Claims (14)

  1. Eine Zusammensetzung, die Gellangummi beinhaltet, im Wesentlichen frei von Arylsulfataseprotein.
  2. Eine Zusammensetzung, die Gellangummi beinhaltet, im Wesentlichen frei von β-Glucoronidaseprotein.
  3. Eine Zusammensetzung, die Gellangummi beinhaltet, im Wesentlichen frei von Arylsulfatase- und β-Glucoronidaseproteinen.
  4. Zusammensetzung gemäß einem der Ansprüche 1 bis 3, die eine Kulturbrühe von Sphingomonas elodea ist.
  5. Zusammensetzung gemäß einem der Ansprüche 1 bis 3, die eine gefällte Kulturbrühe von Sphingomonas elodea ist.
  6. Zusammensetzung gemäß einem der Ansprüche 1 bis 3, die ein sterilisiertes Milchprodukt ist.
  7. Ein isoliertes und gereinigtes Polynukleotid, das eine Arylsulfatase von Sphingomonas elodea mit einer Aminosäuresequenz gemäß SEQ ID NO: 2 codiert.
  8. Isoliertes und gereinigtes Polynukleotid gemäß Anspruch 7, das eine Nukleotidsequenz gemäß den Nukleotiden 521 bis 2176 von SEQ ID NO: 1 beinhaltet.
  9. Ein isoliertes und gereinigtes Polynukleotid, das genomische DNA von Sphingomonas elodea mit einer Deletion der gesamten oder eines Teils von dessen Arylsulfatase codierender Sequenz beinhaltet.
  10. Isoliertes und gereinigtes Polynukleotid gemäß Anspruch 9, wobei die genomische DNA die gesamte oder einen Teil der genomischen DNA von Sphingomonas elodea, die Alkylsulfatase codiert, beinhaltet.
  11. Ein isoliertes und gereinigtes Polynukleotid, das genomische DNA von Sphingomonas elodea mit einer Deletion der gesamten oder eines Teils von dessen β-Glucoronidase codierender Sequenz beinhaltet.
  12. Isoliertes und gereinigtes Polynukleotid gemäß Anspruch 11, wobei die Deletion die von Nukleotiden 1588 bis 3447, SEQ ID NO: 4 ist.
  13. Isoliertes und gereinigtes Polynukleotid gemäß Anspruch 11, wobei die genomische DNA die gesamte oder einen Teil der genomischen DNA von Sphingomonas elodea, die aufwärts von β-Glucoronidase konserviertes hypothetisches Protein codiert, beinhaltet.
  14. Isoliertes und gereinigtes Polynukleotid gemäß Anspruch 11, wobei die genomische DNA die gesamte oder einen Teil der genomischen DNA von Sphingomonas elodea, die Malatdehydrogenase codiert, beinhaltet.
