本发明涉及一种基于再造烟叶增香提质的醇化方法,将罗平小黄姜研磨为>400目的粉末;将罗平小黄姜粉末与95%酒精按质量比1~1.5:30~60混匀,制备生姜溶液;将再造烟叶切成烟丝并剪短混匀,按生姜溶液:再造烟叶烟丝=1.0~1.5:10的比例,均匀喷晒于再造烟叶烟丝表面,用袋密封;将处理再造烟叶置于湿度65~70%、温度22~25℃的恒温恒湿箱醇化45~60d。本发明提供的再造烟叶相比传统再造烟叶,致香成分增加了莰烯、香叶醇、香叶醛、丁子香酚,有利于增加辛香;同时新植二烯含量显著增加,香气丰富性更好,灼热感降低,综合感官质量较好。

本发明属于烟草制品技术领域,具体涉及一种基于再造烟叶增香提质的醇化方法。
背景技术
再造烟叶又称为烟草薄片,其生产技术主要有辊压法、稠浆法、造纸法。其中造纸法再造烟叶是将烟梗、碎片、烟末以热水浸泡提取并经固液分离,将得到的提取液真空浓缩后调配为涂布液,剩余固渣则通过制浆并在特定纸机上抄造成型为片基,然后将涂布液均匀涂布于片基表面,再经干燥而成再造烟叶,目前在卷烟产品配方中所用再造烟叶的多为造纸法再造烟叶。
由于造纸法再造烟叶是利用烟叶原料加工和卷烟生产过程中产生的大量副产品(碎烟、烟末、烟灰和烟梗)以及木浆、麻浆等制成,片基大多数为纤维素、木质素等支撑物质,加之浓缩液中也存在此类大量分子物质,大量烟草本香物质流失,再造烟叶吸食品质,只有通过涂布液添加香味物质来保障其质量。
再造烟叶通过一定时间醇化有利于大分子物质的降解,从而提升再造烟叶香气、降低刺激和杂气、改善口感。
罗平小黄姜主要种植于云南罗平,根茎类香辛调味料,是传统的药用植物,具有药用“黄金”之美誉,含有姜苯酚、姜油酮、姜烯酚和姜醇等辛香类化合物和呢啶酸、谷氨酸、天门冬氨酸、甘氨酸等多种氨基酸;质细纤小,含油量高,芳香浓郁;对含脂肪的食品有很强的抗氧化作用,能钝化一种叫DMN的化学物质的活性,从而阻止细胞的癌变过程,有湿中止呕,祛风散寒的功效。在生姜的发酵过程中,会产生姜烯、橙花叔醇、红没药烯、柠檬烯等香味物质,赋予优雅的辛香。
在现有的技术中,尚未发现利用罗平小黄姜辅助再造烟叶醇化,从而达到再造烟叶增香提质的目的。
发明内容
本发明的目的在于提供一种基于再造烟叶增香提质的醇化方法,以实现利用罗平小黄姜辅助再造烟叶醇化,从而达到再造烟叶增香提质的目的。
为实现上述目的,本申请是通过以下技术方案实现的:
一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为粉末;
(2)将步骤(1)的罗平小黄姜粉末与95%酒精按设定质量比混匀,制备生姜溶液;
(3)将再造烟叶切成烟丝并剪短混匀,将步骤(2)的生姜溶液均匀喷晒于再造烟叶烟丝表面后密封;
(4)将步骤(3)密封后的再造烟叶烟丝置于湿度65~70%、温度22~25℃的恒温恒湿箱醇化45~60d。
进一步的,步骤(1)中的罗平小黄姜粉末为>400目。
进一步的,步骤(2)中的设定质量比为1~1.5:30~60。
进一步的,步骤(3)中生姜溶液与再造烟叶按质量比为1.0~1.5:10的比例。
进一步的,再造烟叶的烟叶原料为烟叶碎片、烟梗或烟末中的一种以上。

以下通过实施例对本发明的技术方案进行详细的说明,以下的实施例仅是示例性的,仅能用来解释和说明本发明的技术方案,而不能解释为是对本发明技术方案的限制。
本申请涉及一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为>400目的粉末;
(2)将步骤(1)的罗平小黄姜粉末与95%酒精按质量比为1~1.5:30~60混匀,制备生姜溶液;
(3)将再造烟叶切成烟丝并剪短混匀,生姜溶液与再造烟叶按质量比为1.0~1.5:10的比例,将步骤(2)的生姜溶液均匀喷晒于再造烟叶烟丝表面后密封;
(4)将步骤(3)密封后的再造烟叶烟丝置于湿度65~70%、温度22~25℃的恒温恒湿箱醇化45~60d。
实施例1
一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为>400目的粉末;
(2)取50g云南中烟再造烟叶公司生产的再造烟叶产品KM-13切成烟丝,剪短混匀;
(2)将步骤(1)的罗平小黄姜粉末1g与30ml的95%酒精混匀,制备生姜溶液;
(4)将上述50g再造烟叶切成的烟丝均匀喷洒5g生姜溶液,混合均匀并半夜袋密封,命名为实验样品;
(5)将步骤(4)的试验样品置于湿度70%、温度25℃的恒温恒湿箱醇化45d;
(6)将步骤(5)醇化后的样品在湿度60%、温度22℃的恒温恒湿箱平衡至再造烟丝水分为12%,进行感官质量评价和致香成分含量测定。
实施例2
一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为>400目的粉末;
(2)取50g云南中烟再造烟叶公司生产的再造烟叶产品KM-13切成烟丝,剪短混匀;
(2)将步骤(1)的罗平小黄姜粉末1.5g与30ml的95%酒精混匀,制备生姜溶液;
(4)将上述50g再造烟叶切成的烟丝均匀喷洒7g生姜溶液,混合均匀并半夜袋密封,命名为实验样品;
(5)将步骤(4)的试验样品置于湿度70%、温度25℃的恒温恒湿箱醇化45d。
实施例3
一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为>400目的粉末;
(2)取50g云南中烟再造烟叶公司生产的再造烟叶产品KM-13切成烟丝,剪短混匀;
(2)将步骤(1)的罗平小黄姜粉末1.2g与30ml的95%酒精混匀,制备生姜溶液;
(4)将上述50g再造烟叶切成的烟丝均匀喷洒6g生姜溶液,混合均匀并半夜袋密封,命名为实验样品;
(5)将步骤(4)的试验样品置于湿度70%、温度25℃的恒温恒湿箱醇化45d。
对照例1
一种基于再造烟叶增香提质的醇化方法,包括以下步骤:
(1)将罗平小黄姜研磨为>400目的粉末;
(2)取50g云南中烟再造烟叶公司生产的再造烟叶产品KM-13切成烟丝,剪短混匀;
(3)将上述50g的再造烟叶切成的烟丝喷洒5g纯水,混合均匀并装袋密封,命名为对照样品;
(4)将对照样品置于湿度70%、温度25℃的恒温恒湿箱醇化45d;
(5)将醇化后的样品在湿度60%、温度22℃的恒温恒湿箱平衡至再造烟丝水分为12%,进行感官质量评价和致香成分含量测定。
通过对实施例1的实验样品和对照例的对照样品的致香成分检测,其结果见表1。由表1可知,与对照再造烟叶样品致香成分相比,加入罗平小黄姜粉醇化的再造烟叶样品致香成分中增加了莰烯、香叶醇、己酸、香叶醛、2-乙基-1-己醇、甲基环戊烯醇酮、三醋酸甘油酯、丁子香酚、3-(1-甲基乙基)(1H)吡唑[3,4-b]吡嗪,其中莰烯、香叶醇、香叶醛、丁子香酚有利于增加辛香;同时新植二烯含量显著增加,这是加入罗平小黄姜粉醇化的再造烟叶增加优雅辛香、香气丰富,综合感官质量较好的物质基础。

经对对照样品和试验样品进行香韵组分、香气特性、口感特性进行评价,结果表明:与对照样品相比,试验样品增加了辛香,香气丰富性更好,香气量略增,灼热感降低,刺激略大,综合感官质量较好(见表2)。

尽管已经示出和描述了本发明的实施例,对于本领域的普通技术人员而言,可以理解在不脱离本发明的原理和精神的情况下可以对这些实施例进行多种变化、修改、替换和变形,本发明的范围由所附权利要求及其等同限定。
Claims (8)
1.一种基于再造烟叶增香提质的醇化方法,其特征在于,包括以下步骤:
(1)将罗平小黄姜研磨为粉末;
(2)将步骤(1)的罗平小黄姜粉末与95%酒精按设定质量比混匀,制备生姜溶液;
(3)将再造烟叶切成烟丝并剪短混匀,将步骤(2)的生姜溶液均匀喷晒于再造烟叶烟丝表面后密封;
(4)将步骤(3)密封后的再造烟叶烟丝置于湿度65~70%、温度22~25℃的恒温恒湿箱醇化45~60d。
2.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(1)中的罗平小黄姜粉末为>400目。
3.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(2)中的设定质量比为1~1.5:30~60。
4.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(3)中生姜溶液与再造烟叶按质量比为1.0~1.5:10的比例。
5.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,再造烟叶的烟叶原料为烟叶碎片、烟梗或烟末中的一种以上。
6.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(4)醇化后的再造烟叶烟丝与对比样品相比,致香成分中增加了莰烯、香叶醇、己酸、香叶醛、2-乙基-1-己醇、甲基环戊烯醇酮、三醋酸甘油酯、丁子香酚及3-(1-甲基乙基)(1H)吡唑[3,4-b]吡嗪。
7.根据权利要求6所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(4)醇化后的再造烟叶烟丝中增加了莰烯、香叶醇、香叶醛及丁子香酚一种以上有利于增加辛香的致香成分。
8.根据权利要求1所述的基于再造烟叶增香提质的醇化方法,其特征在于,步骤(4)醇化后的再造烟叶烟丝中新植二烯含量较对比样品显著增加。
