Abstract
本发明公开了一种含益生菌的压片糖果、制备及其包装方法,所述压片糖果,按重量份计,含果粉18‑25份、益生元23‑46份、益生菌3‑5份、硬脂酸镁1‑1.5份和糖醇40‑60份。所述压片糖果还包括辅料。所述制备方法包括将配方量的原料混合、压片。所述包装方法为利用双铝包装材料对压片糖果进行包装。本发明通过特定菌种、糖醇和辅料复配以及包装材料的联合改进,有效提高了压片糖果中活菌的存活率,避免在货架期期间菌落总数衰亡,有效延长了压片糖果的有效期,同时还可以提高原料的可压性,降低脆碎度,更利于工业化生产。

技术领域
本发明属于糖果生产技术领域,涉及一种含益生菌的压片糖果、制备及其包装方法。
背景技术
益生菌是一类对宿主有益的活性微生物,是定植于人体肠道、生殖系统内,能产生确切健康功效从而改善宿主微生态平衡、发挥对肠道有益作用的活性有益微生物的总称。由此可见,益生菌类产品在有一定数量“活的状态”下,是具备有调节人体的肠道的作用的。而益生菌压片糖果具有货架期期间维持活菌数的稳定,携带方便,食用简单,酸甜可口等等多方面的优点之外,同时也具备良好的市场前景和广泛的市场需求。
现有含益生菌的压片糖果工艺多采用甜味剂和益生菌粉和其他辅料一起制粒、烘干、整粒、压片的工序,在这种生产工艺中,由于甜味剂等成分粘性较大,制粒时不易过筛,且颗粒硬度较大,导致糖果片硬度大,口感较差;且制粒后的长时间高温烘干程序,会导致益生菌数量和活性的降低或破坏而对后期储存期限造成影响。
CN111657386A公开了一种益生菌压片糖果的生产方法,包括:(1)制备混合糖粉;(2)将冻干唾液链球菌K12菌粉3~8份、多孔淀粉2~4份和膨化玉米粉0.5~1.5份混合;(3)将混合糖粉30~50份、粘合剂35~40份、崩解剂10~20份、润滑剂0.2~1份、酸味调节剂2~4份与香精0.1~0.3份进行混合,造粒,过筛;(4)将混合辅料与唾液链球菌K12预混料混合;(5)压片成型,压力为70~80KN;(6)放入30~40℃烘箱中烘干;(7)放入干燥室干燥,水分含量≤0.2%,获得益生菌压片糖果。该发明制得的益生菌压片糖果的唾液链球菌K12活菌数高且可压性好,同时,有效提高了益生菌压片糖果的质量,但该发明制备工艺复杂,且压片压力在70-80KN,活菌损失率大。
CN110973635A公开了一种辅料组合物及益生菌片剂,该辅料组合物包括抗性糊精、糖醇和微晶纤维素,所述微晶纤维素的粒径小于32μm。该发明通过抗性糊精、糖醇和微晶纤维素配合使用,并将微晶纤维素的粒径控制在一定范围内,制备得到的辅料组合物能有效改善片剂成型性能,在低压力(20KN)范围内,具有良好的可压性,硬度产出高,脆碎度良好,同时能极大改善口感,显著降低咀嚼砂砾感和白垩感;将该发明制备得到的辅料组合物应用于益生菌压片制剂产品,能有效提高压片过程中活菌存活率,压片前后损耗率对比能控制在10%-20%,制备得到的益生菌片剂产品的活菌稳定性良好能,充分满足产品货架期的需求。
CN112998275A公开了一种可即食的益生菌组合物,包括益生菌、糖醇、低聚木糖醇、磷酸三钙和针叶樱桃粉;益生菌由两歧双歧杆菌、乳双歧杆菌、长双歧杆菌、嗜酸乳杆菌、鼠李糖乳杆菌组成,该发明解决了现有技术益生菌组合物在压片时压片机的力量及温度,使得益生菌细胞壁破裂,其存活率低,使其功效降低,储存过程中的稳定性差的技术问题。
如何筛选菌种,并相应的优化生产工艺,从而提高片剂中活菌存活率,改善产品质量是目前亟需解决的重要问题。
发明内容
为了解决以上技术问题,本发明提供了一种含益生菌的压片糖果、制备及其包装方法,本发明通过菌种筛选、糖醇和辅料复配以及包装材料的联合改进,有效提高了压片糖果中活菌的存活率。
为了实现上述目的,本发明采用以下技术方案:
一种含益生菌的压片糖果,按重量份计,含果粉18-25份、益生元23-46份、益生菌3-5份、硬脂酸镁1-1.5份和糖醇40-60份。
优选地,所述果粉为山楂粉、蓝莓粉、苹果粉、草莓粉、樱桃粉和梨粉中的至少一种。
优选地,所述益生元,包括抗性糊精、低聚果糖、低聚异麦芽糖和低聚木糖中的至少一种。
优选地,所述益生菌包括青春双歧杆菌、动物双歧杆菌、两歧双歧杆菌、短双歧杆菌、婴儿双歧杆菌、长双歧杆菌、嗜酸乳杆菌、干酪乳杆菌、卷曲乳杆菌、德氏乳杆菌保加利亚亚种、德氏乳杆菌乳亚种、发酵乳杆菌、格氏乳杆菌、瑞士乳杆菌、约氏乳杆菌、副干酪乳杆菌、植物乳杆菌、罗伊氏乳杆菌、鼠李糖乳杆菌、唾液乳杆菌、嗜热链球菌、费氏丙酸杆菌谢氏亚种、乳酸乳球菌乳酸亚种、乳酸乳球菌乳脂亚种和乳酸乳球菌双乙酰亚种、肠膜明串珠菌肠膜亚种、乳酸片球菌、戊糖片球菌和凝结芽孢杆菌中的至少一种。
进一步优选地,所述益生菌为嗜酸乳杆菌、发酵乳杆菌、嗜热链球菌、乳酸片球菌和戊糖片球菌。
优选地,所述糖醇为山梨糖醇和D-甘露糖醇。
进一步优选地,所述糖醇的粒径为20-60目。
进一步优选地,所述山梨糖醇和D-甘露糖醇的质量比为1:1-1.5。
在一些优选的技术方案中,所述的压片糖果还包含辅料,优选地,所述辅料为质量比1:10-15的蔗糖脂肪酸酯和半乳甘露聚糖。
优选地,所述辅料和糖醇的质量比为1:5-10。
本发明还提供了一种上述的压片糖果的制备方法,包括以下步骤:
(1)将配方量的果粉、益生元、益生菌、硬脂酸镁、糖醇和辅料混合,得到混合料;
(2)将步骤(1)得到的混合料压片,即得,所述含益生菌的压片糖果。
优选地,步骤(2)中所述压力为9-15KN。
优选地,步骤(2)中所述压片糖果的平均硬度为80N以上。
本发明还提供了一种压片糖果的包装方法,所述包装方法为采用双铝包装材料对上述压片糖果进行包装。
优选地,所述双铝包装材料为PET/AL/PE,厚度为50-85微米。其中,PET—印刷效果好,AL—阻隔性强、不透光;PE作为普通包装内层特点:(1)阻隔空气性能强、防氧化、防水、防潮。(2)机械性能强,抗爆破性能高、抗穿刺抗撕裂性能强。(3)耐高温(121℃)、耐低温(-50℃)、耐油、保香性能好。(4)无毒无味,符合食品、药品包装卫生标准。(5)热封性能好、柔软性、高阻隔性能好。
采用本发明的双铝包装材料对含益生菌压片糖果的包装和储藏期间乳酸菌活菌数其极大的保护作用。
本发明的有益效果为:
(1)本发明通过特定菌种、糖醇和辅料复配以及包装材料的联合改进,有效提高了压片糖果中活菌的存活率。其中,菌种与糖醇的复配,可以最大限度的降低压片过程中对菌种的损伤,结合特定包装材料的使用,可以进一步提高活菌存活率,能确保在储存期有效的保护益生菌的活菌数,避免在货架期期间菌落总数衰亡,有效延长压片糖果的有效期。
(2)本发明在实验中意外的发现,通过添加特定质量比的蔗糖脂肪酸酯和半乳甘露聚糖,可以进一步提高原料的可压性,降低脆碎度,相比现有技术更适合工业化生产。

所述益生菌为质量比为1:1:2的嗜酸乳杆菌、乳酸歧杆菌和鼠李糖乳杆菌,所述益生菌的活菌单位为1.40×1011cfu/g;
所述糖醇为质量比1:1.3的山梨糖醇和D-甘露糖醇,所述糖醇的粒径为20-60目;
所述辅料为质量比1:12的魔芋粉和葡聚糖。
所述压片糖果的制备及包装方法为:
(1)将配方量的山楂粉、益生元、益生菌、硬脂酸镁、糖醇和辅料放入混合机中混合,得到混合料;
(2)将步骤(1)得到的混合料送入压片机中进行压片,得到压片糖果;

其中,所述益生元为质量比为1:1.5的抗性糊精和低聚果糖;
所述益生菌为质量比为1:1:2的嗜酸乳杆菌、乳酸歧杆菌和鼠李糖乳杆菌,所述益生菌的活菌单位为1.40×1011cfu/g;
所述糖醇为质量比1:1.3的山梨糖醇和D-甘露糖醇,所述糖醇的粒径为20-60目;
所述辅料为质量比1:12的蔗糖脂肪酸酯和半乳甘露聚糖。
所述压片糖果的制备及包装方法为:
(1)将配方量的山楂粉、益生元、益生菌、硬脂酸镁、糖醇和辅料放入混合机中混合,得到混合料;
(2)将步骤(1)得到的混合料送入压片机中进行压片,得到压片糖果;
(3)利用聚乙烯瓶对步骤(2)得到的压片糖果进行包装,即得压片糖果产品。
结果如表1所示。
表1实施例及对比例的工艺及益生菌存活率
益生菌活性考察方法如下:
取包装样品,置于恒温恒湿培养箱,温度设置25℃,湿度设置60%RH,对压片糖果产品的含活性乳酸菌菌落数进行检验。乳酸菌菌落数检测方法:按照食品安全国家标准食品微生物学检验乳酸菌检验(GB4789.35-2016)。
如表1可知,本发明的含益生菌的压片糖果的压片压力为5-15KN,压片硬度在80N以上,压片过程中未出现裂片、松片现象,脆碎率低于0.5%,6个月内益生菌的存活率在82%以上,活菌数量高。
同时,通过实施例4-6可知,添加质量比为1:10-15的蔗糖脂肪酸酯和半乳甘露聚糖辅料可以进一步降低压片压力,并降低脆碎率,同时,对益生菌的存活率有一定的改善作用。
根据实施例3和对比例1可知,在本发明的技术方案中,当改变益生元的用量及添加常规辅料,会导致压片糖果的硬度和益生菌存活率下降。根据实施例3和对比例2可知,当改变糖醇的粒径,采用9-12KN的压力进行压片无法压制成型,需要将压片压力控制为30-50KN,同时,对制备的压片糖果的破碎率及益生菌存活率均有较大影响。
根据实施例6以及对比例3-4可知,当改变糖醇和辅料的质量比不在本发明要求保护的范围内,对压片糖果的脆碎度和压片工艺产生较大影响,其中,对比例3制备过程中出现粘冲,无法实现连续生产,对比例4则出现碎片。同时,根据对比例5可知,当采用常规的辅料代替蔗糖脂肪酸酯和半乳甘露聚糖时,对压片压力较大,采用5-8KN的压片压力无法压制成型,需要将压片压力提升至15-18KN,同时,对脆碎度影响较大。根据对比例6可知,当改变辅料中蔗糖脂肪酸酯和半乳甘露聚糖的质量比不在本发明保护的范围内,由于辅料中半乳甘露聚糖的用量过多,导致制备过程中出现粘冲,无法实现连续生产。
对实施例6和对比例7、8制备的益生菌压片糖果在货架期期间含活性乳酸菌菌落数进行检验,结果如表2所示。

由表2可知,更换了益生菌压片糖果的包装方式,对比例7和8前三个月的存活率较好,但到第6个月开始出现潮化,且潮化后益生菌的存活数开始下降。
以上是结合具体实施例对本发明进一步的描述,但这些实施例仅仅是范例性的,并不对本发明的范围构成任何限制。本领域技术人员应该理解的是,在不偏离本发明的精神和范围下可以对本发明技术方案的细节和形式进行修改或替换,但这些修改和替换均落入本发明的保护范围内。
Claims (3)
1.一种含益生菌的压片糖果,其特征在于,按重量份计,由以下原料组成:果粉18-25份、益生元23-46份、益生菌3-5份、硬脂酸镁1-1.5份、糖醇40-60份和辅料;
所述益生菌为质量比为1:1:2的嗜酸乳杆菌、乳酸歧杆菌和鼠李糖乳杆菌;
所述糖醇为质量比1:1-1.5的山梨糖醇和D-甘露糖醇,所述糖醇的粒径为20-60目;
所述辅料为质量比1:10-15的蔗糖脂肪酸酯和半乳甘露聚糖;
所述辅料和糖醇的质量比为1:5-10;
所述益生元为抗性糊精和低聚果糖;
所述压片糖果在制备过程中压片的压力为9-15KN。
2.根据权利要求1所述的压片糖果,其特征在于,所述果粉为山楂粉、蓝莓粉、苹果粉、草莓粉、樱桃粉和梨粉中的至少一种。
3.一种权利要求1-2任一项所述的压片糖果的制备方法,其特征在于,包括以下步骤:
(1)将配方量的果粉、益生元、益生菌、硬脂酸镁、糖醇和辅料混合,得到混合料;
(2)将步骤(1)得到的混合料压片,即得,所述含益生菌的压片糖果。
