Abstract

PRODUÇÃO DE FRUTOSE A PARTIR DE OLIGO- E/OU POLISSACARÍDEOS. A presente invenção se refere a um método para converter pelo menos um oligo- e/ou polissacarídeo em frutose que compreende as etapas de: a) adicionar a uma composição, que compreende água, fosfato e pelo menos um oligo- e/ou polissacarídeo, pelo menos quatro enzimas, e b) subsequentemente converter enzimaticamente o pelo menos um oligo- e/ou polissacarídeo em frutose na presença das pelo menos quatro enzimas, em que, na etapa a), pelo menos um sacarídeo adicional é adicionado, sendo que o pelo menos um sacarídeo adicional é selecionado a partir do grupo que consiste em sacarídeos que compreendem 20 ou menos resíduos de monossacarídeo e/ou combinações dos mesmos; em que, na etapa a), as pelo menos quatro enzimas, preferencialmente pelo menos cinco enzimas, são selecionadas a partir do grupo que consiste em transferases, fosforilases, mutases, isomerases, hidrolases, fosfatases e combinações das mesmas; e em que pelo menos uma enzima na etapa a) é uma fosfatase.
