Abstract
本发明公开了一种以抗性淀粉为主要原料的复合膳食纤维固体饮料的制备方法,以及用于治疗高血脂、糖尿病、肥胖等的用途。本复合饮料包含10‑80wt%抗性淀粉,10‑50wt%调节剂、1‑30wt%饮料提取物以及适量其他食品级辅助添加剂。本固体饮料具有调节脂质和糖代谢、明显降血糖、降血脂、减肥及调节菌群功能的效果。是一种适用于高血脂、高血糖、肥胖、脂肪肝、肠道菌群失调人群的功能性复合膳食纤维固体饮料。

技术领域
本发明涉及一种适用于在糖尿病、高血脂、脂肪肝、肥胖病人以及脂质代谢和糖代谢紊乱病人及肠道菌群失调人群中使用的粉末状或颗粒状热饮型固体饮料、制备方法以及功能性食品制备中的应用。
背景技术
随着人们生活水平的提高,高血糖、高血脂、肥胖等患“富贵病”人群快速增加,给当前我国日益沉重的医疗负担带来了越来越大的挑战。为此,合理饮食及科学的膳食结构调节与补充在预防和治疗“三高”和肥胖人群等就显得尤为重要。在食物结构中加入膳食纤维,能够改善食物的营养与功能,控制肥胖和糖尿病等的发病率.
抗性淀粉是一种新兴的膳食纤维,是食品领域的研究热点。世界卫生组织等机构1998年联合出版的《人类营养中的碳水化合物》一书中指出,抗性淀粉的发现和利用是近年来研究碳水化合物与健康关系的一项重要成果。抗性淀粉作为肠道益生菌的能量来源,能够降低肥胖风险,具有明显的降血脂、降血糖、减肥和促进益生菌生长等功效。低聚果糖是一种甜度为蔗糖的0.3-0.6倍,具有调节肠道菌群,增殖双歧杆菌,促进钙的吸收,调节血脂,免疫调节,抗龋齿等保健功能的新型甜味剂,被誉为最具潜力的新一代添加剂,具有类似脂肪的香味和爽口的滑腻感,口味纯正香甜可口。
目前市面上固体饮料种类繁多,但尚缺乏一种功能明确、疾病预防和治疗效果理想、膳食纤维多样性合理的复合膳食纤维固体饮料。因此,有必要对目前国际公认的功能性膳食纤维进行优化配制,开发出一种功能性明确、口感良好的复合膳食纤维固体饮料。
发明内容
为了克服现有粉末固体饮料膳食纤维配方及功能性研究的缺陷,本发明拟开发出一种能够有效预防和辅助性治疗高血脂、高血糖、肥胖及肠道菌群失调人群的复合膳食纤维固体饮料,用于“三高”、糖尿病以及肥胖人群的预防和辅助性治疗。
因此,本发明的第一个目的在于提供一种膳食纤维结构合理的粉末状固体饮料:该固体饮料配方所涉及到的调节剂包括下组成分来源中的至少一种:中草药提取物、药材粉、益生菌、菊粉、果糖、低聚果糖、咖啡酸、咖啡酸苯乙酯、抗性糊精、壳寡糖、乙基纤维素、淀粉、山梨糖醇、木糖醇、乳糖、半乳糖、麦芽糖、阿拉伯糖、甘露糖、棉子糖;
该固体饮料配方所涉及到的饮料提取物包括下组成分来源中的至少一种:水果及水果提取物、蔬菜及蔬菜汁液提取物、香料及香料提取物、草药及草药提取物、乳肉及植物提取物、蛋白粉以及类似物。
该固体饮料配方所涉及到的辅助性食品添加剂来自下组中的至少一种:调味剂、使用色素、食用香精、羟/羧甲基纤维素钠、明胶、营养补充剂、脂质体、防腐剂、抗氧化剂、氯化钠、碳酸氢钠、甜味剂、食用抗静电剂。
本发明的第二个目的在于提供一种生产上述粉末状固体饮料的方法。
本发明的第三个目的在于提供上述复合膳食纤维固体饮料在防治糖尿病中的应用。
本发明的第四个目的在于提供上述复合膳食纤维固体饮料在防治高血脂症方面的应用。
本发明的第五个目的在于提供上述复合膳食纤维固体饮料在治疗肥胖方面的应用,
本发明的第六个目的在于提供上述复合膳食纤维固体饮料在治疗菌群失调方面的应用。
本发明的第七个目的在于提供上述复合膳食纤维固体粉末在其他食品中的应用。
为达到上述目的,本发明采用的技术方案如下:
一种制符合膳食纤维固体饮料1的方法,包括如下步骤:
a.按比例将抗性淀粉、调节剂、饮料提取物混合,必要时添加辅助性食品添加剂,形成混合固体粉末;
b.对所制备的粉末进行干燥、冷却,得到含水0.2-6.0wt%的固体粉末;
c.对干燥固体粉末进行超微粉碎;
d.包装。
另一种制备上述固体饮料的方法,包括如下步骤:
a.将一定比例的抗性淀粉、调节剂、饮料提取物与必要的辅助性食品添加剂相混合,并粉碎,得到粒度不高于200μm的粉末;
b.以上述固体粉末为悬浮主料,加入液体饮料提取物及必要的辅助性食品添加剂作为液体粘合剂,在造粒机上造粒,冷却,得到含有0.2-6.0wt%水分的固体颗粒;
c.筛选符合规格要求的固体饮料颗粒;
d.包装。
上述固体饮料粉末或颗粒还可以用于制备食品、饮料成品或中间产品,包括饼干、曲奇、面包、果冻、奶粉、糖果、咖啡及蛋糕等。

该复合膳食纤维固体饮料主要由抗性淀粉、低聚果糖、天然橘子浓缩粉和芭蕉芋原淀粉组成,将上述组分按照表1所述比例添加后、经粉碎机粉碎混匀,粉末细度符合相关要求后,包装即得。

180~200g雄性SD大鼠30只(斯贝福(北京)实验动物技术有限公司提供,合格证号:SCXK(京)2011-0004)适应性喂养1周后进行药效学实验。
实验动物饲养条件如下:

动物饲养于有垫料的塑料饲养盒中,大鼠清洁级维持饲料(购自北京科澳协力饲料有限公司)喂养,自由饮水。
实验设计
适应性喂养1周后,大鼠随机分为3组,模型组、阳性药二甲双胍组和固体饮料组,每组10只。正常对照组大鼠维持喂养正常饲料饲料。模型组和各给药组大鼠给予高脂饲喂养,连续喂养56天,复制肥胖模型。第57天天开始给药,给药时间均为每天9:00左右给药体积均为10ml/kg BW,各组具体给药剂量见表5,连续给药9周。

连续给药9周,每2周测一次体重。
实验终止:给药9周(63天)后结束该实验研究。
数据统计
采用SPSS 10.0软件进行数据处理分析,所有指标均以均数±标准差表示,组间比较采用方差分析。
结果
给药5周后,与对照组相比,阳性药二甲双胍、固体饮料组大鼠的体重均显著下降(P<0.05);给药第7、第9周,与对照组相比,二甲双胍组、固体饮料组大鼠体重均出现极为明显下降(P<0.01)(图1)。上述结果提示,固体饮料具有明显的减肥作用,其减肥效果与阳性药二甲双胍接近。
实施例6 复合膳食纤维固体饮对高血脂症大鼠的治疗作用
动物与饲养管理

血脂测定
连续给药6周后,实验结束时,腹主动脉取血测定采血采血检测大鼠TG、TC、HDLC和LDLC水平。
实验终止:给药6周(42天)后结束该实验研究。
数据统计
采用SPSS 10.0软件进行数据处理分析,所有指标均以均数±标准差表示,组间比较采用方差分析。
结果
给予高脂饲料40天后,与正常组比,模型组各指标均显著升高(P<0.01),模型鼠出现了严重的高血脂症,证明高血脂模型造模成功。高血脂症大鼠经药物治疗6周后,各指标得到了显著改善。与模型组比较:阳性药氟伐他汀对胆固醇下调作用显著(P<0.05),对低密度脂蛋白下调作用出现了极显著差异(P<0.01)。固体饮料对胆固醇、低密度脂蛋白、甘油三脂的水平下调作用十分明显:与模型组比较,胆固醇和低密度脂蛋白水平出现了极显著差异(P<0.01),甘油三脂水平也出现了显著差异(P<0.05)(图2)。上述结果提示,本配方固体饮料具有明显降血脂作用,部分指标达到了药物治疗效果,具有重要应用价值。
实施例7 复合膳食纤维固体饮料对糖尿病大鼠的降血糖作用
动物与饲养管理

药物干预3周后,与模型组比较,二甲双胍和固体饮料组糖尿病大鼠血糖水平均显著下降(P<0.01);给药第5、7、9周,阳性药二甲双胍和固体饮料组大鼠血糖水平均显著下降的现象(P<0.01)(图3)。结果提示,固体饮料具有极显著的降血糖作用,长期给药效果来看,其降糖作用强度接近西药二甲双胍。说明该固体饮料在治疗糖尿病方面具有良好的应用前景。

Claims (12)
1.一种功能性复合膳食纤维固体饮料,其特征在于:
10-80wt%抗性淀粉;
1-50wt%调节剂;
1-30wt%饮料提取物。
2.如权利要求1所述的固体饮料,其特征在于,还包括1-10%辅助性食品添加剂。
3.如权利要求1所述固体饮料,所述调节剂是选自以下组份中的至少一种:中草药提取物、药材粉、益生菌、菊粉、果糖、低聚果糖、海藻酸盐、咖啡酸、咖啡酸苯乙酯、抗性糊精、壳聚糖、壳寡糖、乙基纤维素、淀粉、山梨糖醇、木糖醇、乳糖、半乳糖、麦芽糖、阿拉伯糖、甘露糖、棉子糖。
4.如权利要求1所述的固体饮料,其特征在于,所述饮料提取物原料来源于以下组分中的至少一种:水果及水果提取物、蔬菜及蔬菜汁液提取物、香料及香料提取物、草药及草药提取物、乳肉及植物提取物、蛋白粉以及类似物。
5.如权利要求2所述的固体饮料,其特征在于,所述辅助性食品添加剂来自下组中的至少一种:调味剂、食用色素、食用香精、羟/羧甲基纤维素钠、明胶、营养补充剂、脂质体、防腐剂、抗氧化剂、氯化钠、碳酸氢钠、甜味剂、食用抗静电剂。
6.如权利要求1所述的固体饮料,其特征在于,其为类似于咖啡的特色固体饮料。
7.一种如权利要求1-6中任一项所述固体饮料,其制备方法包括如下步骤:
(1)按比例将抗性淀粉、调节剂、提取物混合,必要时加入辅助性添加剂,形成混合物;
(2)对步骤(1)中所形成的混合物进行流化床干燥,得到含有0.2-6.0wt%水分的混合粉状物;
(3)对步骤(2)的混合粉状物,过一遍粉碎机进行超微粉碎,制备得到固体饮料细粉;
(4)包装即得。
8.一种如权利要求1-6中任一项所述固体饮料,其制备方法包括如下步骤:
(1)按比例将抗性淀粉、调节剂、提取物混合,必要时加入辅助性添加剂,形成混合并粉碎;
(2)在造粒机上造粒,烘干,得到0.2-6.wt%水分的固体颗粒;
(3)筛分形状和大小符合规格的固体饮料颗粒;
(4)包装。
9.如权利要求1-8所述的固体饮料,用于制备食品或饮料成品或中间产品的应用。
10.如权利要求9所述,其特征在于所述食品或饮料包括:冰淇淋、奶酪、饼干、曲奇、面包、咖啡、奶粉、糖果、果冻。
11.如权利要求1-10所述的固体饮料,其特征在于所述固体饮料组成中含有抗性淀粉、低聚果糖、海藻酸钠、益生菌等成分,此类成分按照一定科学合理的配比所组成的复合固体饮料具备良好的降血脂、降血糖和调节肠道菌群的功能。
12.如权利要求1-10所述的固体饮料,是一种适用于高血脂、高血糖、肥胖、脂肪肝、肠道菌群失调人群的功能性复合膳食纤维固体饮料及衍生产品。
