Abstract

Целью настоящего изобретения является обеспечение стабильной эмульсии газ-в-масле-в-воде. Такие эмульсии могут использоваться в качестве пищевых продуктов, например майонеза или заправки для салатов. Эта цель достигается с помощью эмульсии газ-в-масле-в-воде, которую получают комбинированием смеси сложного эфира сахарозы и жирных кислот в воде с аэрированным маслом, содержащим сложный эфир сахарозы и жирных кислот. Аэрированное масло диспергируется в водной фазе с получением продукта, содержащего капли масла, включающие пузырьки газа, в непрерывной водной фазе.
