Claims (15)
1. Mælkesyrebakteriestamme, hvor mælkesyrebakteriestammen er valgt fra gruppen bestående af Lactobacillus bulgaricus-stammen PIM-1966, der er deponeret hos Deutsche Sammlung von Mikroorganismen und Zellkulturen under accessionsnummeret DSM 23590, og funktionelt ækvivalente mutanter deraf, som har forælderstammens modstandsdygtighed over for mekanisk forskydningsbehandling.
2. Fremgangsmåde til fremstilling af et fermenteret mælkeprodukt, hvilken fremgangsmåde omfatter: a) inokulering af mælk med en mælkesyrebakteriestamme ifølge krav 1; b) fermentering af mælken med mælkesyrebakteriestammen; c) eventuelt tilsætning af yderligere mikroorganismer og/eller tilsætningsstoffer til mælken; d) eventuelt efterbehandling af mælken og e) eventuelt pakning af det fermenterede mælkeprodukt.
3. Fremgangsmåde ifølge krav 2, hvor trin a) endvidere omfatter inokulering af mælken med mindst én anden mælkesyrebakteriestamme.
4. Fremgangsmåde ifølge krav 3, hvor den mindst ene anden mælkesyrebakteriestamme omfatter mindst én Streptococcus therrnophilus-Stamme og/eller mindst én Lactobacillus bulgaricus-stamme.
5. Fremgangsmåde ifølge krav 4, hvor trin a) omfatter inokulering af mælken med Streptococcus thermophilus-stammen CHCC11977, der er deponeret hos Deutsche Sammlung von Mikroorganismen und Zellkulturen under accessionsnummeret DSM 22935, eller en mutant deraf, og Lactobacillus bulgaricus-stammen PIM-1966, der er deponeret hos Deutsche Sammlung von Mikroorganismen und Zellkulturen under accessionsnummeret DSM 23590, eller en mutant deraf.
6. Fremgangsmåde ifølge et hvilket som helst af kravene 2-5, hvor mælken efterbehandles ved højforskydningsbehandling.
7. Fremgangsmåde ifølge krav 6, hvor højforskydningsbehandlingen er en efterbehandling med et modtryk på 3 til 15 bar.
8. Fremgangsmåde ifølge et hvilket som helst af kravene 2-5, hvor mælken ikke efterbehandles, men henstilles, så den kan sætte sig, efter fermentering.
9. Fremgangsmåde ifølge et hvilket som helst af kravene 2-8, hvor der ikke tilsættes nogen stabilisatorer, såsom stivelse og pectin, til mælken.
10. Fermenteret mælkeprodukt, som omfatter mindst én mælkesyrebakteriestamme valgt fra gruppen bestående af Lactobacillus bulgaricus-stammen PIM-1966, der er deponeret hos Deutsche Sammlung von Mikroorganismen und Zellkulturen under accessionsnummeret DSM 23590, og mutanter deraf.
11. Fermenteret mælkeprodukt ifølge krav 10, hvor det fermenterede mælkeprodukt er en yoghurt.
12. Fermenteret mælkeprodukt ifølge krav 11, hvor yoghurten er en drikkeyoghurt.
13. Fermenteret mælkeprodukt ifølge krav 11, hvor yoghurten er en fast yoghurt.
14. Mælkesyreferment, som omfatter mindst én mælkesyrebakteriestamme valgt fra gruppen bestående af Lactobacillus bulgaricus-stammen PIM-1966, der er deponeret hos Deutsche Sammlung von Mikroorganismen und Zellkulturen under accessionsnummeret DSM 23590, og mutanter deraf.
15. Fremgangsmåde til selektion og opnåelse af en mælkesyrebakteriestamme, hvilken fremgangsmåde omfatter: a) varmebehandling af skummetmælksudgangsprodukt (0,1% fedt, 3,2% protein); b) køling af mælken til mellem 40°C og 43°C; c) inokulering af mælken med mellem 0,01% og 0,03% F-DVS (mellem ca. 1 x 106 CFU/g og ca. 3 x 106 CFU/g) af mælkesyrebakterierne; d) fermentering af mælken med mælkesyrebakteriestammen ved mellem 40°C og 43°C til pH 4,55; e) efterbehandling af den fermenterede mælk opnået fra trin d) i en efterbehandlingsenhed, som omfatter en pladevarmeveksler og en kontraventil, hvor pladevarmeveksleren er tilpasset til at køle yoghurten, der passerer gennem pladevarmeveksler/kontraventil-systemet, til 25°C på mindre end 10 sekunder, og kontraventilen er indstillet til at tilvejebringe et modtryk på 7 bar, hvor den fermenterede mælk ledes gennem pladevarmeveksler/kontraventil-systemet på mindre end 10 sekunder, således at yoghurten køles til 25°C; f) måling af forskydningsspænding efter efterbehandling og g) selektion af mælkesyrebakteriestammen, hvis forskydningsspændingen efter efterbehandling med et modtryk på 7 bar er mindst ca. 12 Pa.
