Claims (6)
1. A method for preparing digestion-free protein from animal protein (mainly lean meat and fish meat of animal) is provided; the digestion-free protein is an upgraded and updated product of conventional protein, and the components of the digestion-free protein mainly comprise composite amino acid with the average molecular weight of 120Da and products with micromolecule dipeptide and tripeptide of 180-500 Da; the method takes animal protein (mainly refers to lean meat and fish meat of animals) as raw materials, cuts off macromolecular protein through enzyme engineering, and achieves a protein product which can be directly absorbed and utilized by human bodies without digestion; the process adopts a membrane separation and purification method to separate out protein larger than 500Da, and produces a high-purity digestion-free protein product.
2. The process can also produce a digestion-free protein product which is mainly 500Da and has no high purity compared with the membrane process by enzymolysis without adopting a membrane separation technology.
3. The process adopts the treatment of more than 90 ℃ for more than 30 seconds, and protease needs to be inactivated, thereby achieving the purpose of producing the inactive digestion-free protein product.
4. The feed liquid after the digestion-free protein enzymolysis is prepared according to the liquid product standard, and a liquid product can be produced.
5. The powdery product can be produced by concentration and spray drying;
the preparation process comprises the following steps:
①, weighing the animal protein meat as raw materials;
②, cutting ① raw materials into blocks, crushing, and carrying out water and size mixing treatment according to the weight ratio of 1 to 9-10 times;
③, performing ultra-high temperature sterilization, aging and protein denaturation treatment on ② mixed slurry, and keeping the temperature at 100 ℃ for more than 15 minutes;
④, cooling ③ to reduce the temperature of the feed liquid to 15-40 ℃ to carry out fat hydrolysis treatment on the material containing fat, wherein the addition amount of lipase is 0.2-0.5 percent of the weight of the raw material, the treatment time is more than 6 hours, and the pH value does not need to be adjusted in the enzymolysis process, but the slow stirring treatment is needed;

⑥, purifying the feed liquid after ⑤ enzymolysis by membrane separation, and carrying out enzyme deactivation treatment on the purified feed liquid at 90 ℃ for 30 seconds to produce a high-purity digestion-free protein product;
⑦, carrying out enzymolysis on ⑤, purifying the feed liquid without membrane separation, and carrying out enzyme deactivation treatment on the feed liquid at 90 ℃ for 30 seconds to produce a digestion-free protein isolate product;
⑧, blending ⑥, ⑦ and the feed liquid according to the liquid product standard, and carrying out aseptic filling to obtain a liquid product;
⑨, concentrating ⑥, ⑦ and the feed liquid, and spray drying the solid matter to over 40% to obtain the powdery product.
6. The method for preparing the indigestible-free protein by using the animal protein as the raw material according to the claims 1, 2 and 3, which is characterized in that: the method takes animal protein as a raw material, and obtains high-purity and non-high-purity digestion-free protein liquid and powder products by dicing, crushing, size mixing, enzymolysis, membrane separation or non-membrane separation.
