Abstract
Настоящее изобретение относится к способу получения водорастворимого экстракта на основе растительной биомассы семейства Melissa officinalis, причем данный экстракт применяют в качестве заменителя сульфита в вышеуказанном процессе получения вина, причем указанный способ включает одну или более из следующих стадий: а) сбор травы, б) высушивание травы, полученной на стадии a), с) экстракцию высушенной травы, полученной на стадии b), где указанная выше стадия экстракции c) включает по меньшей мере две вспомогательные стадии, при этом первая вспомогательная стадия включает первую стадию экстракции водой, причем полученная таким образом водная фаза является исходным материалом для второй вспомогательной стадии, включающей стадию экстракции органическим растворителем, причем водную фазу подкисляют перед второй стадией экстракции.
