本品的研发着眼于解决人们的饮食弊端,以膳食营养学为指导科学配比、合适的生产工艺,为人们提供方便食用的代餐食品。
发明内容
本发明的目的是要在配方上,制备技术上为人们提供可持续适量摄入坚果、干果、谷物的微量元素营养,冲调性能好、口感好、食用饱腹感强、方便储存、食用的坚果谷物代餐食品。
一种益气养血滋肾养肝的坚果藕粉粥,其特征在于由以下原料:核桃、花生、腰果、葵花籽、蔓越莓、提子干、红枣、枸杞子、无花果、藕、魔芋、黑芝麻、燕麦、多晶体冰糖 (白砂糖)经合理工艺制备成配料组成,由如下重量份的配料制成:核桃仁10-15份、花生仁10-15份、腰果仁7-12份、葵花籽仁7-12份、蔓越莓干5-10份、提子干5-8份、红枣颗粒 5-8份、枸杞子5-8份、无花果干5-10份、藕粉50-80份、魔芋粉15-25份、黑芝麻7-12份、燕麦片10-20份、小麦胚芽粉5-8份、多晶体冰糖(或白砂糖)2-20份。
所述的一种益气养血滋肾养肝的坚果藕粉粥,各个原料加工成产品配料的基本工艺如下:核桃去壳、破碎加工成核桃碎,花生去壳、烘焙熟化进行破碎加工成花生碎,腰果烘焙熟化进行破碎加工成腰果碎,葵花籽进行蒸煮杀虫灭菌、脱壳,蔓越莓干除核切粒,提子干除籽去蒂,红枣干去核切粒,枸杞子紫外线杀菌杀虫,无花果切片切粒并干燥,藕进行加压蒸煮,干燥后粉碎成藕粉,魔芋进行加压蒸煮,干燥后粉碎成魔芋粉,黑芝麻经设定140℃旋转烘焙机,爆香熟化,燕麦进行高温水热处理后,籽粒切割,高温热压成燕麦片,多晶体冰糖(或白砂糖)经粉碎成细粉料。
将制备的各个配料充分混合均匀,定量包装制成产品。食用产品用热水冲调,因为藕粉、魔芋粉混合众多不规则形状的坚果种仁碎和干果片,有这些坚果种仁碎和干果片疏水通气,热水很容易达到谷物粉内部,让谷物粉不会包裹空气,出现结团想象,达到方便冲泡的功能。冲调好的产品,藕粉、魔芋粉形成乳白明胶状羹糊,夹杂着红色的红枣颗粒,绿色的无花果干、黄色的坚果碎、黑色的黑芝麻、还点缀着几颗鲜红的枸杞子,着实好看,坚果的香味和黑芝麻的香气也扑鼻而来,令人胃口大开,吃一口,明胶状的藕粉羹带来的顺滑口感与各种坚果种仁干果碎带来的嚼头体验相得益彰。
本发明提出的一种益气养血滋肾养肝的坚果藕粉粥的具体制备方法,包括以下步骤:
一、原料预处理
1、将优选的核桃去壳取肉,然后破碎成30-150mm3不规则形状的核桃碎;花生仁压扁后入旋转烘焙机,以110℃旋转烘焙熟化后破碎成30-130mm3不规则形状的花生碎;腰果以低温烘焙熟化后破碎30-130mm3不规则的腰果碎;葵花籽经高温气蒸,然后入烘焙机,低温烘焙脱水,去壳后制成葵花籽仁,分别存放备用。
2、将优选的蔓越莓干、提子干、红枣干、无花果干、枸杞子,原料分别经清洗除杂 -微波干燥-紫外线杀菌灭虫处理,按要求制成干果粒,分别存放,备用。制成的蔓越莓干配料为去籽后的大约五分之一果粒切片,含水率为10%左右;制成的提子干配料为去籽后切碎成30-150mm3不规则形状的果粒碎含水率为8%左右;制成的红枣颗粒为去核后切碎成 30-150mm3不规则形状的果粒碎,含水率为8%左右;制成无花果干配料为30-150mm3不规则形状的果粒碎,含水率8%左右;制成的枸杞子配料为整个果粒,含水率为8%左右。
3、将优选的藕、魔芋、小麦胚芽分别经清洗-加压蒸煮-微波干燥-粉碎,用超细粉碎机粉碎,过100-300目筛,得细粉料,分别存放,备用。
4、将优选的黑芝麻经清洗、干燥、入旋转烘焙机烘焙,温度设定为140℃,转动烘焙时间为15-20min,激发黑芝麻最多香气,然后存放,备用。
5、将优选的燕麦经脱壳-水热处理-籽粒切割-高温压片制成燕麦片,存放,备用。
6、将优选的多晶体冰糖或白砂糖,经粉碎机粉碎过100-300目筛,得细粉料,存放、备用。
二、配料混合的配制
将步骤(一)中所得的配料,按重量份数配比:核桃仁10-15份、花生仁10-15份、腰果仁7-12份、葵花籽仁7-12份、蔓越莓干5-10份、提子干5-8份、红枣颗粒5-8份、枸杞子5-8份、无花果干5-10份、藕粉50-80份、魔芋粉15-25份、黑芝麻7-12份、燕麦片10-20 份、小麦胚芽粉5-8份、多晶体冰糖(或白砂糖)2-20份的配比比例进行混合放入高速混合机中以200-300r/min的转速,搅拌15-30min,混合均匀。
三、产品的制备
将步骤(二)中所得的混合制品进行远外红外线杀菌方式或高温瞬间杀菌方式中的一种进行杀菌处理,然后进行定量装袋密封包装或罐体密封包装,检查合格即产品制备完成。
以本发明制备的产品具有如下优点:
1、主配料之一:藕,有如下养生保健作用:
(1)益血生肌补虚。藕的营养价值很高,鲜藕含丰富植物蛋白质,淀粉、钙、磷、铁、多种维(以维生素(含量特别多),有明显补益气血,增强人体免疫机能作用。藕含丰富铁质,故对贫血者颇宜。若将老藕制成藕粉,极易消化吸收,宜一切虚弱者。《本草纲目》:“藕可益心肾,厚肠胃、固精气、强筋骨、补虚损、利耳目、除寒湿、止脾泻。”
(2)清热凉血。藕味甘性寒入血分、生食清热生津不滑腻、凉血止血不留瘀,可用治热性病;味甘多液,对热病口渴、衄血、咯血、下血者尤为有益。热者甘温、能健脾开胃、益血补心、故主补五脏、实下焦、消食、止泄、生肌。
(3)止血散瘀。藕含大量丹宁酸,有收敛性,能收缩血管,可止血。《日用本草》:“清热除烦。凡呕血、吐血、瘀血、败血,一切血症宜食之。”

2、产品配料之一:魔芋,有如下养生保健作用:
(1)抗癌祛肿、抑菌消炎。魔芋所含药翦甘露糖酐对门癌,结肠癌等癌细胞代谢有干扰作用,可化痰软坚。散肿解毒:其热水提取物对肉瘤5-180抑制率达49.8%。主治肿块,痰核、瘰疬等,能防治癌瘤,还对白血病细胞有抑制作用。
(2)充饥减肥、降胆固醇。防治糖尿病、肥胖症。魔芋是低热食品,其葡萄甘露聚糖为黏性最大的食物纤维,吸水膨胀可增大30-100倍,能延缓胃排空,食后有饱腹感。使进食量下降,可减少并延缓葡萄糖吸收,提高胰岛素敏感度。降低糖耐量:刺激肝细胞加速糖酵解,增加葡萄糖利用:降低血液循环中游离脂肪水平减缓,阻止胆固醇吸收。
(3)活血代瘀。魔芋性味辛温,能推动血行,防止瘀肿。

3、配料之一:核桃。有如下养生保健作用:
(1)强壮身体。核桃仁营养丰富,食用含胡桃油的混合脂肪饮食,可提供营养,增加体重。血清蛋白水平,而且胆固醇水平升高却较慢,这促进生长发育,提高机体的抵抗力有重要意义,是难得的高脂肪性补养品。
(3)降低胆固醇。核桃仁能减少肠道对胆固醇的吸收,影响胆固醇的体内合成,氧化、排泄、溶解、降低血中胆固醇,排除血管壁内的“污垢杂志”,净化血液,提供更好的鲜血液,故可防治动脉硬化,降低胆固醇。

(1)补充营养,增强机体免疫力。无花果含大量糖类、脂类、蛋白蛋、纤维素、维生素、无机盐、人体必需氨基酸等。可有效补充营养,提高机体免疫细胞活力,增强机体抗病能力。
(2)健脾消食,润肠通便。无花果含苹果酸、柠檬酸、脂肪酶、蛋白酶、水解酶等,能促消化、增食欲、含多种脂类,可润肠通便。
(3)降脂降压。无花果所含脂肪酶,水解酶等可降低。分解血脂,减少脂肪在血管内的沉积,降血压,预防冠心病。
(4)润喉利咽,抗炎消肿。无花果所含柠檬酸、延胡索酸、琥珀酸、苹果酸、丙二酸、草酸、奎宁酸等可抗炎消肿利咽。
(5)防治肿瘤。无花果的抗癌功能来自各种内物质的综合作用。未成熟果实的乳浆含补骨脂素、佛相内酶等活性成分。其成熟果实的果汁中可提取一种芳香物质“笨甲醛”,两者都是防治肿瘤的作用,可预防肝癌、肺癌、胃癌的发生。能抑制移植性肉瘤、自发性乳癌,缓移植性腺癌、白血病、淋巴肉瘤的发展或使之退化。
5、产品配料之一:腰果。腰果营养十分丰富,含脂肪高达47%,蛋白质21.2%,碳水化含物22.3%。尚含A、B、B2等多种维生素和矿物质,特别是其中的锰、铬、镁、硒等微量元素较多,还含有丰富的氨基酸,具有抗氧化、防衰老、抗肿瘤和抗心血管病的作用。

一种益气养血滋肾养肝坚果藕粉冲调羹。采用的原料有:核桃、花生、腰果,原料经过合理加工成配料,产品包括以下重量份配料:核桃碎10份、花生碎10份、腰果碎8份、葵花子仁8份、蔓越莓干7份、提子干6份、红枣颗粒6份、枸杞子6份、无花果6份、藕粉50份、魔芋粉15份、黑芝麻8份、燕麦片9份、小麦胚芽4份、多晶体冰糖(或白砂糖) 8份。

2.根据权利要求1所述的一种益气养血滋肾养肝的坚果藕粉粥配方,其特征在于包括以下重量份的原料:核桃碎8-12份、花生碎8-12份、腰果碎8-10份、葵花籽仁8-10份、蔓越莓干6-8份、提子干6-7份、红枣颗粒6-7份、枸杞子6-7份、无花果干6-8份、藕粉55-70份、魔芋粉11-14份、黑芝麻8-10份、燕麦片12-18份、小麦胚芽5-6份、多晶体冰糖(或白砂糖)3-18份。
3.根据权利要求1所述的一种益气养血、滋肾养肝的坚果藕粉粥配方。其特征在于包括以下重量份的原料:核桃碎10份、花生碎10份、腰果碎8份、葵花籽仁8份、蔓越莓干7份、提子干6份、红枣颗粒6份、枸杞子6份、无花果干6份、藕粉16份、魔芋粉12份、黑芝麻8份、燕麦片14份、小麦胚芽5份、多晶体冰糖(或白砂糖)8份。
4.根据权利要求1所述的一种益气养血、滋肾养肝的坚果藕粉粥配方,其特征在于所述核桃碎为30-150mm3不规则形状果仁碎,花生碎为30-130mm3不规则形状的果仁,腰果碎为30-130mm3不规则形状果仁碎,蔓越莓干为50-150mm3不规则形状的果仁碎,无花果干为切面20-60mm2、厚度1-2mm的果干片。
5.一种益气养血、滋肾养肝的坚果藕粉方便冲调羹的制备方法,其主要特征包括以下几个步骤:
S1、优选原料,将所述的配料所需原料:核桃、花生、腰果、葵花籽去壳,按要求破碎、筛选,将红枣、蔓越莓干、提子干去核,按要求大小切片,藕、魔芋、小麦胚芽经清洗、加压蒸煮、微波干燥、粉碎成细粉、黑芝麻经高温烘焙炒香,燕麦经脱壳-水热处理-籽粒切割-高温热压成燕麦片,多晶体冰糖(或白砂糖)粉碎成细粉碎。
S2、将步骤S1加工处理后的配料,以要求的重量份配比放入高温混合机种,以200-300r/min的转速,搅拌混合20-30min,混合均匀。
S3、将步骤S2中所得的混合制成品进行远外红外线杀菌方式或高温顺间杀菌方式中的一种进行杀菌处理,然后进行装袋密封包装或装罐密封包装,检查合格即制备完成。
6.根据权利要求四所述一种益气养血、滋肾养肝坚果藕粉方便冲调羹的配料加工要求,是以适合体积大小、不规则形状的坚果种仁碎,干果片(颗粒)与藕粉、魔芋粉混合,达到谷物粉,快速疏气通水,避免谷物粉结团现象发生,增加冲调快速的体验感,是本发明的特征之一,在配料的体积,形状和品种的局部调整,但实现谷物便于冲调的原理与发明一致,也应在本发明保护范围之内。
