本发明涉及食品加工技术领域,更具体的说是涉及一种营养保健大豆蛋白粉及其制备方法。
背景技术
随着社会的不断发展,人们对食品营养的要求越来越高,在吃饱的前提下,更要吃出健康。但是,现有的食品营养单一,世界卫生组织评出的“十大垃圾食品”(1.油炸食品,2.罐头类食品,3.腌制食品,4.加工的肉类食品,5.肥肉和动物内脏类食物,6.奶油制品,7.方便面,8.烧烤类食品,9.冷冻甜点,10.果脯、话梅和蜜饯类食物)充斥社会各个角落,现有食品不仅无法满足人体对营养的全面需求,而且垃圾食品还会对人体造成种种伤害,肥胖症、高血压、糖尿病、心脑血管疾病、癌症等各种现代“文明病”“富贵病”严重地危害到人体的健康。
同时,我们人类的健康还受到多方面的挑战,大气中充满各种粉尘、车辆尾气、工业废气,水中受各种工业废水以及自耕地而来的农药、化肥、除草剂的污染,粮食、蔬菜水果受到各种农药残留、杀虫剂、除草剂、化肥等的污染,肉类中含有荷尔蒙、抗菌素、激素等毒素,人们在食用粮食、蔬菜、肉类、水果的同时也把各种毒素带入了体内。人体本身在新陈代谢过程中也会产生大量毒素,也需要及时排除,人体还会产生大量自由基,可以使细胞受损,诱发癌症,导致动脉硬化,引发糖尿病,形成雀斑和白内障,加速细胞衰老,导致人们疾病缠身,痛苦不堪,过早的衰老、死亡。因此,现代人迫切需要既能满足人体自身营养需求,又能为人体清除垃圾、排毒、解毒,延缓衰老,延年益寿的营养食品。
黑豆营养价值高,被称为“豆中之王”、“田中之肉”、“绿色的牛乳”等,是数百种天然食物中最受营养学家推崇的食物,含有丰富的维生素B、维生素E及烟酸。黑豆皮为黑色,含有花青素,是很好的抗氧化剂来源,能清除体内自由基,尤其是在胃的酸性环境下,抗氧化效果好,养颜美容,增加肠胃蠕动。“黑豆乃肾之谷”,黑色属水,水走肾,所以肾虚的人食用黑豆可以祛风除热、调中下气、解毒利尿,可以有效地缓解尿频、腰酸、女性白带异常及下腹部阴冷等症状,是体虚、体寒、水肿、脚气、黄疸、贫血和各种关节炎、风湿、腰、腿痛及糖尿病、心脏病等患者的不二保健食品,对于改善皮肤及滋养肌肤有很好的效果。黑豆中含有丰富的营养物质,具有营养保健的作用,能够保持肌体功能完整,延缓机体衰老。
泥鳅,又名河鳅、鳅鱼等。泥鳅味甘、性平,入脾、肝经,有补中益气、祛邪除湿、养肾生精、祛毒化痔、消渴利尿、保肝护肝、暖脾胃、止虚汗之功效,还可治疗皮肤瘙痒、水肿、肝炎、早泄、黄疸、痔疮等症。泥鳅肉质细嫩,味道极为鲜美,是一种高蛋白、低脂肪食品,为膳食珍馐,适宜各类人群食用,素有“水中人参”的美誉。
目前,现有技术中还未见有以黑豆和泥鳅同时作为主要活性成分的大豆蛋白粉。
发明内容
有鉴于此,本发明的目的在于提供一种营养保健大豆蛋白粉及其制备方法,以解决现有技术中的不足。
为了实现上述目的,本发明采用如下技术方案:
一种营养保健大豆蛋白粉,包括以下重量份的原料:大豆蛋白粉60-80份、玉米蛋白粉30-50份、黑豆蛋白粉20-30份、泥鳅粉20-30份、糯米粉10-20份、黑米粉10-20份和酪蛋白复合多肽1-5份;
优选为:大豆蛋白粉65-75份、玉米蛋白粉35-45份、黑豆蛋白粉22-28份、泥鳅粉22-28份、糯米粉12-18份、黑米粉12-18份和酪蛋白复合多肽2-4份。
更优选为:大豆蛋白粉72份、玉米蛋白粉39份、黑豆蛋白粉25份、泥鳅粉25份、糯米粉16份、黑米粉15份和酪蛋白复合多肽3份。
本发明中,大豆蛋白粉是经过一系列加工步骤从大豆中提取得到,近乎纯化的蛋白质,含有八种人体必需的氨基酸,与肉、鱼、蛋、奶近似,属于全价蛋白质。
玉米蛋白粉也叫玉米麸质粉,是玉米粒经湿磨工艺制得玉米粗淀粉乳,经过水解、分离、浓缩、发酵烘干制成,其蛋白质含量为20%-70%,是一种极具开发潜力的蛋白质原料。
黑豆蛋白粉富含异黄酮和花青素,能够抗氧化,延缓老化。其中,异黄酮是一种植物性雌激素,能有效抑制乳腺癌、前列腺癌和结肠癌,对防治中老年骨质疏松也很有帮助;花青素是很好的抗氧化剂来源,能消除体内的自由基,尤其是在酸性环境如胃中,抗氧化效果更好。黑豆蛋白粉还含有丰富的抗氧化剂-维生素E,能清除体内的自由基,减少皮肤皱纹,达到养颜美容、保持青春的目的。
泥鳅粉富含蛋白质,还有多种维生素,所含脂肪成分较低,胆固醇更少,属高蛋白低脂肪食品,而且还含一种类似EPA的不饱和脂肪酸,可以保护血管,故有益于老年人及心血管病人,经常食用能提高身体免疫力。
糯米粉含有蛋白质、脂肪、糖类、钙、磷、铁、维生素B1、维生素B2、烟酸及淀粉等,营养丰富,为温补强壮食品,有补虚、补血、健脾暖胃、止汗等作用,适用于脾胃虚寒所致的反胃、食欲减少、泄泻和气虚引起的汗虚、气短无力、妊娠腹坠胀等症。
黑米粉是黑米磨成的粉,择取优质黑米籽经过烘炒杀菌等工艺加工而成。黑米外皮层中含有花青素类色素,本身具有很强的抗衰老作用。黑米粉所含锰、锌、铜等无机盐大都比大米高1-3倍,更含有大米所缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分,因而黑米粉比普通大米更具营养。
酪蛋白复合多肽具有预防高血压、高脂肪、抗过敏、抗突变、促进钙、铁吸收、改善睡眠、记忆、提高免疫力等多种功效。
进一步,上述黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入乙醇溶液进行醇提,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,超高温瞬时杀菌,喷雾干燥,即得黑豆蛋白粉。
进一步,上述步骤(1)中,乙醇溶液的体积浓度为60%-80%,用量为黑豆质量的6-8倍;醇提的时间为1-2h。步骤(2)中,水的用量为黑豆质量的5-15倍。步骤(3)中,超高温瞬时杀菌的温度为135-150℃,时间为2-8s。
采用上述进一步技术方案的有益效果在于,本发明采用干燥技术、醇提技术提取黑豆皮中的花青素,再与黑豆经磨浆、分离除渣、超高温瞬时杀菌的方法生产黑豆蛋白粉,使产品营养全面,易于消化吸收。黑豆中富含的钙是人体补钙的极好来源,能够改善产品的色泽,滋气味,提高黑豆蛋白粉的溶解性,使黑豆蛋白粉能快速在水中溶解,提升口感,增强人体的吸收效率,达到保健效果。
进一步,上述泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后加入葱、姜和料酒进行腌制,得到腌制泥鳅;
(2)将腌制泥鳅进行烘烤,干燥,粉碎,即得泥鳅粉。
进一步,上述步骤(1)中,葱、姜和料酒的用量均为泥鳅质量的1%-2%;腌制的时间为2-4h。步骤(2)中,所述烘烤的温度为100-200℃,时间为10-20min。
采用上述进一步技术方案的有益效果在于,本发明选用泥鳅为主要原料,进行腌制、烘烤、干燥和粉碎,由此制得的泥鳅粉营养丰富,能满足人体的营养需求,具有很好的补血养气作用。
一种营养保健大豆蛋白粉的制备方法,具体包括以下步骤:
(1)按上述营养保健大豆蛋白粉的重量份数称取各原料;
(2)将各原料以100-200r/mim的速度搅拌1-2h至混合均匀,即得营养保健大豆蛋白粉。
经由上述的技术方案可知,与现有技术相比,本发明的有益效果如下:

营养保健大豆蛋白粉,包括以下重量的原料:大豆蛋白粉60kg、玉米蛋白粉30kg、黑豆蛋白粉20kg、泥鳅粉20kg、糯米粉20kg、黑米粉20kg和酪蛋白复合多肽5kg。
其中,黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入黑豆质量6倍体积浓度为60%的乙醇溶液醇提1-2h,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入黑豆质量5倍的水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,135℃超高温瞬时杀菌2s,喷雾干燥,即得黑豆蛋白粉。
泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后每100kg泥鳅加入葱1kg、姜1kg和料酒2kg腌制2h,得到腌制泥鳅;
(2)将腌制泥鳅在100℃温度下烘烤10min,干燥,粉碎,即得泥鳅粉。

(1)将黑豆清洗后烘干,加入黑豆质量6倍体积浓度为80%的乙醇溶液醇提2h,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入黑豆质量5倍的水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,135℃超高温瞬时杀菌8s,喷雾干燥,即得黑豆蛋白粉。
泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后每100kg泥鳅加入葱1.2kg、姜1.5kg和料酒2kg腌制4h,得到腌制泥鳅;
(2)将腌制泥鳅在100℃温度下烘烤20min,干燥,粉碎,即得泥鳅粉。
上述营养保健大豆蛋白粉的制备方法,具体包括以下步骤:
(1)按上述营养保健大豆蛋白粉的重量称取各原料;
(2)将各原料以100r/mim的速度搅拌2h至混合均匀,即得营养保健大豆蛋白粉。
实施例3
营养保健大豆蛋白粉,包括以下重量的原料:大豆蛋白粉72kg、玉米蛋白粉39kg、黑豆蛋白粉25kg、泥鳅粉25kg、糯米粉16kg、黑米粉15kg和酪蛋白复合多肽3kg。
其中,黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入黑豆质量7倍体积浓度为70%的乙醇溶液醇提1.5h,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入黑豆质量10倍的水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,142℃超高温瞬时杀菌5s,喷雾干燥,即得黑豆蛋白粉。
泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后每100kg泥鳅加入葱1.5kg、姜1.5kg和料酒2kg腌制3h,得到腌制泥鳅;
(2)将腌制泥鳅在150℃温度下烘烤15min,干燥,粉碎,即得泥鳅粉。
上述营养保健大豆蛋白粉的制备方法,具体包括以下步骤;
(1)按上述营养保健大豆蛋白粉的重量称取各原料;
(2)将各原料以150r/mim的速度搅拌1.5h至混合均匀,即得营养保健大豆蛋白粉。
实施例4
营养保健大豆蛋白粉,包括以下重量的原料:大豆蛋白粉75kg、玉米蛋白粉45kg、黑豆蛋白粉28kg、泥鳅粉28kg、糯米粉12kg、黑米粉12kg和酪蛋白复合多肽2kg。
其中,黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入黑豆质量8倍体积浓度为60%的乙醇溶液醇提1h,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入黑豆质量15倍的水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,150℃超高温瞬时杀菌2s,喷雾干燥,即得黑豆蛋白粉。
泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后每100kg泥鳅加入葱1.6kg、姜1.8kg和料酒2kg腌制4h,得到腌制泥鳅;
(2)将腌制泥鳅在00℃温度下烘烤10min,干燥,粉碎,即得泥鳅粉。
上述营养保健大豆蛋白粉的制备方法,具体包括以下步骤:
(1)按上述营养保健大豆蛋白粉的重量称取各原料;
(2)将各原料以200r/mim的速度搅拌1h至混合均匀,即得营养保健大豆蛋白粉。
实施例5
营养保健大豆蛋白粉,包括以下重量的原料:大豆蛋白粉80kg、玉米蛋白粉50kg、黑豆蛋白粉30kg、泥鳅粉30kg、糯米粉10kg、黑米粉10kg和酪蛋白复合多肽1kg。
其中,黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入黑豆质量8倍体积浓度为80%的乙醇溶液醇提2h,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入黑豆质量15倍的水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,150℃超高温瞬时杀菌8s,喷雾干燥,即得黑豆蛋白粉。
泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后每100kg泥鳅加入葱2kg、姜2kg和料酒2kg腌制4h,得到腌制泥鳅;
(2)将腌制泥鳅在200℃温度下烘烤20min,干燥,粉碎,即得泥鳅粉。
上述营养保健大豆蛋白粉的制备方法,具体包括以下步骤:
(1)按上述营养保健大豆蛋白粉的重量份数称取各原料;
(2)将各原料以200r/mim的速度搅拌2h至混合均匀,即得营养保健大豆蛋白粉。
对比例
营养保健大豆蛋白粉,与实施例3的区别仅在于,不包括黑豆蛋白粉和泥鳅粉。
性能测试
1、国家标准检测
各取实施例1-5制得的营养保健大豆蛋白粉,分别按照国家标准GB/T 22493-2008《大豆蛋白粉》的检测指标和检测方法,检测其感官要求和质量指标。结果如表1-2所示。

由表1和表2可知,本发明实施例1-5营养保健大豆蛋白粉的感官要求和质量指标均符合国家标准GB/T 22493-2008《大豆蛋白粉》的相应要求。
2、营养保健效果试验
随机选取60名素体脾虚的志愿者,年龄20-50岁,男女比例1∶1,平均分为6组,分别在睡前服用实施例1-5和对比例营养保健大豆蛋白粉,每次50g,温水服下。连续服用一个月后,分别进行回访。结果如表3所示。
其中,无效:腹胀纳少,食后胀甚,肢体倦怠,神疲乏力,少气懒言;
有效:脾虚症状明显减轻;
痊愈:脾虚症状完全消失。

由表3可知,与对比例相比,本发明实施例1-5大豆蛋白粉能够显著消除脾虚症状,具有明显的保健效果。

Claims (10)
1.一种营养保健大豆蛋白粉,其特征在于,包括以下重量份的原料:大豆蛋白粉60-80份、玉米蛋白粉30-50份、黑豆蛋白粉20-30份、泥鳅粉20-30份、糯米粉10-20份、黑米粉10-20份和酪蛋白复合多肽1-5份。
2.根据权利要求1所述的一种营养保健大豆蛋白粉,其特征在于,包括以下重量份的原料:大豆蛋白粉65-75份、玉米蛋白粉35-45份、黑豆蛋白粉22-28份、泥鳅粉22-28份、糯米粉12-18份、黑米粉12-18份和酪蛋白复合多肽2-4份。
3.根据权利要求2所述的一种营养保健大豆蛋白粉,其特征在于,包括以下重量份的原料:大豆蛋白粉72份、玉米蛋白粉39份、黑豆蛋白粉25份、泥鳅粉25份、糯米粉16份、黑米粉15份和酪蛋白复合多肽3份。
4.根据权利要求1-3任一项所述的一种营养保健大豆蛋白粉,其特征在于,所述黑豆蛋白粉的制备方法具体包括以下步骤:
(1)将黑豆清洗后烘干,加入乙醇溶液进行醇提,过滤后蒸发乙醇,得到提取液,备用;
(2)向醇提过滤后的黑豆中加入水进行磨浆,过滤分离豆渣,得到黑豆豆浆;
(3)将提取液和黑豆豆浆进行混合,超高温瞬时杀菌,喷雾干燥,即得所述黑豆蛋白粉。
5.根据权利要求4所述的一种营养保健大豆蛋白粉,其特征在于,步骤(1)中,所述乙醇溶液的体积浓度为60%-80%,用量为黑豆质量的6-8倍;
所述醇提的时间为1-2h。
6.根据权利要求4所述的一种营养保健大豆蛋白粉,其特征在于,步骤(2)中,所述水的用量为黑豆质量的5-15倍;
步骤(3)中,超高温瞬时杀菌的温度为135-150℃,时间为2-8s。
7.根据权利要求1-3任一项所述的一种营养保健大豆蛋白粉,其特征在于,所述泥鳅粉的制备方法具体包括以下步骤:
(1)先将泥鳅进行清洗处理,然后加入葱、姜和料酒进行腌制,得到腌制泥鳅;
(2)将腌制泥鳅进行烘烤,干燥,粉碎,即得所述泥鳅粉。
8.根据权利要求7所述的一种营养保健大豆蛋白粉,其特征在于,步骤(1)中,所述葱、姜和料酒的用量均为泥鳅质量的1%-2%;所述腌制的时间为2-4h。
9.根据权利要求7所述的一种营养保健大豆蛋白粉,其特征在于,步骤(2)中,所述烘烤的温度为100-200℃,时间为10-20min。
10.一种营养保健大豆蛋白粉的制备方法,其特征在于,具体包括以下步骤:
(1)按权利要求1-9任一项所述营养保健大豆蛋白粉的重量份数称取各原料;
(2)将各原料以100-200r/mim的速度搅拌1-2h至混合均匀,即得所述营养保健大豆蛋白粉。
