Abstract
本发明公开一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,按照重量配比,包括以下原料:核桃低聚肽1‑40份,骨胶原蛋白肽1‑20份,DHA1‑10份,牛磺酸0‑10份,酪蛋白磷酸肽0‑5份,调节风味和辅助加工的成分0‑100份,加工成固体饮料、压片糖果、液体饮料、营养棒与饼干。本发明是以核桃低聚肽、骨胶原蛋白肽、DHA、牛磺酸、酪蛋白磷酸肽及其它调节风味和辅助加工的成分为原料,通过合理的组合,使产品最终具有促进钙吸收,预防骨质疏松,缓解关节疼痛,提高记忆力,延缓脑退化,预防老年痴呆的作用。与现有的产品相比,本发明能够双管齐下,辅助解决骨骼和脑退化两个问题,与现有产品相比,更够更精准、更高效、更安全地解决问题。
Description
技术领域
本发明涉及食品技术领域,特别是涉及一种辅助改善骨骼和脑部健康的食品组合物及其制备方法。
背景技术
随着年龄的增长,钙流失和大脑功能的退化,是一种非常自然的现象,是现在中老年人普遍面临的问题,放任不理会带来严重的健康和生活问题。钙流失会导致骨质疏松,容易骨折,关节退化,关节炎关节疼痛,严重还会导致瘫痪;大脑功能退化导致认知能力下降,记忆力下降,学习能力下降,老年痴呆等。
据相关研究表明,70前人群普遍的健康问题中,关节问题排在首位,脑部健康也赫然在列。因此关节健康和脑部健康是中老年人非常关注的问题。
本发明所述的组合物中的骨胶原蛋白肽,酪蛋白磷酸肽,对机体钙的吸收有明显的辅助作用。
缺钙是世界性的营养问题,要解决缺钙问题必须同时从两方面着手,一为增加钙的摄入量,二为提高钙的吸收利用率。目前国内市场上有200多种补钙剂,大多着眼于增加钙的摄入量,而提高钙的吸收、利用率的产品种类很少,近年来,一些营养食品和保健食品生产厂家已在其产强化钙的同时也对维生素D进行强化,目的是提高钙的吸收利用率,这是到目前为止解决钙吸收利用率而采用的惟一办法。
钙只有离子形态存在时才易被吸收,而在中性和弱酸性环境中又容易与酸根离子形成不溶性盐流失。而酪蛋白磷酸肽的作用,是在人体肠道内pH呈中性到弱碱性的环境中,酪蛋白磷酸肽能螯合钙、铁、锌离子,保护其不被膳食中的磷酸、草酸、植酸等阴离子沉淀,从而有效促进对钙、铁、锌等的吸收和利用。酪蛋白磷酸肽与传统的钙吸收剂维生素D相比,具有以下特点:1.酪蛋白磷酸肽除了促进钙吸收功能外,还可促进铁、锌等二价矿物营养素的吸收。铁和锌是除了钙以外中国人最易缺乏的矿物质,若单纯、过度补钙,会对铁和锌的吸收造成一定的影响。补充酪蛋白磷酸肽,则不仅可提高钙的吸收,同时还可提高铁和锌的吸收利用率,从而有效克服一般补钙剂对铁、锌吸收的潜在不利影响,这一点是任何其它补钙剂都不具备的特性。2.维生素D的作用是促进机体对钙的主动吸收,这种吸收受年龄和钙摄入量的影响;而酪蛋白磷酸肽,是促进机体对钙的被动扩散吸收,这种吸收不受年龄和钙摄入量变化的影响,且钙的被动扩散吸收远大于主动运输吸收。3.过量摄入维生素D对人体有一定的毒副作用,而酪蛋白磷酸肽即使超量服用,也没有任何毒副作用。
骨胶原蛋白肽,是从牛骨中提取的胶原蛋白制成的小分子肽。人体骨骼主要由钙和胶原蛋白两部分构成,其中钙盐占2/3,胶原蛋白占1/3。胶原蛋白在骨质中呈网状结构,能够增加骨密度,使骨的硬度和韧性增强。骨胶原蛋白特有的羟脯氨酸具有将血液中的钙输送到骨细胞的运载功能,而小分子活性胶原蛋白肽则是羟基磷酸钙的粘合剂,所以单一的补钙而不补充胶原,无法很好固定住钙质,补充胶原蛋白肽能够有效的补充骨骼中的胶原蛋白含量,从而促进钙质的沉淀和骨骼的形成,增加骨强度,提高骨密度。同时由于胶原蛋白肽的特有生物活性,服用胶原蛋白肽能有效的减缓关节疼痛,对关节炎症等骨病都有一定的效果。美国FDA经过研究得出结论:水解胶原蛋白对骨关节炎和骨质疏松症有着很好的治疗作用,长期服用是非常安全有效的。
大脑是人体最重要的器官之一,脑部健康和大脑的活跃度,关系到生活的方方面面。随着年龄的增长,脑细胞也会逐渐衰老、死亡、敏感度降低,导致大脑活跃度降低,这也是为啥中老年人的思维能力、灵敏度、反应能力比年轻人较弱的原因。
DHA,中文名二十二碳六烯酸,俗称脑黄金,是一种对人体非常重要的不饱和脂肪酸,属于ω-3不饱和脂肪酸家族中的重要成员。DHA是神经系统细胞生长及功能维持的一种主要成分,是大脑和视网膜的重要构成成分,在人体大脑皮层中含量高达20%,随着年龄的增长,脑中的DHA会逐渐减少,也就是引起脑部功能退化。补充DHA,能够使脑部细胞保持较高的活性,能够充分延缓脑细胞的衰老和死亡,维持较高的记忆和学习能力。
牛磺酸同DHA一样,也是在脑内含量丰富、分布广泛,能够明显促进神经系统的生长发育和细胞的增殖、分化,且呈剂量依赖性,在脑神经细胞的发育过程中起到重要的作用。因此适量补充牛磺酸,可以维持脑神经的灵敏度。

鉴于此,本发明提供了一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,按照重量配比,包括以下原料:
核桃低聚肽1-40份,骨胶原蛋白肽1-20份,DHA1-10份,牛磺酸0-10份,酪蛋白磷酸肽0-5份,调节风味和辅助加工的成分0-100份。
制备方法包括以下步骤:
(1)按照上述的配比,通过电子秤称取原料;
(2)将上述的各种原料过筛后混合,混合通过三维立体混合机混合,转速60转/min,混合时间25min;
(3)混合后经过后续加工成固体饮料、压片糖果、液体饮料、营养棒与饼干。
进一步的,所述原料过筛时为60目筛。
进一步的,所述调节风味或辅助加工的成分包括调节风味成分为药食同源植物、水果、蔬菜、甜味剂、酸味剂、香精、糖醇类,辅助加工成分包括水、淀粉、糊精、硬脂酸镁等。
进一步的,所述原料根据最终的食品可以选取固态原料也可以为液态原料。
进一步的,所述液体饮料在称取原料时候包含水0-100份。
进一步的,所述菌菇类包括香菇、金针菇、蛹虫草和银耳。
采用上述技术方案,具有如下有益效果:
本发明是以核桃低聚肽、骨胶原蛋白肽、DHA、牛磺酸、酪蛋白磷酸肽及其它调节风味和辅助加工的成分为原料,通过合理的组合,使产品最终具有促进钙吸收,预防骨质疏松,缓解关节疼痛,提高记忆力,延缓脑退化,预防老年痴呆的作用。与现有的产品相比,本发明能够双管齐下,辅助解决骨骼和脑退化两个问题,与现有产品相比,更够更精准、更高效、更安全地解决问题。
具体实施方式
下面对本发明做进一步说明。
实施例1:
核桃低聚肽粉20份,大豆肽粉10份,骨胶原蛋白肽9.75份,DHA藻油微胶囊粉0.2份,牛磺酸0.04份,酪蛋白磷酸肽0.01份。
经以下工艺,加工成固体饮料:
称量:电子秤定量称取每一种原料;
过筛:所有原料,过60目筛;
混合:三维立体混合机混合,转速60转/min,混合时间25min。
分装:全自动包装机分装,包装规格20g/袋。
实施例2.
水150份,核桃低聚肽30份,骨胶原蛋白肽10份,DHA1份,牛磺酸0.2份,酪蛋白磷酸肽0.1份,果葡糖浆40份,红枣浓缩液40份,枸杞浓缩液20份。
经以下工艺,加工成饮料。
称量:按配方量,准确称量
调配:按配方量,于搅拌罐中进行溶解调配。
过滤:调配液用DSGL系列袋式过滤器进行过滤。
罐装:调配液罐装于50毫升玻璃瓶中
杀菌:高压灭菌锅内121℃杀菌18分钟。
冷却:常温通风冷却至常温
包装:贴标装盒。
实施例3
核桃低聚肽20份,骨胶原蛋白肽15份,DHA3份,牛磺酸0.1份,酪蛋白磷酸肽0.2份,藜麦粉50份,黑芝麻粉30份,核桃粉40份,糙米粉10份。
经以下工艺,加工成冲调谷物制品:
称量:电子秤定量称取每一种原料;
过筛:所有原料,过60目筛;
混合:三维立体混合机混合,转速60转/min,混合时间25min。
分装:全自动包装机分装,包装规格200g/袋。
实施例4
核桃低聚肽10份,骨胶原蛋白肽13份,DHA0.3份,牛磺酸0.1份,酪蛋白磷酸肽0.1份,山梨糖醇40份、甘露糖醇26份、硬脂酸镁2份。
经以下工艺,加工成压片糖果:
称量:电子秤定量称取每一种原料;
过筛:所有原料,过60目筛;
混合:三维立体混合机混合,转速60转/min,混合时间25min。
压片:全自动压片机,进行压片,1g/片。
包装:装瓶,50片/瓶。
其中的核桃肽中含有丰富的谷氨酸,它是参加脑代谢的唯一氨基酸,会增加脑内乙酰胆碱含量,使大脑皮层神经细胞活动旺盛、促进脑组织新陈代谢、恢复脑细胞功能。对于经常用脑者,可快速恢复精力,保护脑部健康,增强思维敏捷度,有效防止记忆力减退。

核桃低聚肽1-40份,骨胶原蛋白肽1-20份,DHA1-10份,牛磺酸0-10份,酪蛋白磷酸肽0-5份,调节风味和辅助加工的成分0-100份。
制备方法包括以下步骤:
(1)按照上述的配比,通过电子秤称取原料;
(2)将上述的各种原料过筛后混合,混合通过三维立体混合机混合,转速60转/min,混合时间25min;
(3)混合后经过后续加工成固体饮料、压片糖果、液体饮料、营养棒与饼干。
2.根据权利要求1所述的一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,其特征在于,按所述原料过筛时为60目筛。
3.根据权利要求1所述的一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,其特征在于,所述调节风味或辅助加工的成分包括调节风味成分为药食同源植物、水果、蔬菜、甜味剂、酸味剂、香精、糖醇类,辅助加工成分包括水、淀粉、糊精、硬脂酸镁等。
4.根据权利要求1所述的一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,其特征在于,所述原料根据最终的食品可以选取固态原料也可以为液态原料。
5.根据权利要求1所述的一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,其特征在于,所述液体饮料在称取原料时候包含水0-100份。
6.根据权利要求1所述的一种辅助改善骨骼和脑部健康的食品组合物及其制备方法,其特征在于,所述菌菇类包括香菇、金针菇、蛹虫草和银耳。
