contenido elevado de fibras son estables y presentan propiedades sensoriales y reológicas deseables, perfiles glucémicos modulados y una gastrointestinal tolerancia mejorada.
