Abstract

Μία μέθοδος για την παρασκευή ξηρών προϊόντων, ειδικότερα τσιπς, κατά την οποίαν το χρώμα και η γεύση διατηρούνται σε μεγάλο βαθμό, χαρακτηρίζεται από την αφυδάτωση προϊόντων, όπως τσιπς, με μία περιεκτικότητα νερού κατά μέγιστον των 15% κ.β. σε ένα βήμα τελικής ξήρανσης σε μία θερμοκρασία κάτω των 80°C μέσω ενός μέσου αφυδάτωσης. Το προτιμητέο μέσον αφυδάτωσης είναι παρομοίως προϊόντα, όπως τσιπς, περίπτωση κατά την οποίαν αυτά τα προϊόντα έχουν ξηρανθεί σε μία περιεκτικότητα νερού κατά προτίμηση κάτω των 2% κ.β., ειδικότερα 1% κ.β. περίπου ή χαμηλότερα. Αυτή η μέθοδος είναι κατάλληλη παραδείγματος χάριν για την παρασκευή τσιπς κρέατος και/ή τσιπς λαχανικών σε μείγματα που περιέχουν επίσης τσιπς πατάτας και/ή τσιπς δημητριακών.
