Abstract

La invención se refiere a procesos mejorados para la producción enzimática de alulosa usando enzimas cuyas características son expresión mejorada, estabilidad mejorada y bajo nivel de actividad de conversión de alulosa a fructosa, en relación con las enzimas utilizadas en otros métodos de producción de alulosa. Los procesos mejorados incluyen pasos de conversión de fructosa-6-fosfato a alulosa 6-fosfato (A6P) usando una alulosa 6-fosfato epimerasa, y convirtiendo la A6P en alulosa usando una alulosa-6-fosfato fosfatasa. Reivindicación 1: Un proceso mejorado para la producción de alulosa a partir de un sacárido, en donde dicha mejora comprende la conversión de fructosa-6-fosfato (F6P) a alulosa 6-fosfato (A6P) usando una alulosa 6-fosfato epimerasa (A6PE), en donde la A6PE comprende una secuencia de aminoácidos con una identidad de secuencias de al menos 90% según la SEQ ID Nº 1. Reivindicación 2: Un proceso mejorado para la producción de alulosa a partir de un sacárido, en donde dicha mejora comprende la conversión de A6P a alulosa usando una alulosa 6-fosfato fosfatasa (A6PP), en donde la A6PP comprende una secuencia de aminoácidos con una identidad de secuencias de al menos 90% según la SEQ ID Nº 2.
