Abstract

La presente invención se refiere a un método para convertir al menos un oligo- y/o polisacárido en fructosa que comprende las etapas de: a) añadir a una composición que comprende agua, fosfato y al menos un oligo- y/o polisacárido al menos cuatro enzimas, y b) subsiguientemente convertir enzimáticamente al menos un oligo- y/o polisacárido en fructosa en presencia de al menos cuatro enzimas, en la que en la etapa a) se agrega al menos un sacárido adicional, por lo que se selecciona al menos un sacárido adicional del grupo que consiste en sacáridos que comprenden 20 o menos residuos de monosacáridos y/o combinaciones de los mismos; en la que en la etapa a) las al menos cuatro enzimas, preferentemente al menos cinco enzimas, se seleccionan del grupo que consiste en transferasas, fosforilasas, mutasas, isomerasas, hidrolasas, fosfatasas y combinaciones de las mismas; y en la que al menos una enzima en la etapa a) es una fosfatasa.
