Abstract
本发明公开了一种虫草燕麦即食营养粉的制备方法,包括如下步骤:完成北虫草、红枣、燕麦的预处理,并完成桑叶、葛根提取物的制备;按质量百分比称取:8‑10%的北虫草子实体粉、0.8‑1.2%的桑叶提取物粉、0.8‑1.2%的葛根提取物粉、8‑10%的红枣粉、8‑10%的菊粉、60‑65%燕麦粉、羧甲基纤维素钠适量;将称取的各原料装入混合机中,充分混合均匀,装袋,热封包装,即得。本发明所得的营养粉具有抗病毒、降血糖、提高机体免疫力,预防和治疗心脑血管疾病、提高增加女性雌激素、丰乳防癌,双向调节血糖、控制体重、改善肠道功能、促进钙吸收的作用。

本发明涉及保健品领域,具体涉及一种虫草燕麦即食营养粉的制备方法。
背景技术
功能饮料,就是在饮料中加入一定的功能因子,使其在解渴的同时具有调节机体功能、增强免疫力等保健作用的软饮料。功能饮料是当今国内外食品工业新的增长点。鉴于近年消费者对食品安全的关注,因而从天然物中提取,特别是从通常食用的植物中提取功能性食品添加剂和配料成为国内外开发的热点。
在西方国家,由于不合理的饮食结构,脂肪和蛋白质摄入过多,超体重者和高血脂、高血压患者比较普遍,所以欧美一直十分强调低热量、低脂肪食品和添加剂的开发。以糖醇类食糖替代物生产无蔗糖甜食品,用菊粉等产品的代脂肪食品等,在国际上均占有领先地位。在亚洲国家,有药食同源的传统,注重保健、功能食品、饮料的开发。功能性食品添加剂,特别是一些天然提取物的明显功效,得到国际的公认。因此大量保健功能食品,以食物补充剂的方式进入国际市场。即食粉产品是我国一种传统的早餐食品,品种很多,但是添加具有一定功能性食品的即食粉产品很少,具有较大的市场前景。
蛹虫草已被国家批准为新资源植物,其所含的虫草素、虫草多糖具有独特的药理及保健功效:虫草素具有抗病毒、抑菌、明显抑制肿瘤生长,与环磷酰胺有明显的协同作用,并有降血糖的作用;虫草多糖具有提高机体免疫能力,延缓衰老,抚正固本,增强机体自身抗癌、抑癌的能力。虫草酸具有抗自由基、抗氧化的作用,具有预防和治疗脑血栓、脑溢血、肾功能衰竭、利尿等作用。超氧化物歧化酶具有抑制和消除超氧自由基,抗癌,防衰,美容,减毒作用。蛹虫草是一种具有滋补作用的中药和营养品正受到人们的广泛关注,已有大量药品、保健食品上市,造福人类。
桑叶为桑科植物桑(Morus alba L.)的干燥叶,桑叶尤其是经霜桑叶是一种优质的药食同源物品。桑叶中含有糖类、脂肪、氨基酸、胆碱、有机酸、异槲皮苷、胡萝卜素、维生素B1、维生素B2、维生素C、叶酸、钙、磷、铁、锰等营养成分以及黄酮类、生物碱类、甾醇、1-脱氧野尻霉素和桑叶多糖等次生代谢产物,具有降血糖、降血脂、抗氧化、抗病毒、抗癌等作用。桑叶多糖具有显著的降血糖作用,桑叶多糖增加II型糖尿病大鼠脂肪组织葡萄糖转运蛋白4的基因表达。桑叶1-脱氧野尻霉素(DNJ)具有显著的降血糖作用,可以提高糖尿病小鼠的耐糖量,增加肝糖元而降低葡萄糖,提高正常大鼠血浆中胰岛素含量。研究证实了桑叶生物碱、多糖、生物碱联合二甲双胍降糖作用均显著。实验研究表明:桑叶中的桑叶黄酮能明显降低糖尿病小鼠糖化血清蛋白和MDA含量。提高血清胰岛素、肝己糖激酶、肝糖原和SOD活力。桑叶还被国际卫生组织列入“人类二十一世纪十大保健品之一”是人类绿色食品源。
葛根为豆科植物野葛(PuerariaIobata(Willd)ohwi)的干燥根,主要成分为葛根异黄酮。研究表明,葛根异黄酮具有降低血压、减慢心率、扩张冠状血管、改善微循环、抑制动脉硬化、抗心律失常、改善脑循环等心脑血管系统作用,具有治疗和预防心血管疾病的功能;葛根异黄酮具有抗血小板聚集、降血糖、降血脂、抗肿瘤、抗缺氧与抗氧化、收缩和舒张平滑肌、益智、解热、解酒与解毒等方面的功效;葛根异黄酮具有提高增加女性雌激素、疏通乳腺的功效,不仅具有使乳腺丰满坚挺和乳房组织重构的作用,而且对子宫、卵巢和皮肤也有作用;此外,葛根异黄酮能显著抑制酪氨酸酶的催化活性,中断黑色素氧化过程,抑制黑色素的发生与形成,从而防止黄褐斑、日晒斑等色素沉积,在抗衰老及祛斑美白中起作用。
红枣中含有红枣多糖、低聚糖,红枣环磷酸腺苷,红枣三萜酸,红枣多酚等有效成分。红枣多糖是红枣中主要的生物活性物质,是由多种单糖聚合而成的高分子聚合物。经检测,红枣多糖具有明显的抗补体活性和促进淋巴细胞增殆作用,对提高机体免疫力具有主要的作用。低聚糖又名寡糖,是一类分子量较低的碳水化合物,单糖通过糖苷键连接形成支链或直链的低度聚合糖。功能性低聚糖在肠道内不被消化直接进入大肠,优先被肠道益生菌利用,具有促进肠道双歧杆菌增值,调节肠道菌群平衡,改善肠道功能;调节消化功能,防治便秘和腹泻;促进维生素合成、矿物元素吸收;降低血脂血压等生理功能。红枣三萜酸(包括齐墩果酸、熊果酸等)是红枣的主要活性成分之一,具有抗菌、保肝、降脂、提高白细胞数量、增强机体免疫力等重要生理功能,近年又证明其有一定的抗癌活性,以及抑制艾滋病病毒作用。三萜酸类化合物有较高的脂溶性,分子量一般为400-600Da,化学结构复杂,目前已知有7种不同的母核结构,在母核上有多个不同的取代基,常见有羧基、羟基、酮基、甲基、乙酰基和甲氧基等。红枣多酚是极好的氢或电子供体。由于形成的酚类游离基中间体具有共振定域作用和没有适合分子氧的结合位点,比较稳定,不会产生新的游离基,也不会有链反应而被迅速氧化。由于其羟基取代的高反应性和吞噬自由基的能力,故具有较强的抗氧化活性而被用做抗氧化剂。膳食纤维是健康饮食不可缺少的,纤维在保持消化系统健康上扮演着重要的角色,同时摄取足够的纤维也可以预防心血管疾病、癌症、糖尿病以及其它疾病。纤维可以清洁消化壁和增强消化功能,纤维同时可稀释和加速食物中的致癌物质和有毒物质的移除,保护脆弱的消化道和预防结肠癌。纤维可减缓消化速度和最快速排泄胆固醇,所以可让血液中的血糖和胆固醇控制在最理想的水平。
燕麦的营养十分丰富,是一种高蛋白、高脂肪的谷物。燕麦蛋白被认为是谷类的最佳平衡蛋白且含量很高。燕麦蛋白质中含有18种氨基酸,其中有8种是人体必需的氨基酸。特别是有益于增进智力和骨骼的发育的赖氨酸含量是大米和小麦粉的2倍以上,有防贫血和毛发脱落作用的色氨酸含量也高于大米和小麦粉。燕麦的脂肪富含大量的不饱和脂肪酸,其中的亚油酸含量约占不饱合脂肪含量38%~52%,亚油酸是世界公认的降血脂药物的有效成分。具有降血压、降甘油三脂的作用,还可以软化毛细血管,预防血管硬化,延缓人体衰老的功效。燕麦中富含纤维素,其中水溶性纤维素β-葡聚糖[(1-3)(1-4)-β-D-葡聚糖]达4%~6%,约是稻米、小麦的7倍。现代科学研究发现,膳食纤维虽然不被消化吸收,但是却可以保护人体免遭多种疾病的侵害,是其他任何营养素所不能代替的,所以现在把膳食纤维列入人体必需的“第七营养素”。膳食纤维还可调节血糖、血脂,有通便功能,是便秘患者,糖尿病和高血脂病人在药疗过程中的最佳辅助食品。据中外营养研究结果证明,这种纤维素还有助于抑制结肠癌、糖尿病、静脉炎和痔疮。膳食纤维还具有改变肠道系统中微生物群落组成的物理特性的作用,由于改善了有益细菌的繁殖条件,其群落迅速扩大。这对抑制腐生菌生长,维持维生素供应,保护肝脏等都是十分重要的。据有关资料报道,燕麦的膳食纤维具有较强的阳离子交换功能。它可与Ca2十、Zn2十、Cd2十、Pb2十等离子进行交换,对改善消化道pH值、渗透压及氧环境有良好作用。更重要的是它能与肠道中的Na十、K十进行交换,促使尿液和粪便中大量排出Na十、K十,从而降低血液中的Na十/K十比,直接产生降低血压的作用。β-葡聚糖能从生理功能上降低血液中总的胆固醇和低密度脂蛋白胆固醇,增加高密度脂蛋白胆固醇,而低密度胆固醇是导致心血管病发生的重要因素。β-葡聚糖还可阻碍中性脂肪和胆固醇再吸收,限制了胆酸在小肠中的循环,进而加快了脂肪物的排泄。因此,可直接抑制和预防冠状动脉硬化、胆石症,对预防心脑血管疾病也有着的重要作用。而且β-葡聚糖在加热后可变成半软胶体状,在胃壁上形成一层保护膜,是胃溃疡患者的良好食物;还有平缓饭后血糖上升的效果,有助于糖尿病患者控制血糖。燕麦中维生素B族、尼克酸、叶酸、维生素H、泛酸都比较丰富。特别是维生素E,有延缓衰老,抑制老年斑的形成,保持皮肤的弹性及生理机能的旺盛等作用。另外,麦燕中还含有钙、铁、磷、硒等微量元素。且硒含量很高,可达0.696ug/g,硒是人体极为重要的微量元素,它有增强人体免疫力、延缓衰老、防癌抗癌的作用,被誉为“生命的奇效元素”。燕麦淀粉为小型、不规则淀粉颗粒,其大小似大米淀粉颗粒,可形成稳定又富有延伸性的凝胶体。燕麦淀粉能使食品呈现致密、滑润和奶油状结构。可使食品的口感得到改善。燕麦中的碳水化合物还能够调节人体血液中的葡萄糖浓度,这对糖尿病患者非常有益。
菊粉又称菊糖(inulin),是由果糖经β(1-2)键连结而成的线性直链多糖,菊粉作为水溶性膳食纤维已被世界上40多个国家批准为食品的营养增补剂,它在食品饮料中可以与脂肪和巧克力的替代品,可以增加粘性,提高食品的水结合力;另外,菊粉所特有的膳食纤维,使加入菊粉后的牛奶、酸奶、乳品饮料等低脂食品具有与全脂产品相同的口感,并能提供更高的营养和更佳的口味,因而广泛应用于食品工业中,目前,含菊粉的食品已成为海外市场风靡的保健产品。由于菊粉的亲水性,菊粉食品能给人的胃带来饱涨感,是很好的减肥食品。菊粉是双歧因子,对控制体重,改善肠道功能,促进钙的吸收都很有好处。菊粉还具有一种特殊功效——对血糖具有双向调节作用,即一方面可使糖尿病患者血糖降低,另一方面又能使低血糖病人血糖升高。因此,无论是高血糖还是低血糖,都能用菊粉进行治疗。
现有技术中,存在包含虫草、桑叶、葛根、大枣或燕麦中的一种或多种原料的功能饮料,但是这些功能饮料仅体现出原植物本身单一的功效,没有很好的将原料的功能进行协同增效。
发明内容
为解决上述问题,本发明提供了一种虫草燕麦即食营养粉的制备方法。
为实现上述目的,本发明采取的技术方案为:

S11、北虫草预处理:选用品质较好的北虫草,去除杂质;60-70℃真空微波干燥,使北虫草干燥并保持虫草香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S12、红枣预处理:选用品质较好的红枣,去除杂质,淘洗干净,剔除枣核,切片;60-70℃真空微波干燥,使红枣干燥并保持红枣香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S13、燕麦预处理:选用品质较好的燕麦,去除杂质,淘洗干净;60-70℃真空微波干燥,使燕麦成熟并有烘烤香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S14、桑叶、葛根提取物的制备
选取无霉变的桑叶、葛根,除去泥沙和污物,粉碎至10目,按照桑叶、葛根:水=1:14-16kg/L的比例,75-85℃浸提1.5-2.5h,粗滤,滤渣在按照桑叶、葛根:水=1:10-12kg/L的比例加入热水75-85℃再浸提1.5-2.5h,粗滤,澄清除杂处理,细滤,减压浓缩,喷雾干燥,装袋备用;
S2、按质量百分比称取:
8-10%的北虫草子实体粉、0.8-1.2%的桑叶提取物粉、0.8-1.2%的葛根提取物粉、8-10%的红枣粉、8-10%的菊粉、60-65%燕麦粉、羧甲基纤维素钠余(适)量;
S3、将称取的各原料装入混合机中,充分混合均匀,按30g/份装袋,热封包装,即得。
本发明具有以下有益效果:
选取虫草、桑叶、葛根、红枣、菊粉这些新食品原料或药食两用植物作为具有一定功能性的食品添加到燕麦中,作为虫草燕麦即食营养粉产品进行开发。产品除具有燕麦本身所具有的被认为是谷类的最佳平衡且含量很高的蛋白和富含大量的不饱和脂肪酸(亚油酸)外,还具有抗病毒、降血糖、提高机体免疫力,预防和治疗心脑血管疾病、提高增加女性雌激素、丰乳防癌,双向调节血糖、控制体重、改善肠道功能、促进钙吸收的作用。

S14、桑叶、葛根提取物的制备选取无霉变的桑叶4kg、葛根4kg,除去泥沙和污物,粉碎至10目,按照桑叶、葛根:水=1:14kg/L的比例,75℃浸提2.5h,粗滤,滤渣在按照桑叶、葛根:水=1:10kg/L的比例加入热水75℃再浸提2.5h,粗滤,澄清除杂处理,细滤,减压浓缩,喷雾干燥,装袋备用。
S2、按质量百分比称取:10%的北虫草子实体粉、1.2%的桑叶提取物粉、1.2%是葛根提取物粉、10%红枣粉、10%菊粉、65%燕麦粉、羧甲基纤维素钠适量;然后在洁净间将称取各原辅料粉末装入混合机中,充分混合均匀,得虫草燕麦即食营养粉48.72kg,按30g/份装袋,热封包装。

S14、桑叶、葛根提取物的制备选取无霉变的桑叶5.4kg、葛根5.4kg,除去泥沙和污物,粉碎至10目,按照桑叶、葛根:水=1:15kg/L的比例,80℃浸提2.0h,粗滤,滤渣在按照桑叶、葛根:水=1:11kg/L的比例加入热水80℃再浸提2.0h,粗滤,澄清除杂处理,细滤,减压浓缩,喷雾干燥,装袋备用。

实施例3

S11、北虫草预处理:选用品质较好的北虫草13.5kg,去除杂质;70℃真空微波干燥,使北虫草干燥并保持虫草香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用。
S12、红枣预处理:选用品质较好的红枣13.5kg,去除杂质,淘洗干净,剔除枣核,切片;70℃真空微波干燥,使红枣干燥并保持红枣香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用。
S13、燕麦预处理:选用品质较好的燕麦94.0kg,去除杂质,淘洗干净;70℃真空微波干燥,使燕麦成熟并有烘烤香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用。
S14、桑叶、葛根提取物的制备选取无霉变的桑叶10kg、葛根10kg,除去泥沙和污物,粉碎至10目,按照桑叶、葛根:水=1:16kg/L的比例,85℃浸提1.5h,粗滤,滤渣在按照桑叶、葛根:水=1:12kg/L的比例加入热水85℃再浸提1.5h,粗滤,澄清除杂处理,细滤,减压浓缩,喷雾干燥,装袋备用。
S2、按质量百分比称取:9%的北虫草子实体粉、1.0%的桑叶提取物粉、1.0%的葛根提取物粉、9%红枣粉、9%菊粉、62%燕麦粉、羧甲基纤维素钠适量,在洁净间将称取的原辅料粉末装入混合机中,充分混合均匀,得虫草燕麦即食营养粉137.26kg,按30g/份装袋,热封包装。
本具体实施所得的虫草燕麦即食营养粉中虫草素具有抗病毒、抑菌、明显抑制肿瘤生长,并有降血糖的作用;虫草多糖具有提高机体免疫力,延缓衰老,抚正固本,增强机体自身抗癌、抑癌的能力;虫草酸具有抗自由基、抗氧化的作用,具有预防和治疗脑血栓、脑溢血、肾功能衰竭、利尿等作用;虫草SOD具有抑制和消除超氧自由基,抗癌,防衰,美容,减毒作用。桑叶中的1-脱氧野尻霉素和桑叶多糖等次生代谢产物,具有明显的降血糖、降血脂、抗氧化、抗病毒、抗癌等作用。葛根对严重威胁人类生命健康的心脑血管疾病具有重要的预防和治疗的作用,同时能提高增加女性雌激素、疏通乳腺,使乳腺丰满坚挺和乳房组织重构的作用,还具有有效的抗乳腺癌的作用。红枣中红枣多糖具有明显的抗补体活性和促进淋巴细胞增殖作用,对提高机体免疫力具有主要的作用。红枣低聚糖在肠道内不被消化直接进入大肠,优先被肠道益生菌利用,具有促进肠道双歧杆菌增值,调节肠道菌群平衡,改善肠道功能;调节消化功能,防治便秘和腹泻;促进维生素合成、矿物元素吸收;降低血脂血压等生理功能。红枣三萜酸具有抗菌、保肝、降脂、提高白细胞数量、增强机体免疫力等重要生理功能。红枣多酚具有较强的抗氧化活性而被用做抗氧化剂。膳食纤维可以预防心血管疾病、癌症、糖尿病以及其它疾病。纤维可以清洁消化壁和增强消化功能,纤维同时可稀释和加速食物中的致癌物质和有毒物质的移除,保护脆弱的消化道和预防结肠癌。纤维可减缓消化速度和最快速排泄胆固醇,所以可让血液中的血糖和胆固醇控制在最理想的水平。燕麦可以有效地降低人体中的胆固醇对中老年人的心脑血管疾病都起到一定的预防作用;燕麦对糖尿病患者是可以起到降糖和减肥的功效;燕麦能够解便秘,减少老年人因便秘而导致的脑血管意外的发生;燕麦还可以改善血液循环,缓解生活压力的作用,它含有的钙磷等矿物质可以使伤口愈合加快,还能对贫血有一定的预防,所以是补钙的良品;燕麦中含有极其丰富的亚油酸,对人的脂肪肝、糖尿病、浮肿、便秘等等也有辅助疗效。菊粉其对血糖双向调节作用的特殊功效对高血糖还是低血糖都有预防和治疗的作用;菊粉的双歧因子对控制体重、改善肠道功能、促进钙的吸收都很有好处。
以上所述仅是本发明的优选实施方式,应当指出,对于本技术领域的普通技术人员来说,在不脱离本发明原理的前提下,还可以作出若干改进和润饰,这些改进和润饰也应视为本发明的保护范围。
Claims (1)
1.虫草燕麦即食营养粉的制备方法,其特征在于,包括如下步骤:
S1、原料预处理
S11、北虫草预处理:选用品质较好的北虫草,去除杂质;60-70℃真空微波干燥,使北虫草干燥并保持虫草香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S12、红枣预处理:选用品质较好的红枣,去除杂质,淘洗干净,剔除枣核,切片;60-70℃真空微波干燥,使红枣干燥并保持红枣香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S13、燕麦预处理:选用品质较好的燕麦,去除杂质,淘洗干净;60-70℃真空微波干燥,使燕麦成熟并有烘烤香气,并得到有效的杀菌;放置洁净间冷却;粉碎、过100目筛;装袋备用;
S14、桑叶、葛根提取物的制备
选取无霉变的桑叶、葛根,除去泥沙和污物,粉碎至10目,按照桑叶、葛根:水=1:14-16kg/L的比例,75-85℃浸提1.5-2.5h,粗滤,滤渣在按照桑叶、葛根:水=1:10-12kg/L的比例加入热水75-85℃再浸提1.5-2.5h,粗滤,澄清除杂处理,细滤,减压浓缩,喷雾干燥,装袋备用;
S2、按质量百分比称取:
8-10%的北虫草子实体粉、0.8-1.2%的桑叶提取物粉、0.8-1.2%的葛根提取物粉、8-10%的红枣粉、8-10%的菊粉、60-65%燕麦粉、羧甲基纤维素钠余量;
S3、将称取的各原料装入混合机中,充分混合均匀,按30g/份装袋,热封包装,即得。
