本发明属于食品加工技术领域,具体涉及一种提高运动耐力的固体饮料配方及其制备方法。
背景技术
随着人民生活质量的改善和健康意识的日益提高,对饮料的需求越来越大,各种新品种饮料层出不穷,质量也良莠不齐。而固体饮料,作为一种普通的饮料,一直保持低调、平稳的发展态势。固体饮料是以糖、乳和乳制品、果汁或食用植物提取物等为主要原料,添加适量的辅料或食品添加剂制成的固体制品,呈粉末状、颗粒状或块状食品,具有补充水分和能量等多种功能。
在市场上经常见到的速溶咖啡、奶茶、椰子粉、豆奶粉等均是比较受欢迎的大众固体饮料制品。
中国专利CN201210515354.0公布了一种固体饮料及其制备方法,包括山楂、桑葚、南瓜子、荞麦、燕麦、糙米、黑芝麻、核桃、杏仁,还有粘合剂、甜味剂和着色剂,具有润肠通便、健脾消极的功效,其主要成分来源于常见果蔬。
中国专利CN201510796832.3公布了一种低血糖指数的运动饮料及其制备和使用方法,成分为异麦芽酮糖、结晶果糖、海藻糖、钠盐、钾盐等成分,既可以补充糖原,维持血糖稳定又能缓解运动后的免疫抑制反应,成分以糖原和钠钾盐为主。
中国专利CN200810090505.6公布了一种抗疲劳运动饮料及其制备方法,原料成分为黄芪、当归、红景天、水,不但能补充人体运动过程中损失的水分、糖分、电解质,还有抗运动型疲劳、改善运动能力的功能,其主要成分为中药且为液体型。
为了克服现有固体饮料中各成分单纯的物理组合及存在的人体所需成分不全、长期服用出现负面影响、制造成本高昂等问题,提供了一种新的配方及其制备方法。
发明内容
本发明解决以上现有技术的不足,提供一种便于存贮和运输,营养素成分全面且能快速被人体吸收、能够改善人体疲劳状态、提高运动能力,加强视力和脑神经营养且补充水分和矿物质的提高运动耐力的固体饮料配方。
为实现上述目的,本发明所采用的技术方案如下:
一种提高运动耐力的固体饮料配方,包括以下重量份的配方组分:D-核糖10-20份,左旋肉碱6-30份,异麦芽酮糖1-20份,亮氨酸4份,异亮氨酸1份,缬氨酸1 份,γ-氨基丁酸3份,精氨酸1.74份,2-氧代戊二酸1.46份,牛磺酸1.1-1.4 份,葡萄糖酸锌0.06-0.18份,维生素E0.076-0.18份,低聚果糖32-64.5份,甜味剂0.2-10份,香精0.2份。
进一步地,配方组分还可以添加:乳清蛋白600-800份,大豆分离蛋白150-200 份,普鲁兰多糖50份,可溶性大豆多糖10份,海藻糖2-20份,大豆软磷脂3份。
进一步地,配方组分还可以添加:柠檬酸钾7-14.1份,乳矿物盐5份,氯化钠 3-6份,β-丙氨酸5份,半胱氨酸0.5份,维生素C0.2-1.2份,微晶纤维素0.2-10 份,葡萄糖酸镁1.3-2.1份,甘草酸三钾0.1-0.2份,乳酸亚铁0.095-0.22份,肌醇0.06-0.12份,氨基葡萄糖0.0006-0.006份。

步骤一、于清洁区行混合配料,将D-核糖、左旋肉碱、低聚果糖、甜味剂进行充分混合,得混合粉A;
步骤二、将剩余成分进行充分混合,得混合粉B,并把混合粉B和混合粉A进行二次充分混合,得混合粉C;
步骤三、将混合粉C采用自动分装机进行分装。

本发明的固体饮料配方组分中含有人体必需的氨基酸和维生素,还含有支链氨基酸和D-核糖成分,并且所含糖分较低,多糖、膳食纤维、维生素除满足所需营养外,还能够对蛋白的吸收和舒缓肠道排毒起到协同作用,有利于人体健康,并且处于以上组合饮料的口感平衡、乳甜适宜;由此本发明配方饮料营养丰富,含有蛋白质、氨基酸、脂肪、碳水化合物、微量元素和纤维素等营养成分,在溶解饮用的同时,能够缓解疲劳、改善视力、加强脑营养补充,促进机体乳酸等物质的代谢、快速摆脱疲劳状态;综上,本发明营养全面、可快速补充水分,能够长时间保持耐力,适用于士兵、运动员等体力消耗大的人群。

一种提高运动耐力的固体饮料配方及其制备方法
准确称量低聚果糖64.5g,左旋肉碱30g,异麦芽酮糖20g,亮氨酸4g,异亮氨酸1g,缬氨酸1g,γ-氨基丁酸3g,精氨酸1.74g,2-氧代戊二酸1.46g,牛磺酸1.4g,葡萄糖酸锌180mg,维生素E180mg,D-核糖20g,甜菊糖苷10g,草莓提取物0.1g,芒果浓缩物0.1g。
在清洁作业区进行混合配料,将D-核糖、左旋肉碱、低聚果糖、甜菊糖苷进行充分混合1h,得混合粉A;将剩余成分进行充分混合1h,得混合粉B;将混合粉A和混合粉B进行二次混合后,再次混合1h,混合均匀后得混合粉C,采用自动分装机进行分装,按照5g/袋进行分装,再按40袋/桶进行包装可得成品。
饮用时,可取1袋置于80℃左右180-200ml热水中,可根据个人爱好适量添加蔗糖等成分,混合均匀后,放置至35-40℃饮用,口感最佳。

准确称量低聚果糖55g,左旋肉碱10g,异麦芽酮糖18g,亮氨酸4g,异亮氨酸1g,缬氨酸1g,γ-氨基丁酸3g,精氨酸1.74g,2-氧代戊二酸1.46g,牛磺酸1.3g,葡萄糖酸锌100mg,维生素E150mg,D-核糖17g,甜菊糖苷8g,薄荷香精0.1g,黄桃浓缩物0.1g, 乳清蛋白700g,大豆分离蛋白170g,普鲁兰多糖50g,可溶性大豆多糖10g,海藻糖15g。
在清洁作业区进行混合配料,将乳清蛋白、大豆分离蛋白、可溶性大豆多糖、D- 核糖、左旋肉碱、普鲁兰多糖、低聚果糖、甜菊糖苷进行充分混合1h,得混合粉A;将剩余成分进行充分混合1h,得混合粉B,将混合粉A和混合粉B进行二次混合后,再次混合1h,混合均匀后得混合粉C,采用自动分装机进行分装,按照10g/袋进行分装,再按40袋/桶进行包装可得成品。

准确称量低聚果糖40g,左旋肉碱15g,异麦芽酮糖14g,亮氨酸4g,异亮氨酸1g,缬氨酸1g,γ-氨基丁酸3g,精氨酸1.74g,2-氧代戊二酸1.46g,牛磺酸1.4g,葡萄糖酸锌80mg,维生素E130mg,D-核糖13g,安赛蜜10g,香草提取物0.2g,乳清蛋白780g,大豆分离蛋白190g,普鲁兰多糖50g,可溶性大豆多糖10g,海藻糖8g,大豆软磷脂3g, 柠檬酸钾12g,乳矿物盐5g,氯化钠6g,β-丙氨酸5g,半胱氨酸0.5g,维生素C0.5g,微晶纤维素5g,葡萄糖酸镁1.5g,甘草酸三钾130mg,乳酸亚铁140mg,肌醇100mg,氨基葡萄糖1mg,维生素A10mg,维生素B1 18mg,维生素B2 15mg,维生素B3 300mg,维生素B6 19mg,维生素B12 48ug,β-胡萝卜素5mg。

Claims (7)
1.一种提高运动耐力的固体饮料配方,其特征在于:包括以下重量份的配方组分:D-核糖10-20份,左旋肉碱6-30份,异麦芽酮糖1-20份,亮氨酸4份,异亮氨酸1份,缬氨酸1份,γ-氨基丁酸3份,精氨酸1.74份,2-氧代戊二酸1.46份,牛磺酸1.1-1.4份,葡萄糖酸锌0.06-0.18份,维生素E0.076-0.18份,低聚果糖32-64.5份,甜味剂0.2-10份,香精0.2份。
2.根据权利要求1所述的提高运动耐力的固体饮料配方,其特征在于:所述配方组分还可以添加:乳清蛋白600-800份,大豆分离蛋白150-200份,普鲁兰多糖50份,可溶性大豆多糖10份,海藻糖2-20份,大豆软磷脂3份。
3.根据权利要求2所述的提高运动耐力的固体饮料配方,其特征在于:所述配方组分还可以添加:柠檬酸钾7-14.1份,乳矿物盐5份,氯化钠3-6份,β-丙氨酸5份,半胱氨酸0.5份,维生素C0.2-1.2份,微晶纤维素0.2-10份,葡萄糖酸镁1.3-2.1份,甘草酸三钾0.1-0.2份,乳酸亚铁0.095-0.22份,肌醇0.06-0.12份,氨基葡萄糖0.0006-0.006份。
4.根据权利要求3所述的提高运动耐力的固体饮料配方,其特征在于:所述配方组分还可以添加:维生素A 0.004-0.017份,维生素B1 0.009-0.022份,维生素B2 0.009-0.022份,维生素B3 0.11-0.33份,维生素B6 0.007-0.022份,维生素B12 0.00001-0.000066份,β-胡萝卜素0.003-0.006份。
5.根据权利要求1所述的提高运动耐力的固体饮料配方,其特征在于:所述甜味剂为甜菊糖苷、三氯蔗糖、安赛蜜、木糖醇中的一种或多种。
6.根据权利要求1所述的提高运动耐力的固体饮料配方,其特征在于:所述香精为牛奶香精、薄荷香精、绿茶香精、蓝莓香精、香草提取物、草莓提取物、苹果汁浓缩物、芒果浓缩物、黄桃浓缩物、橙汁浓缩物中的一种或多种。
7.一种根据权利要求1-6中任意一项所述的提高运动耐力的固体饮料的制备方法,其特征在于:其特征包括以下步骤:
步骤一、于清洁区行混合配料,将D-核糖、左旋肉碱、低聚果糖、甜味剂进行充分混合,得混合粉A;
步骤二、将剩余成分进行充分混合,得混合粉B,并把混合粉B和混合粉A进行二次充分混合,得混合粉C;
步骤三、将混合粉C采用自动分装机进行分装。
