Abstract
本发明公开了一种富硒魔芋食品,由如下质量份数的原料组成,30‑50重量份的魔芋精粉、10‑30重量份木薯粉、10‑20重量份玉米淀粉、10‑15重量份薏米粉,硒源5‑10份,调味剂5‑10份,食品添加剂5‑10份。本发明所述的富硒魔芋食品采用了有机硒和无机硒相互配合补充,有机硒价格昂贵但是吸收效果好,无机硒价格很便宜,但是吸收差,因此将两者配合使用,低浓度的无机硒吸收效果明显提升,再补充一定量的有机硒,达到人体所需含量。在保证价格不会太高的同时,补充了人体所需的硒元素。另外魔芋本身每千克含350μg硒元素,大大超过普通食品,且为优质的有机结合硒,也可以进一步的降低硒添加剂的含量,降低成本。

技术领域
本发明属于食品领域,具体涉及一种富硒魔芋食品及其制备方法。
背景技术
随着生活水平的提升,人们越来越重视健康问题,而营养问题又是其中的重中之重。市场上也出现了各类营养补充产品。
硒元素作为重要的微量与人体健康息息相关,主要有如下功能:
抗癌之王
科学界研究发现,血硒水平的高低与癌的发生息息相关,大量的调查资料说明,一个地区食物和土壤中硒含量的高低与癌症的发病率有直接关系。
硒是迄今为止发现的最重要的抗衰老元素;
广西巴马县是世界著名四大长寿地区之一。中国科学院专家对巴马的研究表明:巴马土壤、谷物中的硒含量高于全国平均水平10倍以上,百岁老人血液中的硒含量高出正常人的3-6倍。后来在安徽省石台县又发现一个长寿村。80岁以上老人占全村人口的12%。更为奇特的是50年来未发现一例癌症患者、心脑血管、糖尿病患者和肥胖患者。经对该村土壤中硒含量分析测定表明:硒含量高出一般地方10倍。原来,硒元素是抗氧化剂谷胱甘肽过氧化物酶的活性成分,人体补充了充足的硒元素,就能有效清除自由基,抗氧化,延缓衰老。
明亮的使者
生物学家们经过长期的研究发现:硒对视觉器官的功能是极为重要的。硒能催化并消除对眼睛有害的自由基物质,从而保护眼睛的细胞膜。若人眼长期处于缺硒状态,就会影响细胞膜的完整,从而导致视力下降和许多眼疾病如白内障、视网膜病、夜盲症等的发生。一些大城市的医院对眼病患者已开展硒治疗,临床表明,硒对提高视力确有明显的作用,能治疗白内障、视网膜病等多种眼疾。
心脏的守护神
硒是维持心脏正常功能的重要元素,对心脏肌体有保护和修复的作用。人体血硒水平的降低,会导致体内清除自由基的功能减退,造成有害物质沉积增多,血压升高、血管壁变厚、血管弹性降低、血流速度变慢,送氧功能下降,从而诱发心脑血管疾病的发病率升高,然而科学补硒对预防心脑血管疾病、高血压、动脉硬化等都有较好的作用。
肝病的天敌
位于长江三角洲的江苏启东地区是鱼米之乡,经济发达,但是长期以来这里的人们肝癌、肝炎发病率极高,发病原因不清楚。中国预防医学科学院的专家们经16年研究终于找出原因,原来这里的水、土壤、粮食中缺少元素“硒”,生活在这里的人们从水和粮食中获取的硒很少,体内硒含量特别低,而体内缺硒的人易被肝炎病毒传染。此外,体内长期缺硒的肝炎患者转化为肝癌病人的危险是其它人群的202倍,特别值得一提的是:硒可以使肝炎病人的病情好转,使肝炎病人发生癌症的比例大大降低。专家们表示:即使在不缺硒的周边地区,人们适量补充硒元素对预防肝癌、肝炎也是大有益处的。
天然胰岛素
硒是构成谷胱甘肽过氧化物酶的活性成分,它能防止胰岛β细胞氧化破坏,使其功能正常,促进糖份代谢、降低血糖和尿糖。医生通过让糖尿病人定量服硒,可以起到保护和恢复胰岛功能的作用,有利于改善糖尿病的症状,降低尿中的葡萄糖和血红蛋白水平。所以,有人称硒是微量元素中的“胰岛素”。
解毒排毒
硒与金属的结合力很强,能抵抗镉对肾、生殖腺和中枢神经的毒害。硒与体内的汞、锡、铊、铅等重金属结合,形成金属硒蛋白复合而解毒、排毒。因此经常接触有毒有害工作的人群,尤其需要注意补硒。另外,在工作环境中或生活中,经常接触电视、电脑、手机等辐射干扰的人,要补硒,因为补硒可以保护造血系统,最大限制地减少辐射伤害。
抗氧化防衰老
硒的重要营养生理作用是参与机体谷胱甘肽氧化酶(gluthathione peroxidase,GSH-PX)的组成,是GSH-PX的活性中心元素,其抗氧化作用也是通过谷胱甘肽氧化酶实现的。GSH-PX对机体氢或脂的过氧化物具有较强的还原作用,催化还原性谷胱甘肽(GSH)把体内有害的不饱和氢过氧化物(ROOH)还原为无害的羟基化合物,并使过氧化氢(H202)分解,从而保护细胞膜结构的完整。刘纯仁(1996)报道:体内缺硒可使动物体内谷胱甘肽过氧化物酶活性降低,导致组织体过氧化物不能及时分解而对组织发生损害,而补硒后其酶活性增高。
男人的黄金
研究表明,硒是GSH-PX中起氧化还原催化作用的仅有原子,存在于多肽链上的硒代半胱氨酸是酶的催化部分,其中硒氢基(-SeH)代表酶的活性还原形式。硒作为GSH-PX重要组成成分和活性中心,其功能保护细胞膜免受过氧化物的侵害,使细胞解离率降低,从而维护细胞正常生理功能,Allen等(1995)报道,当日粮种硒水平较低或最适时,血液和器官中的硒水平和谷胱甘肽氧化物酶活性间呈强相关
硒在男性组织体液中含量依次为:肾〉肝脏〉睾丸〉心肌〉肠〉肺〉脑、肌肉。男性体内的硒,有25%-40%集中在生殖系统,硒具有增强精子活力和性机能的功效。所以人们称硒为男性的体内黄金。糖尿病患者、心脏病患者、肝病患者和泌尿系统都有不同程度的性功能衰退,补硒可以调节免疫功能和抗氧化功能,硒能提高与改善性功能,帮助有阳痿、早泄、性功能低下的人逐渐回复正常。
研究还发现,妇女流产和无法解释的不孕与精子水平低下有关。美国最近的调查显示,妇女自发性流产的危险性与体内硒水平低下有关。在过去几年里,研究者己证实了两种精子特异硒蛋白。一种是对精子核特异性的GSH-Px,另一种是在精子中部发现的,具有酶和结构的功能。精子不游动是由于其中部受损而引起的(例如精子断尾)。缺硒会引起睾丸发育受阻,当低繁殖力的男子服用有机硒3个月,成为父亲的比率提高了11%。
除了这些功能,硒元素还能提高细胞活性,并参与众多重要生理活动。因此补充硒元素是十分必要的,而市场上的补充剂往往是纯粹的补充剂,不仅口感味道不好,而且服用没有控制量可能会引起中毒。
正因为大量的硒元素会引起中毒,所以补充剂使用起来有较大风险,因此发明一种调配好含量的成熟产品来作为日常的硒元素补充剂。
同时相应的发明一种所述成熟产品的制备方法也是十分必要的。
发明内容
本发明的目的在于克服现有技术的所述不足,提供一种富硒魔芋食品及其制备方法,已解决现有的硒元素补充产品无法兼顾价格与补充效果的技术问题。
为了实现所述发明目的,本发明一方面提供了一种富硒魔芋食品,由如下质量份数的原料组成,30-50重量份的魔芋精粉、10-30重量份木薯粉、10-20重量份玉米淀粉、10-15重量份薏米粉,硒源5-10份,调味剂5-10份,食品添加剂5-10份。
优选地,所述硒源包括无机硒源和有机硒源中的至少一种。
进一步优选地,所述无机硒源包括亚硒酸钠和硒酸钠中的至少一种。
进一步优选地,所述有机硒源包括富硒酵母、硒化卡拉胶、硒蛋白中的至少一种。
优选地,所述调味剂包括盐,辣椒粉,花椒粉,胡椒粉,酱油,味精,卤汁中的至少一种。
优选地,所述食品添加剂包括抗氧化剂,防腐剂中的至少一种。
本发明另一方面提供了所述的富硒魔芋食品的制备方法,包括如下步骤:
称取配方量的各原料,加入热水中;
将各组分充分混合并高温煮熟;
对煮熟后的产品进行形态加工;
冷却脱水定型;
灭菌处理并包装。
优选地,所述混合方式包括超声,振摇,高速搅拌,匀质中的至少一种。
优选地,所述形态加工包括模具塑形,挤压拉伸,剪切中的至少一种。
优选地,所述灭菌处理为将所述富硒魔芋食品高温灭菌1-2小时。

本发明所述的富硒魔芋食品的制备方法,采用高温膨化的方法,对所述魔芋食品进行深度加工有效除去其本身的异味,保留其营养,同时还添加了很多其他杂粮,保证其定型效果的同时增加其营养的丰富程度。最后加入调味剂和硒源调节味道,完善功能,本工艺工艺简单易行,且成本控制良好,适合大规模推广。

具体实施方式
为了使本发明要解决的技术问题、技术方案及有益效果更加清楚明白,以下结合实施例,对本发明进行进一步详细说明。应当理解,此处所描述的具体实施例仅仅用以解释本发明,并不用于限定本发明。
一方面,本发明实施例提供一种富硒魔芋食品,富硒魔芋食品,由如下质量份数的原料组成,30-50重量份的魔芋精粉、10-30重量份木薯粉、10-20重量份玉米淀粉、10-15重量份薏米粉,硒源5-10份,调味剂5-10份,食品添加剂5-10份。
其中硒源是功能成分,起到补充硒元素的作用,另外魔芋本身也含有丰富的优质结合有机硒,因此可以补充硒元素。且通过有效的优化,还能进一步提升魔芋中的硒元素含量。具体的,可以在魔芋生长过程中施加富含硒元素的肥料,并根据生长周期和生长规律调配浓度梯度,使得魔芋中的硒元素高于一般普通魔芋。进一步提升其优质结合有机硒元素丰度,降低添加的硒元素的用量。其余的主料可以参与定型,让魔芋粉更容易成型,另外还可以通过加入多种粗粮改善其营养价值。最后加入调味剂,使得所述富硒魔芋食品具备更好的口感。
在优选实施例中,所述硒源包括无机硒源和有机硒源中的至少一种。两种硒源组合起来可以兼顾价格和功能。
进一步优选实施例中,所述无机硒源包括亚硒酸钠和硒酸钠中的至少一种。这两种是最常见的硒源,价态合适,且溶解性好,原料易得,价格低廉。
进一步优选实施例中,所述有机硒源包括富硒酵母、硒化卡拉胶、硒蛋白中的至少一种。这些有机硒是最常见的品种,生物体吸收起来更容易,但是价格高昂。
无机硒源的优势在于价格低廉,有机硒源的优势在于便于吸收,这里可以通过合理调配,部分用无机硒源,部分用有机硒源,达到控制成本同时兼顾功效的目的。更具体的,人体吸收营养成分时,吸收的有效性和物质浓度有关,通过两种硒源的组合,降低了单一组分浓度,增加了单一组分吸收利用率,另外,通过两种组合的方式,不同渠道吸收,不会挤占同一吸收渠道,也可以增加吸收利用率,而且有机硒源的吸收利用率本就更高,所以也会一定程度降低总的硒元素的浓度。进一步的魔芋中的硒元素含量也很高,且优质易吸收,可以进一步提升吸收利用率,且可以降低添加的硒元素的量。最终,多种因素综合起来提升了硒元素的吸收利用率,同时也在保证吸收利用率的基础上较大限度的降低了产品价格。
在一优选实施例中,所述调味剂包括盐,辣椒粉,花椒粉,胡椒粉,酱油,味精,卤汁中的至少一种。
在一优选实施例中,所述食品添加剂包括抗氧化剂,防腐剂中的至少一种。由于硒源和富硒魔芋食品中都有一些还原性物质,如果被氧化,则会让营养物质失去其功效,因此可以加入一定的氧化剂,同时还需要加入防腐剂,来让保质期增加,来实现商业化的大规模生产。
本发明实施例所述的富硒魔芋食品,核心是通过无机硒和有机硒的配合,在达成功能的前提下降低生产成本。另外通过果汁,添加剂来制作成成熟的商用饮料,满足大众不同层次的需求。硒元素具备抗氧化,抗癌,抗衰老功能。研究表明,氧自由基的形成与衰老,癌症等诸多健康问题相关,体内过多的氧自由基会造成DNA损伤,细胞老化等后果。而硒元素是一种还原性很强的元素,适量的硒元素可以有效的还原掉体内过量的氧自由基,从而避免氧化衰老,DNA损伤等一系列问题,达到抗氧化,抗衰老,抗癌的功效。同时硒元素参与很多生理反应,具备明目,护肝,护心,强肾解毒排毒等一系列功效。加上本产品对口感,咀嚼感的强化,可以让食用者毫无负担的达成养护目的。
本发明另一方面提供了所述的富硒魔芋食品的制备方法,如图1所示,包括如下步骤:
S01:称取配方量的各原料,加入热水中;
S02:将各组分充分混合并高温煮熟;
S03:对煮熟后的产品进行形态加工;
S04:冷却脱水定型;
S05:灭菌处理并包装。
具体的在所述步骤S02中,所述混合方式包括超声,振摇,高速搅拌匀质中的至少一种。具体的操作,在小型的配置中可以采用振摇的操作,辅以超声达成混合的目的。在大型生产中可以采用匀质机来辅助调制。而在高温煮熟的过程中需要高速搅拌来配合,使得加热过程受热更均匀,得到的产品品质也更均一。
具体的在步骤S03中,所述形态加工包括模具塑形,挤压拉伸,剪切中的至少一种。可以通过模具将魔芋食品制成条状,片状,颗粒状等多种形态,中间会需要一些挤压拉伸的过程。
具体的在步骤S04中,所述脱水可以采用烘干机快速脱水。
具体的在步骤S05中,所述灭菌处理为将所述富硒魔芋食品高温灭菌1-2小时。在生产的过程中,难免会有一些微生物,因此杀菌过程是必须的,对于固体食品,高温灭菌效果最好,也更彻底,且固体食品不容易在高温下坏掉,也适合高温灭菌。
本发明实施例所述的富硒魔芋食品的制备方法都是常规操作。
现结合具体实例,对本发明进行进一步详细说明。

香辣味富硒魔芋食品的制备
S01:称取50重量份的魔芋精粉、10重量份木薯粉、10重量份玉米淀粉、15重量份薏米粉,硒酸钠5份,富硒酵母2份,辣椒粉2份,味精0.3份,胡椒粉1份,盐3份,酱油1份,、BHT(二丁基羟基甲苯)1份,TBHQ(特丁基对苯二酚)1份,苯甲酸钠5份,加入热水中1200份;
S02:将各组分在匀质机中充分混合,并在高速搅拌下高温煮熟,温度控制在200-300度;
S03:对煮熟后的产品进行模具定型,并进一步裁剪成更小的条状片状;
S04:冷却后用烘干机脱水定型;
S05:高温灭菌处理并包装。
实施例2
麻辣味富硒魔芋食品的制备
S01:称取30重量份的魔芋精粉、15重量份木薯粉、20重量份玉米淀粉、30重量份薏米粉,亚硒酸钠3份,硒酸钠3份,硒蛋白1份,辣椒粉2份,花椒粉2份,盐3份,味精0.3份,酱油1份,TBHQ(特丁基对苯二酚)1份,没食子酸酯1份,苯甲酸钠5份,加入热水中1000份;
S02:将各组分在匀质机中充分混合,并在高速搅拌下高温煮熟,温度控制在200-300度;
S03:对煮熟后的产品进行模具定型,并进一步裁剪成更小的条状片状;
S04:冷却后用烘干机脱水定型;
S05:高温灭菌处理并包装。
实施例3
卤香味富硒魔芋食品
S01:称取40重量份的魔芋精粉、20重量份木薯粉、10重量份玉米淀粉、15重量份薏米粉,硒酸钠3份,硒化卡拉胶1份,卤汁5份,盐3份,味精0.3份,酱油1份,BHA(丁基羟基茴香醚)1份,苯甲酸钠5份,加入热水中1500份;
S02:将各组分在匀质机中充分混合,并在高速搅拌下高温煮熟,温度控制在200-300度;
S03:对煮熟后的产品进行模具定型,并进一步裁剪成更小的条状片状;
S04:冷却后用烘干机脱水定型;
S05:高温灭菌处理并包装。
所述富硒魔芋食品的食用方式为,加热水泡发6-10分钟即可食用。本产品还配备调料包,可以根据口味添加。

Claims (10)
1.一种富硒魔芋食品,其特征在于,由如下质量份数的原料组成,30-50重量份的魔芋精粉、10-30重量份木薯粉、10-20重量份玉米淀粉、10-15重量份薏米粉,硒源5-10份,调味剂5-10份,食品添加剂5-10份。
2.如权利要求1所述的富硒魔芋食品,其特征在于,所述硒源包括无机硒源和有机硒源中的至少一种。
3.如权利要求2所述的富硒魔芋食品,其特征在于,所述无机硒源包括亚硒酸钠和硒酸钠中的至少一种。
4.如权利要求2所述的富硒魔芋食品,其特征在于,所述有机硒源包括富硒酵母、硒化卡拉胶、硒蛋白中的至少一种。
5.如权利要求1所述的富硒魔芋食品,其特征在于,所述调味剂包括盐,辣椒粉,花椒粉,胡椒粉,酱油,味精,卤汁中的至少一种。
6.如权利要求1所述的富硒魔芋食品,其特征在于,所述食品添加剂包括抗氧化剂,防腐剂中的至少一种。
7.一种如权利要求1-6任一所述的富硒魔芋食品的制备方法,其特征在于,包括如下步骤:
称取配方量的各原料,加入热水中;
将各组分充分混合并高温煮熟;
对煮熟后的产品进行形态加工;
冷却脱水定型;
灭菌处理并包装。
8.如权利要求7所述的富硒魔芋食品的制备方法,其特征在于,所述混合方式包括超声,振摇,高速搅拌,匀质中的至少一种。
9.如权利要求7所述的富硒魔芋食品的制备方法,其特征在于,所述形态加工包括模具塑形,挤压拉伸,剪切中的至少一种。
10.如权利要求7所述的富硒魔芋食品的制备方法,其特征在于,所述灭菌处理为将所述富硒魔芋食品高温灭菌1-2小时。
