Abstract
La presente invención se refiere a un método para convertir al menos un oligo y/o polisacárido en fructosa que comprende los siguientes pasos: a) agregar a una composición que comprende agua, fosfato y al menos un oligo y/o polisacárido al menos cuatro enzimas, y b) posteriormente convertir enzimáticamente el al menos un oligo y/o polisacárido en fructosa en presencia de las al menos cuatro enzimas, en donde en el paso a) se agrega al menos un sacárido adicional, en donde el al menos un sacárido adicional se selecciona del grupo que consiste en sacáridos que comprenden 20 o menos residuos de monosacáridos y/o combinaciones de éstos; en donde en el paso a) las al menos cuatro enzimas, preferiblemente al menos cinco enzimas, se seleccionan del grupo que consiste en transferasas, fosforilasas, mutasas, isomerasas, hidrolasas, fosfatasas y combinaciones de éstas; y en donde al menos una enzima en un paso a) es una fosfatasa.
