Abstract
Una emulsión nutricional de viscosidad inducida que incluye (A) Una proteína que tenga un contenido de sulfóxido de metionina que es 8% o menos del total de metionina fijado a proteína, en base molar, (B) grasa, y (C) un sistema de fibra de viscosidad inducida que provee a la emulsión una viscosidad de paquete de menos 03000 cps y una viscosidad inducida luego del consumo de por lo menos 300 cps, en donde la emulsión nutricional de viscosidad inducida es una emulsión de aceite en agua. Se ha encontrado que la estabilidad del producto es mejorada e incrementada por si misma, por la selección de aquellas fuentes de proteína que tienen un contenido bajo de sulfoxido de metionina.
