技术领域
本发明属于保健食品和食品加工技术领域,涉及一种灵芝孢子粉的灭菌方法,具体是一种利用喷雾干燥的灭菌方法。本发明还涉及通过灭菌干燥的灵芝孢子粉经破壁等工序加工而成的破壁灵芝孢子粉中药饮片或保健食品。
背景技术
灵芝(Ganoderma lucidum)属于担子菌门担子菌纲多孔菌科灵芝属药用真菌,具有很高的药用价值,被广泛应用于治疗和预防多种心血管疾病、肝肾疾病、神经性疾病等常见的疾病。灵芝孢子是灵芝在生长成熟期从菌褶中弹射出来的极其微小的卵形生殖细胞,其主要活性成分为多糖类、三萜类化合物和不饱和脂肪酸等,同时还含有蛋白质、氨基酸、内酯类、生物碱类以及微量元素等有益成分。现代药理学和临床研究发现灵芝孢子粉具有免疫调节、抗肿瘤、保护神经系统、保肝解毒、调节血糖和血脂、抗氧化、抗炎和抗病毒等药理活性。灵芝孢子具双层壁结构,外壁坚韧,耐酸碱,只有经破壁后方可为人体有效吸收利用。
灵芝孢子采收后一般通过日晒或烘箱烘干,其干燥过程微生物指标未经过控制,因而在后续破壁加工过程中需要对其进行灭菌,以保证最终产品的微生物指标符合产品相关技术要求。目前,生产上灵芝孢子粉灭菌方法主要为湿热灭菌法和辐照灭菌法。湿热灭菌是最常见的杀菌方法,该方法将灵芝孢子粉铺盘放入中药灭菌柜,通入蒸汽进行湿热灭菌,温度一般在100℃以上,时间不少于20分钟,灭菌结束后继续加热进行干燥,干燥时间在30分钟以上,因此该法生产效率低,灭菌时间和干燥时间均较长,且长时间的高温会导致其中的不饱和脂肪酸等活性成分氧化变质,影响产品口感。辐照杀菌技术是利用射线(包括X射线、γ射线和加速电子束等)的辐照来杀灭微生物的技术,其不会引起食品外观和风味的变化,但存在辐照剂量超标、设备昂贵、消费者认可度低等不足。如中国专利申请号2018107440710公开了一种破壁灵芝孢子粉的灭菌方法,其也存在上述缺陷。因此,有必要开发一种高效、对活性成分破坏少的灵芝孢子粉灭菌方法。
发明内容
为解决上述现有技术存在的问题,本发明提供了一种灵芝孢子粉的灭菌方法及中药饮片或保健食品。本发明灵芝孢子粉的灭菌方法生产效率高、灭菌效果好、可以有效控制灵芝孢子粉的菌落总数、大肠菌群、霉菌和酵母以及致病菌等微生物指标,同时缩短物料高温接触时间,减少灵芝孢子粉中的不饱和脂肪酸等活性成分的高温氧化,为灵芝孢子粉原料灭菌提供了一种全新技术。
本发明通过以下技术方案来实现:
一种灵芝孢子粉的灭菌方法,包括以下步骤:
(1)配料:称取干燥的灵芝孢子粉(可投入配料罐内)加入纯化水搅拌混合均匀,得到灵芝孢子粉料液;
(2)喷雾干燥灭菌:将灵芝孢子粉料液进行喷雾干燥,控制进料速度、进风温度和出风温度进行干燥灭菌,收集灭菌的干燥灵芝孢子粉。
优选的,步骤(1)中,纯化水的添加量为灵芝孢子粉重量的3-6倍,进一步优选为4-5倍。
优选的,步骤(2)中,将灵芝孢子粉料液泵入喷雾干燥机进行喷雾干燥,进一步优选的,喷雾干燥机为离心式喷雾干燥机。
优选的,步骤(2)中,进料速度由进料泵的变频调速电机频率控制,电机频率为20-50Hz,进一步优选为30-40Hz。
优选的,步骤(2)中,喷雾干燥的进风温度为150-200℃,进一步优选为160-180℃。
优选的,步骤(2)中,喷雾干燥的出风温度为50-90℃,进一步优选为60-80℃。

经上述步骤所收集的灭菌的干燥灵芝孢子粉可经破壁等工序加工成破壁灵芝孢子粉中药饮片或保健食品。
本发明具有如下技术效果:
本发明提供了一种采用喷雾干燥工艺对灵芝孢子粉灭菌的方法。喷雾干燥的原理是利用雾化器雾化料液之后,瞬间增大若干倍表面积,快速提高传热传质效率,5-15s就能够干燥产品。相对于其他干燥技术而言,喷雾干燥技术本身也是灭菌过程,其可以在较短的时内以较高的温度快速将物料干燥,具有速度快、效率高等优点。
具体实施方式
以下通过具体实施例对本发明的技术方案作进一步说明。
实施例1:
称取干燥的灵芝孢子粉原料50kg,投入配料罐,并加入200kg纯化水搅拌均匀,制得灵芝孢子粉料液。喷雾干燥机设置进风温度为200℃,出风温度为85℃,进料泵电机频率23Hz。喷雾干燥机预热后,启动进料泵开始进行喷雾干燥,在洁净区收集灭菌干燥的灵芝孢子粉。喷雾结束后,共收集灭菌干燥的灵芝孢子粉44.16kg,收率为88.32%,密封包装后储存于阴凉干燥处。检测灭菌干燥的灵芝孢子粉水分为2.58%,菌落总数<10CFU/g,大肠菌群≤0.92MPN/g、霉菌和酵母<10CFU/g,沙门氏菌和金黄色葡萄球菌均未检出。
实施例2:
称取干燥的灵芝孢子粉原料50kg,投入配料罐,并加入250kg纯化水搅拌均匀,制得灵芝孢子粉料液。喷雾干燥机设置进风温度为200℃,出风温度为80℃,进料泵电机频率30Hz。喷雾干燥机预热后,启动进料泵开始进行喷雾干燥,在洁净区收集灭菌干燥的灵芝孢子粉。喷雾结束后,共收集灭菌干燥的灵芝孢子粉45.67kg,收率为91.33%,密封包装后储存于阴凉干燥处。检测灭菌干燥的灵芝孢子粉水分为3.21%,菌落总数<10CFU/g,大肠菌群<0.3MPN/g、霉菌和酵母<10CFU/g,沙门氏菌和金黄色葡萄球菌均未检出。
实施例3:
称取干燥的灵芝孢子粉原料50kg,投入配料罐,并加入200kg纯化水搅拌均匀,制得灵芝孢子粉料液。喷雾干燥机设置进风温度为170℃,出风温度为70℃,进料泵电机频率35Hz。喷雾干燥机预热后,启动进料泵开始进行喷雾干燥,在洁净区收集灭菌干燥的灵芝孢子粉。喷雾结束后,共收集灭菌干燥的灵芝孢子粉46.51kg,收率为93.02%,密封包装后储存于阴凉干燥处。检测灭菌干燥的灵芝孢子粉水分为4.63%,菌落总数350CFU/g,大肠菌群<0.3MPN/g、霉菌和酵母20CFU/g,沙门氏菌和金黄色葡萄球菌均未检出。

实施例6:
称取干燥的灵芝孢子粉原料300kg,投入配料罐,并加入1200kg纯化水搅拌均匀,制得灵芝孢子粉料液。喷雾干燥机设置进风温度为170℃,出风温度为70℃,进料泵电机频率35Hz。喷雾干燥机预热后,启动进料泵开始进行喷雾干燥,在洁净区收集灭菌干燥的灵芝孢子粉。喷雾结束后,共收集灭菌干燥的灵芝孢子粉285.86kg,收率为95.29%,密封包装后储存于阴凉干燥处。检测灭菌干燥的灵芝孢子粉,结果如下表。
经上述实施例所收集的灭菌的干燥灵芝孢子粉可经破壁等工序加工成破壁灵芝孢子粉中药饮片或保健食品。
本发明采用喷雾干燥法灭菌灵芝孢子粉,解决了现有灭菌工艺可能出现的生产效率低、不饱和脂肪酸氧化变质、辐照残留等不足,提高了灵芝孢子粉的品质,有效控制其微生物指标,方便后续加工利用。
以上所述仅是对本发明的优选实施例及原理进行了详细说明,对本领域的普通技术人员而言,依据本发明提供的思想,在具体实施方式上会有改变之处,而这些改变也应视为本发明的保护范围。
Claims (10)
1.一种灵芝孢子粉的灭菌方法,其特征在于,包括以下步骤:
(1)将干燥的灵芝孢子粉加入纯化水搅拌混合均匀,得到灵芝孢子粉料液;
(2)将步骤(1)的灵芝孢子粉料液进行喷雾干燥,控制进料速度、进风温度和出风温度进行干燥灭菌,收集灭菌的干燥灵芝孢子粉。
2.根据权利要求1所述灵芝孢子粉的灭菌方法,其特征在于:步骤(1)中,纯化水的添加量为灵芝孢子粉重量的3-6倍。
3.根据权利要求1所述灵芝孢子粉的灭菌方法,其特征在于:步骤(2)中,将步骤(1)的灵芝孢子粉料液泵入喷雾干燥机进行喷雾干燥。
4.根据权利要求3所述灵芝孢子粉的灭菌方法,其特征在于:步骤(2)中,喷雾干燥机采用离心式喷雾干燥机。
5.根据权利要求3或4所述灵芝孢子粉的灭菌方法,其特征在于,步骤(2)中,进料速度由泵的变频调速电机频率控制,电机频率为20-50Hz。
6.根据权利要求1、3或4所述灵芝孢子粉的灭菌方法,其特征在于,步骤(2)中,喷雾干燥的进风温度为150-200℃。
7.根据权利要求1、3或4所述灵芝孢子粉的灭菌方法,其特征在于,步骤(2),喷雾干燥的出风温度为50-90℃ 。
8.根据权利要求7所述灵芝孢子粉的灭菌方法,其特征在于,步骤(2),喷雾干燥的出风温度为60-80℃ 。
9.根据权利要求1-4任一项所述灵芝孢子粉的灭菌方法,其特征在于,步骤(2),收集灭菌的干燥灵芝孢子粉,水分≤9.0%、菌落总数≤1000CFU/g、大肠菌群≤0.92MPN/g、霉菌和酵母≤50CFU/g、致病菌≤0/25g。
10.一种中药饮片或保健食品,其特征是:由权利要求1-9任一项所述灭菌方法收集的灵芝孢子粉加工而成。
