Description
Method of aging spirits The invention relates to another Formation of the process described in main patent 5 ¢ 9 524. for aging spirits, in which the extract substances are subjected to a separate aging process. It It has now been shown that this irradiation with light from yellow to orange-yellow Color offers particular advantages, whereby as with other irradiation methods for the presence of oxygen must be taken care of, the amount of which is advantageous to that is measured accordingly, which is contained in the original brandy. As special The usual neon glow lamp, whose main emission turned out to be a suitable light source lies in the above-mentioned spectral range. But you can also use other radiation sources use, for example, metal wire lamps or arc lamps. In this case it is but it is necessary to use a filter which is essentially only the yellow ones until orange-yellow rays pass through.
Although it is known to age due to alcoholic liquids To carry out irradiation with simultaneous supply of oxygen. Here, however, were mainly used short-wave rays. Primarily only takes place here the change in taste associated with aging takes place; there is also the risk the over-irradiation because of the much more difficult dosage. These- disadvantages are made by using the yellow to orange-yellow rays, for example a neon glow lamp, avoiding its ultraviolet radiation, which would otherwise be around is necessary for sterilization purposes, but must be excluded. Embodiment Charente distillate is distilled into a vacuum at low temperature Extract concentrate and an alcohol-water mixture separately and the concentrate after Admixture of the predetermined amount of oxygen in closed irradiation apparatus exposed to a neon lamp for several hours, the length of time increasing based on the ratio of surface area to volume of the extract. With very large ones Surfaces can be irradiated with about 8 hours, but that is should not be fallen below, so that a control of the aging remains possible. During the irradiation, the liquid was heated moderately, but below 57 °. The extract is now made with alcohol and Water to the usual percentage brought. The brandy produced in this way shows opposite to that originally used Distillate has the properties of an aged brandy, namely high digestibility as well as the characteristic taste and smell. The irradiation can also be applied the vapor phase be limited.
