Abstract

Настоящее изобретение относится к области ферментации и относится к способу приготовления йогурта путем ферментации, причем способ включает стадии обеспечения стартовой культуры ферментации, содержащей выбранный микроорганизм в подходящей культуральной среде, добавления картофельного белка-ингибитора протеазы в культуральную среду, культивирования микроорганизма и сбор йогурта. Преимуществом данного способа является то, что лаг-период ферментации может быть сокращен путем добавления относительно небольших количеств картофельного белка-ингибитора протеазы. Помимо этого дополнительное преимущество заключается в том, что картофельный белок-ингибитор протеазы позволяет применение настоящего способа в широком диапазоне рН и в широком диапазоне температур, включая пастеризацию, картофельный белок-ингибитор протеазы можно стерилизовать на фильтре, и он не является аллергенным.
