小麦无害化表面杀菌着水润麦方法,过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入95℃~105℃的热风,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。本发明采用多级处理的纯水与氯化钠配制成润麦使用的杀菌溶液,不但避免了因水源性污染造成的食品安全隐患,而且结合高温热风使小麦与杀菌溶液充分接触,可快速消灭小麦表层中的有害微生物,提高了小麦的出粉率和加工精度,还可降低面粉的灰度,具有卫生健康、操作便利和快速高效的优点。

技术领域
本发明涉及小麦加工技术领域,具体涉及一种小麦无害化表面杀菌着水润麦方法。
背景技术
小麦是小麦系植物的统称,是单子叶植物,是一种在世界各地广泛种植的禾本科植物,小麦的颖果是人类的主食之一,磨成面粉后可制作面包、馒头、饼干、面条等食物;发酵后可制成啤酒、酒精、白酒(如伏特加),或生质燃料。小麦富含淀粉、蛋白质、脂肪、矿物质、钙、铁、硫胺素、核黄素、烟酸、维生素A及维生素C等。小麦是三大谷物之一,几乎全作食用,仅约有六分之一作为饲料使用。两河流域是世界上最早栽培小麦的地区,中国是世界最早种植小麦的国家之一。2010年小麦是世界上总产量位居第二的粮食作物(6.51亿吨),仅次于玉米(8.44亿吨)。
润麦是小麦加工的重要环节,目前主要将着水后小麦(或加温水分调节后小麦)入仓存放一定时间,使水分在麦粒内部分布更加均匀,并产生一系列物理生化变化,最终完成水份调节过程的工序。目前国内对着水润麦环节所用的水源是大都是未经任何改良措施的一般性水源,由于地区或历史发展等原因,部分地区的水源的水硬度、酸度、重金属、微生物超标容易对人体健康造成损害,而且未经处理的水源润麦,也会对小麦粉后期加工造成一定影响;此外科学发现小麦表面含有微生物,以细菌数最多,其次是霉菌和酵母菌,细菌和霉菌对小麦粉的污染,不仅可造成小麦粉变质、营养价值降低,乃至霉变浪费,在经济上造成巨大损失,还可使其加工工艺品质下降,如何在润麦环节将麦粒表面的微生物杀灭,成为小麦加工行业重点研究的课题。
发明内容
本发明提供了一种小麦无害化表面杀菌着水润麦方法,以解决现有技术存在的着水润麦无法杀灭小麦表面细菌影响小麦加工品质的问题。
本发明解决其技术问题所采用的技术方案是:
一种小麦无害化表面杀菌着水润麦方法,其操作方法为过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入95℃~105℃的热风,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水温度为常温,盐水喷淋与小麦的润湿质量比例控制在100重量份的小麦添加3~7重量份盐水,小麦在润麦机中停留30秒~90秒,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。
上述机体底部由热风机通入98℃~100℃的热风,压力控制在0.02~0.3MPa。
本发明采用多级处理的纯水与氯化钠配制成润麦使用的杀菌溶液,不但避免了因水源性污染造成的食品安全隐患,而且结合高温热风使小麦与杀菌溶液充分接触,可快速消灭小麦表层中的有害微生物,提高了小麦的出粉率和加工精度,还可降低面粉的灰度,具有卫生健康、操作便利和快速高效的优点。
具体实施方式
例1
一种小麦无害化表面杀菌着水润麦方法,其操作方法为过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入98℃~100℃的热风,热风压力控制在0.02~0.3MPa,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水温度为常温,盐水喷淋与小麦的润湿质量比例控制在100重量份的小麦添加5重量份,小麦在润麦机中停留60秒,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。

一种小麦无害化表面杀菌着水润麦方法,其操作方法为过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入100℃~105℃的热风,热风压力控制在0.02~0.3MPa,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水温度为常温,盐水喷淋与小麦的润湿质量比例控制在100重量份的小麦添加3重量份盐水,小麦在润麦机中停留90秒,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。

一种小麦无害化表面杀菌着水润麦方法,其操作方法为过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入100℃~102℃的热风,热风压力控制在0.02~0.3MPa,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水温度为常温,盐水喷淋与小麦的润湿质量比例控制在100重量份的小麦添加7重量份,小麦在润麦机中停留30秒,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。

1.一种小麦无害化表面杀菌着水润麦方法,其特征是其操作方法为过筛的干净小麦由输送设备定量输入润麦机中,机体底部由热风机通入95℃~105℃的热风,使小麦在机体中剧烈翻滚,与此同时机体顶部的喷淋头将盐水溶液喷淋与小麦充分混合,盐水溶液含盐质量浓度为3%~5%之间,盐水温度为常温,盐水喷淋与小麦的润湿质量比例控制在100重量份的小麦添加3~7重量份盐水,小麦在润麦机中停留30秒~90秒,盐水溶液使用的水是先后经过过滤器、钠离子软化器、精密过滤器、反渗透设备以及氧化除氯器处理后的纯水。
2.根据权利要求1所述的小麦无害化表面杀菌着水润麦方法,其特征是机体底部由热风机通入98℃~100℃的热风,压力控制在0.02~0.3MPa。
