背景技术
黑莓也称露莓,蔷薇科,悬钩子属灌木,其果实营养丰富,维生素C含量是蓝莓的两倍,富含人体所必须的各类氨基酸和微量元素,具有促进血液凝固作用、延缓衰老、提高免疫力、促进脑代谢、降压降血脂和抗心律失常等功能,同时黑莓也具有抗癌、壮骨和促进健康细胞分裂等功效,黑莓在我国中药成分统归属于“覆盆子”类,味甘且酸,性温,归肝、肾和膀胱经,《本草通玄》中描述到“覆盆子,甘平入肾,起阳治痿,固精摄溺,强肾而无燥热之偏,固精而无疑涩之害,金玉之品也”。
眼睛是人体最重要的感觉器官之一,90%的外界信息来自眼睛,长时间“聚精会神和目不转睛”对眼睛的危害是极大的,有一双健康明亮的眼睛,是每一个人的愿望,日常对眼睛的呵护也越来越重要,黑莓柔嫩多汁、色泽宜人且口感独特,具有很高的营养价值和药用价值,因而被称为“第三代果树”、“生命果”和“水果之王”,是老少皆宜的果中佳品,而经常摄入高维生素含量的水果,对眼睛大有益处,因此开发黑莓保健饮料具有较好的市场前景,故提出一种护眼功能的黑莓饮料配方及其制备方法以解决上述问题。

(一)解决的技术问题
针对现有技术的不足,本发明提供了一种护眼功能的黑莓饮料配方及其制备方,具备护眼功能的优点,解决了眼睛是人体最重要的感觉器官之一,90%的外界信息来自眼睛,长时间“聚精会神和目不转睛”对眼睛的危害是极大的,有一双健康明亮的眼睛,是每一个人的愿望,日常对眼睛的呵护也越来越重要,黑莓柔嫩多汁、色泽宜人且口感独特,具有很高的营养价值和药用价值,因而被称为“第三代果树”、“生命果”和“水果之王”,是老少皆宜的果中佳品,而经常摄入高维生素含量的水果,对眼睛大有益处,因此开发黑莓保健饮料具有较好的市场前景的问题。
(二)技术方案
为实现上述护眼功能的目的,本发明提供如下技术方案:一种护眼功能的黑莓饮料,包括以下重量份数配比的原料:黑莓40-60份、蓝莓5-20份、树莓5-40份、黑莓籽提取液1.0-10份、蓝莓籽提取液1.0-10份、益生元2-10份、玉米黄质0.01-0.25份、叶黄素0.1-0.5份、蓝莓提取物1-10份、姜黄10-15份、葛根提取物0.1-1.0份、枳椇子提取物0.1-1.0份、菊花提取物0.5-1.5份和枸杞提取物0.5-1.5份。
优选的,所述益生元为低聚半乳糖与低聚果糖按一定比例混合而成,所述低聚半乳糖与低聚果糖的比例为4:1-8:1,低聚半乳糖的添加量为2.0-8.0份。
优选的,所述叶黄素为5%含量规格的微胶囊化的叶黄素,所述玉米黄质为5%含量规格的微胶囊化的玉米黄质,所述叶黄素与玉米黄质的比例为2:1-10:1。
优选的,所述姜黄的姜黄素含量10-15%,并经微胶囊包埋制成。

1)将解冻好的40-60份黑莓、5-20份蓝莓和5-40份树莓分别在50-60℃进行保温10-30min,然后用双道打浆机进行打浆去籽,分别得到黑莓原浆,蓝莓原浆和树莓原浆;
2)将步骤1)中的黑莓原浆、蓝莓原浆、树莓原浆与1.0-10份黑莓籽提取液、1.0-10份蓝莓籽提取液、2-10份益生元、0.01-0.25份玉米黄质、0.1-0.5份叶黄素、1-10份蓝莓提取物、10-15份姜黄、0.1-1.0份葛根提取物、0.1-1.0份枳椇子提取物、0.5-1.5份菊花提取物和0.5-1.5份枸杞提取物在40-60℃下进行混合,调配;
3)将步骤2)调配好的果浆采用真空超声联合脱气;
4)将步骤3)脱气的果浆进行在线高速剪切和高压均质,在线高速剪切时,全程不接触空气,剪切速度1000-6000转/min,高压均质时,均质压力15-40MPa;
5)灌装,然后进行巴氏杀菌,灌装温度70-90℃,杀菌温度85-98℃,杀菌时间5-20min。
优选的,所述黑莓籽提取液和蓝莓籽提取液分别是将黑莓籽和蓝莓籽按1:10-30比例与水混合后,进行超微粉碎破壁,然后向其中添加0.2-2.5%的复合酶(纤维素酶、果胶酶、木聚糖酶和中性蛋白酶),在30-50℃超声酶解提取0.5-2.0h,然后进行离心过滤,经板式换热器进行升温灭酶后,将提取液进行真空浓缩制得,所述调配温度为40-60℃。

该护眼功能的黑莓饮料配方及其制备方,通过添加有黑莓、蓝莓、树莓、黑莓籽提取液、蓝莓籽提取液和蓝莓提取物,确保饮料内有较多的β-胡萝卜素和维生素A的含量,其作用和鱼肝油相似,β-胡萝卜素和维生素A一样,有助于补肝明目,缓解眼睛疲劳,又通过添加有菊花,菊花味甘苦,性耐寒,有散风清热、清肝明目和解毒消炎等作用,配合着添加有枸杞提取物,枸杞含有丰富的胡萝卜素、维生素A1、B1、B2、C等和钙、铁等健康眼睛的必需营养,故擅长明目,所以俗称“明眼子”,历代医家治疗肝血不足和肾阴亏虚引起的视物昏花和夜盲症,常常使用枸杞子,枸杞有提高机体免疫力的作用,可以补气强精、滋补肝肾、抗衰老、止消渴、暖身体和抗肿瘤的功效,使整个饮料的具有很好的护眼效果,通过添加有葛根提取物和枳椇子提取物,枳椇子具有解酒毒、止渴除烦、止呕和利大小便之功效,而葛根提取物有解肌退热、透疹、生津止渴和升阳止泻之功,由通过添加有益生元,有助于营养成分的吸收,另外通过设置果浆采用真空超声联合脱气,相比普通脱气方式,脱气效率更高,果浆产品含氧量更低,对产品品质影响更小。

实施例一:一种护眼功能的黑莓饮料,包括以下重量份数配比的原料:黑莓40份、蓝莓5份、树莓5份、黑莓籽提取液1.0份、蓝莓籽提取液1.0份、益生元2份、玉米黄质0.01份、叶黄素0.1份、蓝莓提取物1份、姜黄10份、葛根提取物0.1份、枳椇子提取物0.1份、菊花提取物0.5份和枸杞提取物0.5份。
益生元为低聚半乳糖与低聚果糖按一定比例混合而成,低聚半乳糖与低聚果糖的比例为4:1,低聚半乳糖的添加量为2.0份。
叶黄素为5%含量规格的微胶囊化的叶黄素,玉米黄质为5%含量规格的微胶囊化的玉米黄质,叶黄素与玉米黄质的比例为2:1。
姜黄的姜黄素含量10%,并经微胶囊包埋制成。

实施例二:一种护眼功能的黑莓饮料,包括以下重量份数配比的原料:黑莓60份、蓝莓20份、树莓40份、黑莓籽提取液10份、蓝莓籽提取液10份、益生元10份、玉米黄质0.25份、叶黄素0.5份、蓝莓提取物10份、姜黄15份、葛根提取物1.0份、枳椇子提取物1.0份、菊花提取物1.5份和枸杞提取物1.5份。
益生元为低聚半乳糖与低聚果糖按一定比例混合而成,低聚半乳糖与低聚果糖的比例为8:1,低聚半乳糖的添加量为8.0份。
叶黄素为5%含量规格的微胶囊化的叶黄素,玉米黄质为5%含量规格的微胶囊化的玉米黄质,叶黄素与玉米黄质的比例为10:1。
姜黄的姜黄素含量15%,并经微胶囊包埋制成。
葛根提取物、枳椇子提取物、菊花提取物和枸杞提取物用反渗透水进行低温萃取48h,然后经真空浓缩,冷冻干燥制得。
本发明要解决的另一技术问题是一种护眼功能的黑莓饮料的制备方法,包括以下步骤:
1)将解冻好的60份黑莓、20份蓝莓和40份树莓分别在60℃进行保温30min,然后用双道打浆机进行打浆去籽,分别得到黑莓原浆,蓝莓原浆和树莓原浆;
2)将步骤1)中的黑莓原浆、蓝莓原浆、树莓原浆与10份黑莓籽提取液、10份蓝莓籽提取液、10份益生元、0.25份玉米黄质、0.5份叶黄素、10份蓝莓提取物、15份姜黄、1.0份葛根提取物、1.0份枳椇子提取物、1.5份菊花提取物和1.5份枸杞提取物在60℃下进行混合,调配;
3)将步骤2)调配好的果浆采用真空超声联合脱气;
4)将步骤3)脱气的果浆进行在线高速剪切和高压均质,在线高速剪切时,全程不接触空气,剪切速度6000转/min,高压均质时,均质压力40MPa;
5)灌装,然后进行巴氏杀菌,灌装温度90℃,杀菌温度98℃,杀菌时间20min。
黑莓籽提取液和蓝莓籽提取液分别是将黑莓籽和蓝莓籽按1:30比例与水混合后,进行超微粉碎破壁,然后向其中添加2.5%的复合酶(纤维素酶、果胶酶、木聚糖酶和中性蛋白酶),在50℃超声酶解提取2.0h,然后进行离心过滤,经板式换热器进行升温灭酶后,将提取液进行真空浓缩制得,调配温度为60℃。
实施例三:黑莓50份、蓝莓12.5份、树莓22.5份、黑莓籽提取液5.5份、蓝莓籽提取液5.5份、益生元6份、玉米黄质0.13份、叶黄素0.3份、蓝莓提取物5.5份、姜黄12.5份、葛根提取物0.55份、枳椇子提取物0.55份、菊花提取物1份和枸杞提取物1份。
益生元为低聚半乳糖与低聚果糖按一定比例混合而成,低聚半乳糖与低聚果糖的比例为6:1,低聚半乳糖的添加量为5份。
叶黄素为5%含量规格的微胶囊化的叶黄素,玉米黄质为5%含量规格的微胶囊化的玉米黄质,叶黄素与玉米黄质的比例为6:1。
姜黄的姜黄素含量12.5%,并经微胶囊包埋制成。
葛根提取物、枳椇子提取物、菊花提取物和枸杞提取物用反渗透水进行低温萃取48h,然后经真空浓缩,冷冻干燥制得。

1)将解冻好的50份黑莓、12.5份蓝莓和22.5份树莓分别在55℃进行保温20min,然后用双道打浆机进行打浆去籽,分别得到黑莓原浆,蓝莓原浆和树莓原浆;
2)将步骤1)中的黑莓原浆、蓝莓原浆、树莓原浆与5.5份黑莓籽提取液、5.5份蓝莓籽提取液、6份益生元、0.13份玉米黄质、0.3份叶黄素、5.5份蓝莓提取物、12.5份姜黄、0.55份葛根提取物、0.55份枳椇子提取物、1份菊花提取物和1份枸杞提取物在50℃下进行混合,调配;
3)将步骤2)调配好的果浆采用真空超声联合脱气;
4)将步骤3)脱气的果浆进行在线高速剪切和高压均质,在线高速剪切时,全程不接触空气,剪切速度3500转/min,高压均质时,均质压力27.5MPa;
5)灌装,然后进行巴氏杀菌,灌装温度80℃,杀菌温度92℃,杀菌时间17.5min。
黑莓籽提取液和蓝莓籽提取液分别是将黑莓籽和蓝莓籽按1:20比例与水混合后,进行超微粉碎破壁,然后向其中添加0.22%的复合酶(纤维素酶、果胶酶、木聚糖酶和中性蛋白酶),在40℃超声酶解提取1.25h,然后进行离心过滤,经板式换热器进行升温灭酶后,将提取液进行真空浓缩制得,调配温度为50℃。

6.根据权利要求1所述的一种护眼功能的黑莓饮料,其特征在于,包括以下重量份数配比的原料:黑莓40份、蓝莓5份、树莓5份、黑莓籽提取液1.0份、蓝莓籽提取液1.0份、益生元2份、玉米黄质0.01份、叶黄素0.1份、蓝莓提取物1份、姜黄10份、葛根提取物0.1份、枳椇子提取物0.1份、菊花提取物0.5份和枸杞提取物0.5份。
7.根据权利要求1所述的一种护眼功能的黑莓饮料,其特征在于,包括以下重量份数配比的原料:黑莓60份、蓝莓20份、树莓40份、黑莓籽提取液10份、蓝莓籽提取液10份、益生元10份、玉米黄质0.25份、叶黄素0.5份、蓝莓提取物10份、姜黄15份、葛根提取物1.0份、枳椇子提取物1.0份、菊花提取物1.5份和枸杞提取物1.5份。
8.根据权利要求1所述的一种护眼功能的黑莓饮料,其特征在于,包括以下重量份数配比的原料:黑莓50份、蓝莓12.5份、树莓22.5份、黑莓籽提取液5.5份、蓝莓籽提取液5.5份、益生元6份、玉米黄质0.13份、叶黄素0.3份、蓝莓提取物5.5份、姜黄12.5份、葛根提取物0.55份、枳椇子提取物0.55份、菊花提取物1份和枸杞提取物1份。
9.一种护眼功能的黑莓饮料的制备方法,其特征在于,包括以下步骤:
1)将解冻好的40-60份黑莓、5-20份蓝莓和5-40份树莓分别在50-60℃进行保温10-30min,然后用双道打浆机进行打浆去籽,分别得到黑莓原浆,蓝莓原浆和树莓原浆;
2)将步骤1)中的黑莓原浆、蓝莓原浆、树莓原浆与1.0-10份黑莓籽提取液、1.0-10份蓝莓籽提取液、2-10份益生元、0.01-0.25份玉米黄质、0.1-0.5份叶黄素、1-10份蓝莓提取物、10-15份姜黄、0.1-1.0份葛根提取物、0.1-1.0份枳椇子提取物、0.5-1.5份菊花提取物和0.5-1.5份枸杞提取物在40-60℃下进行混合,调配;
3)将步骤2)调配好的果浆采用真空超声联合脱气;
4)将步骤3)脱气的果浆进行在线高速剪切和高压均质,在线高速剪切时,全程不接触空气,剪切速度1000-6000转/min,高压均质时,均质压力15-40MPa;
5)灌装,然后进行巴氏杀菌,灌装温度70-90℃,杀菌温度85-98℃,杀菌时间5-20min。
10.根据权利要求9所述的一种护眼功能的黑莓饮料的制备方法,其特征在于,所述黑莓籽提取液和蓝莓籽提取液分别是将黑莓籽和蓝莓籽按1:10-30比例与水混合后,进行超微粉碎破壁,然后向其中添加0.2-2.5%的复合酶(纤维素酶、果胶酶、木聚糖酶和中性蛋白酶),在30-50℃超声酶解提取0.5-2.0h,然后进行离心过滤,经板式换热器进行升温灭酶后,将提取液进行真空浓缩制得,所述调配温度为40-60℃。
