Abstract
La invención se refiere a procesos mejorados para la producción enzimática de alulosa mediante el uso de enzimas que se han caracterizado por tener expresión mejorada, estabilidad mejorada y baja actividad de conversión de alulosa en fructosa, en relación con enzimas en otros métodos de producción de alulosa.
