食品强化
本发明涉及食品的强化,更具体地说,涉及用钙强化食品。
钙是人类饮食中重要的元素以满足骨的形成和维护的要求及其它新陈代谢功能,如神经传导,血凝结,正常的细胞功能和肌肉收缩。通常是用钙源强化食品,这些钙源要么不溶,要么在中性pH附近可溶。近来用于强化的,不可溶的或在中性pH附近基本上不溶的许多的钙源如碳酸钙、磷酸钙、柠檬酸钙和其它有机酸的钙盐产生沉淀和粉笔样的口感。可溶的或在中性pH附近基本上可溶的其它钙源如氯化钙,氢氧化钙和一些有机酸的钙盐与乳蛋白反应,生产不希望有的凝固和沉淀。
通常也通过加入角叉菜胶、果胶和/或其它树胶稳定或减少用钙源强化的乳饮料中钙和乳蛋白的沉淀,但这类物料赋予牛乳不希望有的高粘度。蛋白质不稳定,如沉淀和凝固,主要归因于体系中游离钙离子。
非常希望有一种钙源以强化乳饮料和其它奶产品而没有凝固和沉淀,具有提高了的可口性。
我们已经研究出和可溶的和不溶的盐平衡的,用葡萄糖醛酸源稳定的钙盐混合物,该葡萄糖醛酸能强化乳饮料和其它奶产品而没有凝固和沉淀,具有提高的可口性。
根据本发明,提供一种强化的食料,该食料包含一强化量的和可溶的和不溶的盐平衡的,用葡萄糖醛酸源稳定的钙盐混合物。
食料可以是奶产品如乳饮料,糖果产品,冰淇淋或其它饮料如汁。
可溶钙盐的实例是乳酸钙和葡萄糖酸钙,甘油磷酸钙、氯化钙等、不溶钙盐的实例是磷酸三钙、磷酸二钙、柠檬酸钙和碳酸钙。可溶与不溶盐的重量比是从1∶3到3∶1,优选1.5∶2.5-2.5∶1.5。
存在于强化食料中的钙盐混合物的量可以是0.05-5%,优选0.1-2.5%,更优选0.2-1.0%,以食料的重量汁。
葡萄糖醛酸的来源可以是印度树胶,但优选阿拉伯树胶。存在于强化食料中的阿拉伯树胶的量可以是0.05-2.5%,优选0.1-1.0%,更优选0.2-0.5%,以食料的重量汁。尽管不希望被理论所束缚,我们相信在阿拉伯树胶中葡萄糖醛酸残余物通过离子键合有助于悬浮钙而对粘度没有显著影响。
角叉菜胶的存在是有利的,角叉菜胶可以是λ-或i-型,但优选k-角叉菜胶。存在于强化食料中的角叉菜胶的量可以是0.005-0.1%,优选0.1-0.05%,更优选0.02-0.04%,以食料的重量汁。
通过形成钙盐混合物的制剂,该制剂与葡萄糖醛酸源接触,并加到食料中来制备强化食料,该强化食料含有一强化量的与可溶和不溶盐及葡萄糖醛酸源一起平衡的钙盐混合物。
钙盐混合物和葡萄糖醛酸源可以水溶液形式或悬浮液形式或作为干粉加入。
角叉菜胶加到食料中是有利的,优选在钙盐混合物制剂加到食料中之前。角叉菜胶亦可以水溶液或悬浮液的形式或作为干粉加到食料中。
如果需要,钙盐混合物,葡萄糖醛酸和任选的角叉菜胶可共加干燥,并作为粉末加入。可通过本领域技术人员公知的各种方法进行干燥。
下面的实施例进一步说明本发明。
实施例1
制备下列溶液/悬浮液
A在79.9ml水中1.155g乳酸钙。
B.在50ml水中1.19g柠檬酸钙。
C.在40ml水中0.52g磷酸三钙。
D.混合A、B和C的溶液/悬浮液10分钟以得到钙盐混合物。
E.2.5g阿拉伯树胶分散于100g水中并充分水合。
F.0.15gk-角叉菜胶(Sea Kem CM611)加到830g脱脂乳中,加入的脱脂乳粉用以调节乳固形物以考虑进最终产品中的溶液/悬浮液的附加水分。
G.钙盐混合物D加到树胶溶液E中并混合10分钟。
H.钙盐和阿拉伯树胶溶液的混合物G加到乳和角叉菜胶的混合物F中以制备最终产品和pH值调节至6.6-7.0。
将最终产品UHT杀菌和均质。在2℃-5℃和室温下贮存过程中,牛乳稳定而没有任何沉淀。
实施例2
A.将1.155g乳酸钙、1.19g柠檬酸钙和0.5g碳酸钙干混合。
B.0.15gk-角叉菜胶和2.5g阿拉伯树胶加到994.5g冷的牛乳中。
C.钙混合物A加到含角叉菜胶和阿拉伯树胶的乳的混合物中,PH调节至6.6-7.0。
将最终产品UHT杀菌并无菌包装。在2°-5℃和室温下贮存过程中,牛乳稳定而没有任何沉淀。
对比实施例A
进行类似于实施例1的步骤,但不加阿拉伯树胶和k-角叉菜胶。
在加工过程中,UHT杀菌和均质的牛乳不稳定,有显著的沉淀。
对比实施例B
进行类似于实施例2的步骤,但不加阿拉伯树胶。
在加工过程中,牛乳稳定,但在2°-5℃下贮存5周后出现显著沉淀。

Claims (15)

1、一种含有一强化量的与可溶和不溶盐及葡萄糖醛酸源一起平衡的钙盐混合物的强化食料。
2、权利要求1的强化食料,其中食料是乳产品,糖果产品,冰淇淋或饮料。
3、权利要求1的强化食料,其中可溶钙盐是乳酸钙、葡萄糖酸钙,甘油磷酸钙或氯化钙。
4、权利要求1的强化食料,其中不溶钙盐是磷酸三钙、磷酸二钙、柠檬酸钙或碳酸钙。
5、权利要求1的强化食料,其中可溶与不溶盐的重量比是1∶3-3∶1。
6、权利要求1的强化食料,其中存在于强化食料中的钙盐混合物的量是0.05-5%,以食料的重量计。
7、权利要求1的强化食料,其中葡萄糖醛酸源是阿拉伯树胶。
8、权利要求1的强化食料,其中存在于强化食料中的阿拉伯树胶的量是0.05-2.5%,以食料的重量计。
9、权利要求1的强化食料,其中存在角叉菜胶。
10、权利要求1的强化食料,其中存在于强化食料中的角叉菜胶的量是0.005-0.1%,以食料的重量计。
11、一种制备含有一强化量的,与可溶和不溶盐及葡萄糖醛酸一起平衡的钙盐混合物的强化食料的方法,该方法包括形成钙盐混合物的制剂,该制剂与葡萄糖醛酸源接触,将其加到食料中。
12、权利要求11的方法,其中钙盐混合物和葡萄糖醛酸源以水溶液或悬浮液的形式或作为干粉加入。
13、权利要求11的方法,其中角叉菜胶加到食料中。
14、权利要求13的方法,角叉菜胶以水溶液或悬浮液的形式或作为干粉加到食料中。
15、权利要求11的方法,其中钙盐混合物、葡萄糖醛酸、任选的角叉菜胶共加干燥并作为粉末加入。
