本发明公开了一种营养素固体饮料配方及生产工艺,其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白140g、聚葡萄糖、柑橘纤维89.6g、黑豆粉44.8g、酶解燕麦粉44.8g、营养酵母44.8g、复配矿物质28g、燕麦β‑葡聚糖26.88g、淡豆豉粉22.4g;所述预混料包括磷脂16.8g、维生素E1.12g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为100.8g。包括如下步骤:S1、领料;S2、预处理;S3、称量;S4、预混;S5、混合;S6、包装;S7、检验入库。本发明建立营养素固体饮料加工生产工艺规程,使生产操作规范化,标准化,符合公司生产实际和管理要求,保证产品生产质量均一、稳定。
Description
技术领域
本发明属于固体饮料技术领域,具体涉及一种营养素固体饮料配方及生产工艺。
背景技术
随着人们对饮品保健作用的要求,固体饮料具有口味绝佳,提高人体免疫力,营养丰富等特点,越来越受人们的喜爱,但是固体饮料在生产过程中,规范化、标准化程度低,不符合生产实际和管理要求,产品生产质量不稳定,为此,我们提出一种营养素固体饮料配方及生产工艺。
发明内容
本发明的目的在于提供一种营养素固体饮料配方及生产工艺,以解决上述背景技术中提出的问题。
为实现上述目的,本发明提供如下技术方案:一种营养素固体饮料配方,其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白140g、聚葡萄糖、柑橘纤维89.6g、黑豆粉44.8g、酶解燕麦粉44.8g、营养酵母44.8g、复配矿物质28g、燕麦β-葡聚糖26.88g、淡豆豉粉22.4g;所述预混料包括磷脂16.8g、维生素E1.12g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为100.8g。
浓缩乳清蛋白具有提高免疫力的作用,是一种口服免疫球蛋白的保健食品,含有5种免疫球蛋白,18种氨基酸,6种矿物质,2种维生素。
聚葡萄糖属于一种水溶性的膳食纤维,一般为白色的固体颗粒,易溶解于水,没有特殊的气味。它是一种具有保健功能的食品,可以补充人体所需的水溶性膳食纤维,进入人体消化系统以后产生特殊的生理代谢功能,起到治疗便秘的作用。
柑橘纤维具有肠道蠕动和血糖调节作用。柑橘膳食纤维可以增加和软化肠道内的食物,促进肠道蠕动,从而加快排便速度,避免减少排便次数,减少大肠癌的危害。还可以调节血糖并帮助预防糖尿病,还能减少消化过程中脂肪的消化吸收,从而降低血液中胆固醇和甘油三酯的含量,防止全身动脉血压升高和心脑血管疾病。
黑豆具有祛风除热、调中下气、解毒利尿、补肾养血的功效,适合眩晕、盗汗的患者服用。另外黑豆自身含有一种特殊的物质,即维生素E,其有抗氧化的效果,可以起到延缓衰老、降低血糖的功效。
酶解燕麦粉主要是用去壳后的燕麦研成粉末以后制作而成。营养含量比较丰富,里面有脂肪、可溶性纤维,还有大量的氨基酸、维生素b等微量元素。多吃一些燕麦粉可以有效的补充身体所需要的营养成分、促进新陈代谢。而且可以在肠道内与胆固醇代谢产物结合从而加速胆固醇的代谢,促进肠道蠕动,缓解便秘。而且可以降低血压、降低血脂,起到养生保健的作用。
营养酵母是生活中比较常见的一种物品,食用营养酵母能改善身体营养不良和缺铁性贫血。酵母粉中含有非常丰富的蛋白质,可以增进食欲。可用于治疗消化不良、呕吐、痢疾、脚气、多发性神经炎、皮肤病等症状。
复配矿物质的成分主要以矿物质为主,不含有任何的不利人体健康物质。而这款产品的作用主要体现在以下几点,第一点,它可以保护肝脏的健康,有帮助身体排毒的作用,使得肝脏代谢酒精和代谢毒素的能力变得更强,进而预防了酒精肝,脂肪肝和肝硬化等疾病的发生。
第二点,复合矿物质片的作用在于,很好的保护了骨骼的健康,预防骨质增生或者是风湿肿痛等疾病,而且对已经出现的疾病,还有辅助治疗的作用。第三点,它的作用在于能够延缓人体衰老的速度,使人体和皮肤更加的年轻态。
燕麦β-葡聚糖能够减少小肠对脂肪及胆固醇的吸收率,从而降低血清胆固醇;此外,还可以减少小肠对碳水化合物的吸收,从而降低血浆胰岛素浓度,减弱对胆固醇及脂蛋白合成的刺激;
在小肠内与胆汁酸结合,增加了胆汁酸的排泄及胆汁酸的合成,从而加速胆固醇向胆汁酸的转化;在结肠内通过微生物的发酵降解产生短链脂肪酸,抑制了胆固醇的合成。
淡豆豉粉主要是解表除烦,而且也有宣发郁热功用。淡豆豉通常用于感冒而出现的寒热、怕冷、发热的病症,用于头疼,也用于烦躁、出现胸闷的一些病症。另外淡豆豉也有治疗虚烦、失眠的症状,有苦寒的作用,主治伤寒、头痛、发热、烦躁等疾病。
磷脂磷脂能够维持人体的基本的生命活动,提高免疫力,对人体是很有好处的。有专家进行研究,认为它好处是多方面的,比如延缓衰老,保持皮肤的弹性,保持年轻,口服磷脂这一类药物可以保持心脏年轻,促进心肌的代谢等等,好处很多。
维生素E属于常见又很重要的脂溶性维生素,具有多种重要生理功能,具体如下:
1、抗氧化作用:维生素E能够清除体内自由基,发挥较多重要功能,比如延缓自由基对细胞的损伤,减缓衰老,同时可促进机体免疫功能,预防癌症;
2、对心血管的作用:维生素E能够改善脂质代谢,预防粥样硬化,还可促进局部血液循环,预防凝血、血栓形成;
3、对生殖系统的作用:维生素E对于男性可以提高精子活力和数量,对于女性可以维持雌激素浓度,提高生育能力,减少流产发生;
4、对皮肤的作用:维生素E可以通过抑制黑色素细胞合成黑色素起到淡斑的作用,还可促进伤口愈合,减轻局部疤痕形成。
本发明还提供一种营养素固体饮料配方的生产工艺,包括如下步骤:
S1、领料:
领料员根据批生产指令,到仓库领用合格物料;
S2、预处理:
取适量磷脂以40目过筛,取筛后细粉称量;
S3、称量:
称量前,需确认原料有无结团或结块情况,如有结团或结块的物料应按照出厂报告中的粒度要求过筛,此外,还应先校验衡器,并调整至零位,平衡后方可称量,及时作好记录,转到下一步工序;
S4、预混:
先将称量好的磷脂与适量聚葡萄糖预混,同时将称量好的维生素E与适量聚葡萄糖预混,将上述两个预混料,分别备用;
S5、混合:
将称量好的原料及预混料投入三维混合机中混合,三维混合机的转速为15-35Hz,混合时间为30min,混合好后转入下一工序;
S6、包装:
包装按批包装指令执行;
S61、内包装:
把混合好的粉末转入上料机中,经自动包装机进行包装,按包装机操作规程进行操作,每袋装量按产品规定设置;
S62、外包装:
按包装岗位标准操作程序进行装盒和装箱,并用喷码机打印生产日期,生产结束后,清场;
S7、检验入库:
S71、生产结束后,产品经QA检查,应符合包装质量标准,签发入库检验放行单;
S72、保管员将包装后的产品数量填好入库单,连同QA放行单一起送至成品仓库,挂上状态标志,报质量部进行出厂检验,检验合格后方可出厂。
与现有技术相比,本发明的有益效果是:本发明提供的一种营养素固体饮料配方及生产工艺,本发明建立营养素固体饮料加工生产工艺规程,使生产操作规范化,标准化,符合公司生产实际和管理要求,保证产品生产质量均一、稳定。

实施例1:本发明提供了如图1的一种营养素固体饮料配方,其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白140g、聚葡萄糖、柑橘纤维89.6g、黑豆粉44.8g、酶解燕麦粉44.8g、营养酵母44.8g、复配矿物质28g、燕麦β-葡聚糖26.88g、淡豆豉粉22.4g;所述预混料包括磷脂16.8g、维生素E1.12g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为100.8g。
一种营养素固体饮料配方,以560g成品计如下表1:

实施例2:本发明提供了一种营养素固体饮料配方,其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白130g、聚葡萄糖、柑橘纤维80g、黑豆粉35g、酶解燕麦粉35g、营养酵母45g、复配矿物质20g、燕麦β-葡聚糖23g、淡豆豉粉20g;所述预混料包括磷脂10g、维生素E 2g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为120g。
实施例3:本发明提供了一种营养素固体饮料配方,其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白150g、聚葡萄糖、柑橘纤维70g、黑豆粉45g、酶解燕麦粉35g、营养酵母45g、复配矿物质34g、燕麦β-葡聚糖20g、淡豆豉粉23g;所述预混料包括磷脂20g、维生素E 3g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为90g。
本发明还提供一种营养素固体饮料配方的生产工艺,包括如下步骤:
S1、领料:
领料员根据批生产指令,到仓库领用合格物料;
S2、预处理:
取适量磷脂以40目过筛,取筛后细粉称量;
S3、称量;
S4、预混:
先将称量好的磷脂与适量聚葡萄糖预混,同时将称量好的维生素E与适量聚葡萄糖预混,将上述两个预混料,分别备用;
S5、混合:
将称量好的原料及预混料投入三维混合机中混合,混合好后转入下一工序;
S6、包装:
包装按批包装指令执行;
S7、检验入库。
所述步骤S3具体包括:称量前,需确认原料有无结团或结块情况,如有结团或结块的物料应按照出厂报告中的粒度要求过筛,此外,还应先校验衡器,并调整至零位,平衡后方可称量,及时作好记录,转到下一步工序。
所述步骤S5中三维混合机的转速为15-35Hz,混合时间为30min。

S62、外包装:

所述步骤S7中检验入库具体包括:
S71、生产结束后,产品经QA检查,应符合包装质量标准,签发入库检验放行单;
S72、保管员将包装后的产品数量填好入库单,连同QA放行单一起送至成品仓库,挂上状态标志,报质量部进行出厂检验,检验合格后方可出厂。
本发明的目的:建立营养素固体饮料加工生产工艺规程,使生产操作规范化,标准化,符合公司生产实际和管理要求,保证产品生产质量均一、稳定。
范围:本生产工艺规程适用于营养素固体饮料生产的全过程,是公司各部门遵循的技术准则。
职责:生产车间按该工艺规程组织生产,根据该规程编制的标准操作规程,由品质部、生产部共同监督实施。
综上所述,与现有技术相比,本发明建立营养素固体饮料加工生产工艺规程,使生产操作规范化,标准化,符合公司生产实际和管理要求,保证产品生产质量均一、稳定。

1.一种营养素固体饮料配方,其特征在于:其原料包括原辅料和预混料;所述原辅料包括浓缩乳清蛋白140g、聚葡萄糖、柑橘纤维89.6g、黑豆粉44.8g、酶解燕麦粉44.8g、营养酵母44.8g、复配矿物质28g、燕麦β-葡聚糖26.88g、淡豆豉粉22.4g;所述预混料包括磷脂16.8g、维生素E1.12g、聚葡萄糖;其中原辅料和预混料中的聚葡萄糖的总重量为100.8g。
2.一种权利要求1所述的营养素固体饮料配方的生产工艺,其特征在于:包括如下步骤:
S1、领料:
领料员根据批生产指令,到仓库领用合格物料;
S2、预处理:
取适量磷脂以40目过筛,取筛后细粉称量;
S3、称量;
S4、预混:
先将称量好的磷脂与适量聚葡萄糖预混,同时将称量好的维生素E与适量聚葡萄糖预混,将上述两个预混料,分别备用;
S5、混合:
将称量好的原料及预混料投入三维混合机中混合,混合好后转入下一工序;
S6、包装:
包装按批包装指令执行;
S7、检验入库。
