1 Nærværende opfindelse vedrarer et aromadestillat af en bakteriekultur, som indeliolder Q(-acetomælkesyre til a-romatisering af spisefedt, samt et aromadestillat frem-stillet ved fremgangsmâden.

At definere smoraroma analytisk-kemisk er vanskeligt.
Man har dog i lang tid vidst, at diacetyl er en vigtig aromakomponent i den specielle smorsmag. André vigtige smagsstoffer er acetaldehyd, dimetliylsulfid, eddikesyre 10 2

1 og visse laktoner. En faktor, som ogsâ pâvirker aromaen, er spisefedtets pH-værdi.
Yed fremstilling af sm0r af svensk type anvendes en spe-5 ciel saltning, bvorved sm0rrets pH-værdi 0ges til 6,7-Formâtet med denne pH-<justering er, at forbedre smor-rets oxydationsstabilitet. Smorrets lagerholdbarhed er afhængig af smorrets ρΞ-værdi og saltindiiold pâ den mâ-de, at syrnet og saltet smor bar den ringeste oxydati-10 onsstabilitet og usyrnet og usaitet den bedste. Usyrnet og usaltet smor kan sâledes lagres ca 4 gange sâ lang tid ved 5°C, som tilsvarende syrnet og saltet smor kan.
Yed pïï-justeringen neutraliseres den under den bakteri-15 ologiske syrning af floden dannede mælkesyre, hvis syrlige smag sâledes ikke udnyttes. Syrningskulturens vigtigste formai ved fremstilling af smor af svensk type er der-for at frembringe den specielle smoraroma, dvs. den, som i forste rsekke er fremkaldt af diacetyl.

Det er derfor foreslâet, at man ved fremstillingen af spisefedt erstatter syrningen af floden med aromatise-ring pâ anden mâde. Flere fordele skulle kunne opnâs ved en sâdan ændring, blandt andet skulle man kunne fâ sod 25 kærnemælk, storre fribedsgrad i optimeringen af tempera-turbehandlingen af floden inden kærningen og en mere ens-artet produktkvalitet, særligt med bensyn til lugt og smags egenskab er.
30 Det er ikke bensigtsmæssigt at tilsætte rent, syntetisk fremstillet diacetyl, da man sâ fâr en skaxp uonsket diacetyl smag. For at fâ en korrekt afbalanceret smorsmag skal de ovrige vigtige smagsstoffer som eddikesyre, di-methylsulfid, acetaldehyd og visse laktoner medtages.
Der er go'ort forsog med sâkaldt grynsyrning ved tilsæt-ning af et mælkesyrekoncentrât og to forskellige startcr-kulturer direkte til smorkornene i kærnen. Med denne 35

1 fremgangsmâde opnâs en god simarkvalitet, men metoden er omstændelig, blandt andet ved, at man skal dyrke to specialkulturer. Dette g0r metoden kostbar og mindre attraktiv.

Et andet alternativ er at tilsætte syntetisk fremstil-lede aromavæsker. Med denne fremgangsmâde er det svært at opnâ en god produktkvalitet og fremgangsmâden er ik-ke tillokkende fra et markedsforingssynspunkt, eftersom 10 en sâdan tilsætning skal deklareres efter den nye sven-ske levnedsmiddellov.
En bedre mâde at frembringe den onskede smorsmag i spi-sefedt pâ er, i stedet for syntetiske væsker, at tilsæt-15 te et kolturdestillat til spisefedtet, eftersom et sâ-dant destillat bar en naturlig mej eriteknisk oprindelse.
De hidtil anvendte kulturdestillater fremstilles pâ den mâde, at der til den udvoksede kultur tilsættes EeCl^ 20 for destillationen til oxydation af acetoin til diacetyl. Sâfremt dette ikke gores vil indboldet af diacetyl i de-stillatet. blive for lavt. Dormait er acetoinindboldet 50 - 100 gange storre end diacetylindholdet.
25 Ved nærværende opfindelse fremlægges en fremgangsmâde til fremstilling af et aromadestillat af en bakteriekultur, idet destillatet indeholder(X-acetomælkesyre til. aroma-tisering af spisefedt. Eremgangsmâden kendetegnes ved, at bakteriekulturen syrnes, hvorefter kulturen vanddamp-30 destilleres i nærværelse af ilt (oxygen) til oxydation af QC-acetomælkesyre til diacetyl. Særligt foretrækkes det at indstille bakteriekulturens surbedsgrad til en pH-værdi pâ 3 - 4·· En af destination af ca IQP/o af kulturen ved destillationen er okonomisk.
Dærværende opfindelse omiattey ligeledes et aromadestillat til aromatisering af spisefedt. Aromadestillatet kendetegnes ved at være fremkommet fra en syrnet bakterie- 55

1 kultur indeholdende Q(-acetomælkesyre, idet den syrnede bakteriekultur er blevet underkastet en vanddamp de stillation i nærværelse af oxygen til oxydation afQ(-aceto-maaLkesyren til diacetyl.
5 0(,-acetomælkesyre er et kemisk instabilt, mellemreakti-onsprodukt i citronsyremetabolismen, se figuren. Visse kulturer akkumulerer store indhold af denne forbindelse.
I andre kulturer metaboliseres OC-acetomælkesyren straks, 10 det vil sige, at der ikke sker nogen nævnværdig akkumu-' lering.
Ved fremgangsmâden ifolge nærværende opfindelse er der anvendt en hollandsk starterkultur, som er sammensat af 15 Streptococcus diacetylactis og Streptococcus lactis/cre-moris (D-kultur). Denne dyrkes pâ forskellige medier, for eksempel valle med tilsætning af gærekstrakt og skuïïiïïietmælk med forskelligt TS-indbold med og uden tilsætning af citronsyre.

Den anvendte bakteriekultur har en bemærkelsesværdig kraftig akkumulering af (X-acetomælkesyre, op til et ind-hold pâ 650 mg/kg i et normalt skummetmælkssubstrat med et TS-indhold pâ 9,1%.
25 OC-acetomælkesyrep. i en .bakteriekultur kan omdannes til diacetyl ved luftoxydation i forbindelse med vanddamp-destillation deraf. Ved processen er oxydâtionsudbyttet afhængigt af mediets pH-værdi, sâledes at en pH-værdi 50 pâ 3 - 4, i særdeleshed ca 355î er fordelagtig til opnâ-else af et h.0jt udbytte. Sâfremt pH-værdi en sâledes ju-steres til ca 3?5 forud for destillationen i oxygenat-mosfære kan der nâs et oxydationsudbytte pâ ca 70%· — 35 Ved af destination af ca 10% af det oprindelige kultur-volumen i form af et destillat er ca 85% af den tilgæn-gelige diacetylmængde destilleret over.

1 For at opnâ oxyderende betingelser under destillatio-nen blandes vanddampen med ren oxygen eller luft for indforingen i kulturen.
5 Til syrning af kulturen forud for destillationen til en pH-værdi pâ ca 3>5 kan enhver passende syre anvendes.
Ved forsog er der blandt andet benyttet saltsyre (2N) og mælkesyre (18%) uden nogen ændring i destillatets kvalitet.

En mâde at 0ge(X-aceto:mælkesyreudbyttet under gæringen pâ og dermed at oge diacetylindholdet i destillatet er at oge substratets citronsyreindliold. Dette kan ske en-ten ved at 0ge torstofindboldet i substratet, hvor ci-15 tronsyre er en naturlig komponent, eller ved at tilsæt-te ren citronsyre til substratet. Denne effekt aftager dog ved store citronsyreindliold. En ârsag til dette sy-nes at være, at et tilskud af citronsyre over et vist indliold indebærer, at dette overskud metaboliseres'til 20 eddikesyre og ikke til OC-acetomælkesyre. Hedenfor vises en tabel over forskellige substrater med eller uden til-sætning af citronsyre, samt de opnâede indbold af diace-tyl og eddikesyre i destillatet ved af destination af 10 volumenprocent.

Yderligere findes der intet behov for at tilsætte spe-cialsalt, problemet med hojviscos kærneflode i siorma-skinen ophorer, og temper aturb.ehandlingen af floden kan udfores pâ en mere effektiv mâde. Det er endvidere 10 let at opnâ den typiske smorsmag ogsâ i andre typer madfedt.
15 . Eksempel.
En bakteriekultur fremstilles ved at dyrke specialkul-turen, som er sammensat af S. diacetylactis og S. lac-tiâ/cremoris pâ et substrat af valle med et TS-indhold 20 pâ 13%. ρΞ-værdien i den frembragte kultur justeres til 5,5.
Den syrnede bakteriekultur underkastes derefter en vand-dampdestillation, i bvilken den tilforte vanddamp er 25 blandet med luftformig oxygen i en mængde pâ ea 4 liter ren oxygen pr minut ved et destillationsvolumen pâ 2 liter. Damptilforslen reguleres sâledes, at ca 10% af kul-turens volumen destilleres over i form af destillat pâ ca 20 min. ïïnder disse betingelser destilleres ca 85% 30 af den tilgængelige diacetylmængde over.
Det fremstillede destillat anvendes derefter til aroma-tisering af smor i proveskala. To forsog er gennemfort, det ene med tilsætning af 0,07% destillat (B) og det an-- 35 - det med en tilsætning af 0,14% destillat (C). Destilla- tet indeholdt ca 2000 mg diacetyl/kg. Til sammenligning blev der fremstillet smor ogsâ med den sâkaldte gryn-syrning og aromatisering efter den ovenfor beskrevne 7

1 bollandske metode (A). Provesmorret blev opbevaret ved forskellige temperaturer, nemlig ved -20°C, +6°C og +14-°0, i forskellige tidsperioder. De ferske smorprover blev analyseret med bensyn til ρΞ-værdi og diacetylindbold.

Provesmorret blev opbevaret ved forskellige temperaturer nemlig -20°0, +6°0 og +14-°C. I tabel 3 er bedommel-sesresultaterne med hensyn til lugt og smag opf0rt sam-men med analyseresultaterne med bensyn til smorrets dia-20 cetylindhold, peroxidtal og indhold af frie fedtsyrer.
Lugt- og smagsbedommelsen viser, at smor tilsat 0,07% destinât (prove B) er lige sâ godt som smor efter den bol-landske grynsyrningsmetode. Smerproverne fremviser god 25 oxidationsstabilitet, bvad der fremgâr af de mâlte peroxidtal, ogsâ efter sâ ekstreme lagringsbetingelser som 50 dage ved +14;0C. Der kunne Relier ikke pâvises et 0get lipolyseniveau i 10bet af lagringstiden. De mikro-biologiske analyser af provenue viste, at kvaliteten var 30 god for samtlige provers vedkommende.

Claims (3)
1. Fremgangsmâde til fremstilling af et aromadestillat af en bakteriekultur indeboldende û(-acetomælkesyre til aro-matisering af spisefedt, kendetegnet v e d, at bakteriekulturen syrnes, bvorefter kulturen vanddamp-5 destilleres i nærværelse af ilt (oxygen) til oxidation af 0(-acetomælkesyre til diacetyl.
2. i’remgangsmâde if0lge krav 1, kendetegnet v e d, at bakteriekulturen syrnes til en pH-værdi pâ ca 10 3 - 4.
3. ï'remgangsmâde if0lge krav 1 eller 2, kendet e g -net t e d, at ca 5 - 15% af bakteriekulturen afdestilleres ved destillationen. 15 4. ï’remgangsmâde ifolge mindst et af kravene 1-3» kendetegnet ved, at bakteriekulturen dyr-kes i et substrat med forhojet citronsyreincüiold. 20 5· Aromadestillat til aromatisering af spisefedtstof, kendetegnet ved, at det er fremstillet af en syrnet bakteriekultur indeholdende CC-acetomælkesyre, idet den syrnede bakteriekultur er blevet underkastet en vanddampdestillation i nærværelse af ilt (oxygen) til 23 oxidation af oc-acetomælkesyren til diacetyl. 30
