Abstract
Una composición en forma de una emulsión aceite en agua -preferentemente, una emulsión del tipo mayonesa- que contiene semilla de mostaza blanca o amarilla molida y yema de huevo modificada por enzima. De esta manera, es posible reducir la cantidad de aceite en la emulsión y, al mismo tiempo, mantener la estructura de una mayonesa totalmente grasa, sin usar grandes cantidades de agentes espesantes o agentes estructurantes para fase acuosa. Reivindicación 1: Una composición en forma de una emulsión aceite en agua, que comprende lo siguiente: desde 15% hasta 72% en peso de aceite; desde 0,1% hasta 10% en peso de ácido; desde 0,25% hasta 5% en peso de semilla de mostaza blanca o amarilla molida originada de la especie Sinapis alba o Brassica hirta, caracterizada porque la semilla de mostaza blanca o amarilla molida se obtiene al moler semilla de mostaza blanca o amarilla en presencia de agua y vinagre; desde 0,5% hasta 10% en peso de yema de huevo, en la cual al menos 25% en peso de la yema de huevo ha sido modificada mediante tratamiento con una fosfolipasa, preferentemente con fosfolipasa A2; y que tiene un pH que oscila entre 3 y 5.
