TABLE 2 differentiation of amino acid composition of snakehead muscle whether or not the ecological net culture is performed
Figure BDA0002907282460000052
Figure BDA0002907282460000061
Table 2 shows that the water content of the snakeheads after ecological net culture is higher than that of the snakeheads which are not subjected to ecological net culture, and the difference is very obvious; the content of crude protein is higher than that of the snakeheads which are not ecologically and cleanly raised, and the difference is obvious; the content of crude fat is lower than that of the snakeheads which are not ecologically and cleanly cultured, which shows that the fat content of the snakeheads is reduced after the ecological and neat culture, the water content is sufficient, and the protein is high. From the analysis of amino acid composition, the total amount of the amino acids of the two types of the black snakeheads is 17, the content of the essential amino acid and the umami amino acid in the muscles of the black snakeheads after the ecological net culture is totally higher than that of the black snakeheads which are not ecological net culture, and the black snakeheads are more delicious.
Influence of ecological net culture on nutritive value of snakehead muscle
TABLE 3 difference in nutritive value of snakehead whether the ecological culture is clean or not (mg/g N)
Figure BDA0002907282460000062
As can be seen from Table 3, the first and second limiting amino acids were obtained as valine and sulfur-containing amino acids, respectively, based on the northern snakehead muscle AAS score (amino acid score) for the ecological net-cultured group and the non-ecological net-cultured group. The first and second limiting amino acids of CS (chemical score) in the muscles of the ecological net-cultured group and the non-ecological net-cultured group of snakeheads are sulfur-containing amino acid and valine respectively. The EAAI value (essential amino acid index) of the ecological net-cultured group and the non-ecological net-cultured snakehead are respectively 89.23 percent and 87.69 percent. The amino acid score and the essential amino acid index of amino acid in the muscles of the snakeheads are higher in the total body of the ecological net-cultured group than that of the non-ecological net-cultured group, which indicates that the muscle protein of the ecological net-cultured group has higher nutritional value.
Fourth, the influence of whether ecological net culture is carried out or not on the meat structure of snakehead muscles
TABLE 4 texture test results of snakehead muscle by testing whether ecological net culture is performed or not by puncture test
Figure BDA0002907282460000071
The puncture test result (table 4) shows that the hardness, elasticity and rupture strength of the ecological net-cultured snakeheads are higher than those of the ecological net-cultured snakeheads, and the difference is very obvious (p is less than 0.01); the toughness of the ecological net culture group is slightly higher than that of the ecological net culture group.
Fifthly, influence of ecological net culture on flavor substances in snakehead muscle
TABLE 5 differences in flavor substances in the muscle of snakehead fish whether or not the group is ecologically and purely raised

Figure BDA0002907282460000081
Figure BDA0002907282460000091
59 volatile odor substances including 19 aldehydes, 17 alcohols, 8 ketones, 8 olefin alkanes and 7 other substances are detected from the muscle of the ecological net-cultured snakehead fish; 57 volatile odor substances, 27 aldehydes, 11 alcohols, 6 ketones, 8 olefin alkanes and 6 other substances are detected in the muscles of the snakehead without ecological net culture.
Fish fishy smell is heavier than shrimp, and fish with a high fat content may have more fishy smell, and visceral fishy smell may be heavier than muscle smell. The amount of the hexanal detected in the snakeheads after ecological net culture is lower than that of the snakeheads without ecological net culture, which indicates that the fishy smell of the snakeheads can be reduced by the ecological net culture. According to the content of the 1-octene-3-alcohol related to the earthy taste, the earthy taste and the fish smell of the ecological net-cultured snakeheads are both low, and the taste of the ecological net-cultured snakeheads is better.
