Abstract
Настоящее изобретение относится к композиции в форме эмульсии масло-в-воде, предпочтительно эмульсии майонезного типа, содержащей молотое семя белой или желтой горчицы и модифицированный ферментами яичный желток. Таким способом можно снизить количество масла в эмульсии при сохранении структуры необезжиренного майонеза без применения больших количеств загустителей или структураторов воды. Кроме того, изобретение относится к применению молотого семени белой или желтой горчицы в качестве ингредиента эмульсии для снижения концентрации масла в эмульсии.
