Abstract

Proceso para la manufactura de fideos, en el cual se prepara unamezcla de sémola ó harina de cereal y agua, que tiene un contenido de agua del 25 al 40%, la mezcla es convertida en una cinta de pasta, la cinta es laminada y es cortada en forma de fideos, aracterizado porque la mezcla es preparada en una amasadora de tornillos gemelos bajo una presion relativa de 0 a 1000 KPa, y es convertida en una cinta de pasta al presionarla seguidamente a través de una matriz que tiene un orificio de salida oblongo.1Aparato para llevar a cabo el proceso de acuerdo con la reivindicación 1,caracterizado porque comprende una amasadora de tornillos gemelos, una matriz con un orificio de salida oblongo, un dispositivo de laminación y un dispositivo de corte.
