Abstract
The invention discloses a method for preparing digestion-free soybean protein by taking high-temperature and low-temperature soybean meal as a raw material. Indigestible protein refers to small molecule proteins with a molecular weight of less than 500Da (daltons), wherein the average molecular weight is 120Da of complex amino acids and the molecular weight is 180-500 Da of small molecule di-and tripeptides. The soybean protein is good quality protein, contains no cholesterol, and all the protein can be absorbed and utilized by human body only by being digested to be in an absorbable state. As the elderly age, various functions of the body, particularly digestion functions, decline, so that the utilization rate of protein is reduced due to insufficient digestion of protein, a lot of protein resources are lost and wasted, and development of a digestion-free protein product has great significance for supplementing insufficient protein nutrition for the elderly.
Description
Technical Field
The invention relates to a preparation method of a digestion-free food, in particular to a method for preparing digestion-free soybean protein by taking high-temperature and low-temperature soybean meal as a raw material.
Background
According to the latest theories of life and physiology: when the human body is about 25 years old, the growth period is over 30 years old, and the maturity period is over, all the functions of the human body can begin to decline, and the functions decline greatly after 60 years old. The new theory suggests that the main reason of aging of the old people is that endogenous cellular proteins dropped in intestines cannot be completely recycled, and the long-term shortage of body proteins is the main reason of premature aging of the old people. The physiology states that: the life cycle of human intestinal cells is 43 hours at most, the life cycle of cells on the surface of the stomach is three days, old cells are exfoliated as new cells grow out, the cells are digested and utilized by the human body like food, and normal people have 8-inch and two-inch exfoliated cells, namely 248.8 g of intestinal cell proteins are exfoliated every day. Half jin of human body cell protein with the biological value of 100 is the best quality, the falling cell protein of the stomach is not considered, the cell protein of the small intestine is not denatured by gastric acid, the molecule winding is very tight and is not easy to digest, and the normal young people can completely recycle the protein after the long-time digestion at the lower end of the small intestine.
The human protein supply consists of three parts:
the first part supplies: is cell protein dropped from intestinal tract, the dropped cell is digested and utilized like food, adult has at least 8 engbi and 31.1 g per engbi every day, namely 248.8 g of dropped cell protein, the cell protein is human protein, is the best quality protein with 100 biological potency, and the biological potency of any other kind of protein is lower than the best quality protein.
A second part supplying: is dead cells in tissues, about 198-283 g of dead cells are repeatedly used by autophagy of human bodies every day, and autophagy means that the dead cells eat themselves. The existence of enzymes in living human cells that digest proteins, carbohydrates and fats can digest apoptotic cells for reuse by the cells is called autophagy. Looking up "one day hungry secret" autophagy science on the web, doctor university swedish japan scientist in 2016 thus won the nobel prize.
The third part supplies: is protein in food, and is supplemented by 1.0 g to 1.5 g per kilogram of body weight per day. The protein in food is digested in stomach, the protease secreted by human stomach is inactive and activated by gastric acid to digest the protein in food, and the aging of human body is the decrease of secretion in body which directly affects the digestion of protein in body.
The old people can not completely recycle endogenous cell protein due to the aging of each function of the organism, especially the reduction of the secretion amount and the reduction of the activity of digestive enzyme, so that the long-term nitrogen source imbalance of the organism is caused. It is clear what the body's long-term protein deficiency is as a result, why old people lose muscle so badly that the body cells use their own muscle proteins for survival. The protein-deficient organism is in a state of vicious circle, the old has no way, the digestive function of the body is reduced, and the protein in the body is not digested, namely the protein is absorbed and utilized. And the protein is not digested and fermented in the intestinal tract to generate a plurality of toxins such as skatole, and the toxins are absorbed by the large intestine to hurt the body. The digestion-free protein product is the only method for solving the problem of protein deficiency of the old. Protein nutrition plays an important role in the aging process, and nutrient imbalance not only accelerates organ aging, but also causes diseases. Another manifestation of aging in the elderly is: the metabolism is slow, the digestion function is reduced, in particular, various hormones in the body are reduced, the hormones are generated by the human body, the basic substances of the hormones are all proteins, including immune cells, so that protein nutrients are absolutely indispensable and are the most important substances in life.
The indigestible protein is a protein with a molecular weight below 500 Da. Wherein the compound amino acid has an average molecular weight of 120Da and the small molecular dipeptide and tripeptide have molecular weights of 180-500 Da. Scientists have discovered during the study of genes that the human body has a substance that determines all functional activities of the human body's life, called peptides. He speaks: peptide is a revolutionary product that will lead the human nutritional revolution in the 21 st century. The human has been undergoing three health revolution since history, the first smallpox appeared, the solution was the vaccinium nikoense, the second penicillin was used to treat the disease caused by bacteria and virus, the third was the use of small molecule active peptide to treat all diseases including all major diseases, which was the problem of cell failure. Medical science states that only one disease of humans is cellular failure. Cell failure is due to two causes, 1, the cells are not nourished. (not getting the needed things) 2, cytotoxic overload. (unwanted material is obtained).
The protein content of the soybean meal is about 50 percent, the types of necessary amino acids in the protein are complete, and the nutrition of 8 kinds of necessary amino acids for human bodies is balanced.
The invention aims to solve the problem that the old people have insufficient protein due to insufficient recycling of in-vivo cell protein caused by aging of the body, complete the digestion of the protein in vitro by using a biological enzyme engineering technology, provide a protein product which can be directly absorbed through the small intestine without digestion, and solve the problem of protein imbalance of the old people.
Disclosure of Invention
The invention provides a protein food which is digested in vitro for the old, and solves the problem of pain point of protein nutrient imbalance caused by incomplete digestion of protein due to aging of the old. Another manifestation of aging in the elderly is: the metabolism is slowed down, the digestion function is reduced, in particular, various hormones in the body are reduced, the hormones are important substances which are generated by the human body and used for regulating the normal activities of the body, the hormone secretion in the body is out of balance and must be supplemented by external sources from the aging point, the basis of the substances is protein, so the development of the digestion-free silkworm pupa protein product is significant for the health of old people, and the product is the only food which does not contain cholesterol in animal protein.
The preparation process comprises the following steps:
firstly, crushing and refining bean pulp raw materials by using water in a ratio of 1 to 8-10 times;
secondly, sterilizing and modifying the refined material liquid, and instantaneously treating the material liquid at 125-130 ℃ for 10-16 seconds;
thirdly, the feed liquid after sterilization and protein denaturation treatment is required to be processed by temperature reduction, and the temperature is reduced to 54-56 ℃;
fourthly, adding 0.3 to 0.5 percent of compound protease into the cooled feed liquid, slowly stirring, controlling the temperature to be between 54 and 56 ℃, carrying out deep enzymolysis for 36 to 72 hours, meeting the product standard requirement below 500 daltons, and not adjusting the pH value in the whole enzymolysis process;
fifthly, centrifugally separating the feed liquid after the enzymolysis is finished, and removing insoluble substances to obtain the digestion-free protein feed liquid;
sixthly, sterilizing and inactivating enzyme in the step four, and keeping the temperature of the feed liquid at 90-95 ℃ for 15-25 seconds by a sterilizer to achieve the aim of killing protease;
seventhly, concentrating the solid matter of the materials to be more than 40 percent by a double-effect evaporator respectively, and carrying out spray drying to obtain a digestion-free soybean protein powder product containing water-soluble carbohydrate;
and sixthly, mixing the feed liquid which is sterilized and inactivated respectively according to the standard of the liquid product, and performing aseptic filling to obtain the digestion-free soybean protein liquid product containing water-soluble carbohydrate.
The invention has the following advantages and positive effects:
1. in order to solve the problem that the old people have insufficient protein due to the insufficient recycling of cell protein dropped from intestinal tracts in vivo caused by the aging of organisms, the enzyme engineering of the biotechnology is utilized to upgrade the traditional soybean protein product into a coffee indigestion-free protein product. The product after upgrading has the function of being absorbed without digestion, and can be used for the old with hypofunction of digestion, the people in a sick state and the people who can eliminate fatigue and recover physical performance as soon as possible. In addition, another manifestation of aging in the elderly is: the metabolism is slowed down, the digestion function is reduced, in particular, various hormones in the body are reduced, the hormones are generated by the human body, the basic substances are all proteins, and the digestion-free protein product is provided for the old.
2. Provides a protein nutritious food which can not be digested for patients. The research shows that: when a patient suffers from a disease, the patient is emaciated, the body is in a stop state due to the fact that the patient has good and multiple functions in the disease, if the patient does not have a stomach and is unwilling to eat, the digestion function is stopped, the body is consumed every moment, the body can only be used for meeting the needs of the body without supplementing self tissues, and the patient is ill and can rapidly supplement protein nutrients by eating the digestion-free protein, which is very helpful for the rehabilitation of the patient.
3. Provides a small molecule dipeptide and tripeptide protein product which is really free from digestion in the market. The small molecular dipeptide and tripeptide are the components of human immune cells, and can proliferate the human immune cells and activate the human immune cells after entering the body. American shake video: the whole process of killing cancer cells by immune cells in a human body is also realized by the principle of the existing immunotherapy that the immune cells are injected into the human body after being proliferated in vitro, so that the immune cells can kill cancer cells, the cancer incidence rate of the old is high, the body protein is insufficient, the most direct influence is the reduction of the immune cells, and the opportunity of killing the cancer cells is also reduced, so that: proliferating human immune cells is the most effective method for preventing and treating cancer.
There are only two ways for humans to obtain peptides:
one, eating small molecular dipeptide and tripeptide with molecular weight of 180 Da-500 Da.
Secondly, the peptide product is injected into the body through injection, for example, the insulin is the 51 peptide, which saves countless lives of diabetes patients in the world. In addition, most of the water-soluble carbohydrates are soybean oligosaccharides which are not absorbed by human bodies, according to experiments in soybean deep processing books, adults take 3 g of soybean stachyose and raffinose (the two sugars are main components of the soybean oligosaccharides) every day, the number of bifidobacteria in each gram of excrement is increased from 8 times of 10 to 9.6 times of 10 after one week, bifidobacteria in intestinal tracts are increased by 7.5 times, lactic acid bacteria are increased by 2 times, and the total number of harmful bacteria is reduced by 81%. Therefore, the soybean oligosaccharide is a functional factor for regulating the balance of beneficial flora in intestinal tract and ensuring the health and longevity of human bodies.
