技术领域
本发明属于食品技术领域,具体涉及一种燕窝减肥组合物,其功能食品、制备方法及应用。
背景技术
燕窝是指雨燕目雨燕科的部分雨燕和金丝燕属的几种金丝燕分泌出来的唾液,再混合其他物质所筑成的巢穴。燕窝含有丰富的糖类、有机酸、游离氨基酸以及特征物质——唾液酸,具有滋阴、润燥和补中益气等功效,作为药食两用的高档滋补品,老少皆宜,深受消费者的喜爱,属于传统滋补食品之一。
关于燕窝制品,CN101647561A公开了一种即食燕窝生产工艺,其包括如下步骤:取干品燕窝微波杀菌,取杀菌后的干品燕窝和饮用水按重量份比1:15混合,饮用水的温度为70℃,浸泡1.5小时,备用;将浸泡后的燕窝除去杂质和水,按重量份加入3份饮用水;放入盛有沸水的平底不锈钢锅预热15分钟,再加热40分钟,冷却,包装。该专利生产的燕窝随时食用,干净卫生,易吸收,生物利用度高。CN101653511A公开了一种治疗营养性贫血、增强免疫力的燕窝阿胶口服液及生产工艺。原料重量配比如下:燕窝0.3%-0.7%;阿胶5%-10%;熟地黄提取物0.3%-0.7%;党参提取物0.5%-1.5%;山楂提取物1%-4%;当归提取物0.3%-0.7%;EDTA铁钠0.1%-0.5%;红糖10%-20%,其余为纯净水。本发明把珍贵补品燕窝和常见的中药材配制而成,成本低,制作工艺简单,见效快,无毒副作用,能有效改善营养性贫血,增强免疫力。
从上述公开的内容可以看出,现有的燕窝制品主要具有滋补的作用,功能较为单一。如何实现现有燕窝制品功能的延伸,特别是将其与市场需求旺盛的减肥需求相结合,是目前行业的空白,具有较好的市场应用前景。
发明内容
本发明的第一目的在于提供一种燕窝减肥组合物,所述组合物具有原料天然安全,美容养颜同时有效减轻肥胖,以及具有调理体质的作用。
本发明的第二目的在于提供一种包括上述组合物的功能食品。
本发明的第三目的在于提供一种上述组合物的制备方法。
本发明的第四目的在于提供一种上述组合物的应用。
为了实现上述目的,本发明采用如下技术方案:
一种燕窝减肥组合物,原料组分包括:燕窝5-20重量份、左旋肉碱5-15重量份、白芸豆提取物5-10重量份、荷叶提取物5-10重量份、鱼胶原蛋白肽2-8重量份、弹性蛋白肽2-8重量份。
本发明组合物所添加的原料组分,其中,燕窝中含有多肽类物质“表皮生长因子”,具有多种皮肤美容作用:1.能促进表皮组织上皮细胞、角质细胞、成纤维细胞等多种细胞的生长、分裂,加快新陈代谢,增强其表皮细胞活性,从而使细胞保持质与量的完善,使皮肤皱纹消失;2.促进新生细胞来替代衰老细胞,以降低皮肤中黑色素和有色细胞的含量;并且可增加皮肤血流量,改善皮肤微循环,为表皮细胞提供良好的营养环境,防止代谢产物淤积,有效改善皮肤色泽,使较黑肤色和各类色素沉着的皮肤白皙完美,均匀靓丽;3.促进细胞外透明质酸、糖蛋白等大分子的合成和分泌,增强皮肤的亲水性,保持皮肤内水分;4.主动与伤口附近细胞膜上的特异性受体相结合,从而激活蛋白酶,加快蛋白质的合成,促进成纤维细胞的生长,促进皮肤和粘膜创面愈合并养活疤痕收缩和皮肤的畸形增生,快速高效修复创伤。
左旋肉碱又称L-肉碱或音译卡尼丁,作为脂肪代谢过程中一种必需的辅酶,能促进脂肪酸进入线粒体进行氧化分解,即促进脂肪转化成能量。红色肉类是左旋肉碱的主要来源,对人体无毒副作用。不同类型的日常饮食已经含有5-100毫克的左旋肉碱,但一般人每天只能从膳食中摄入50毫克,素食者摄入更少。
白芸豆提取物,含有α淀粉酶抑制蛋白,其通过抑制淀粉酶的活性抑制人体对淀粉的消化吸收,从而减少人体最大的能量来源。
荷叶提取物中含有的荷叶碱,能有效分解体内的脂肪,以及密布人体肠壁上,形成一层脂肪隔离膜,阻止脂肪吸收,防止脂肪堆积。
鱼胶原蛋白肽,人体中所含有的胶原蛋白中,有90%是I型胶原蛋白,鱼胶原蛋白肽是从鱼皮、鱼鳞中通过生物酶定向剪切技术提取得到,主要为I型胶原蛋白,与人体相似,分子量为2000-5000D0,具有很高的吸收性。鱼胶原蛋白肽进入真皮组织后,可修复断裂、老化的弹力纤维网,增这加皮肤紧密度,能填补局部塌陷、使皮肤紧绷而富有弹性。
弹性蛋白肽和胶原蛋白肽类似,弹性蛋白肽是弹性蛋白的降解产物,人类皮肤由皮肤表皮、皮肤真皮和皮下组织组成,弹性蛋白就位于皮肤真皮层,存在于真皮层的细胞间隙之间,与胶原蛋白等其他细胞外基质一起维持组织结构的稳定性,主要提供细胞间的黏附和支持作用,同时其很强的伸缩性和弹性也是维系皮肤弹性的重要原因。弹性蛋白肽具有促进皮肤损伤修复、血管再生和促进成纤维细胞增殖等功效。
作为一种优选的实施方式,本发明燕窝减肥组合物的原料组分还包括综合果蔬酵素粉2-8重量份、白藜芦醇2-8重量份、番茄红素0.5-1重量份、玫瑰花提取物1-5重量份、蓝莓提取物1-5重量份、黑枸杞提取物1-5重量份。
综合果蔬酵素粉,以多种果蔬为原料制成的产品,可以通过市购得到,其保留有多种果蔬的养分,具有提高肠胃的生理功能,促进肠胃的消化和吸收,减少色素沉着、预防色斑以及防止青春痘等多重功效。
白藜芦醇,是一种非黄酮类多酚化合物,是许多植物受到刺激时产生的一种抗毒素。可在葡萄叶及葡萄皮中合成,是葡萄酒和葡萄汁中的生物活性成分。口服容易吸收,代谢后通过尿液及粪便排出。体外实验及动物实验表明,具有抗菌、抗氧化、免疫调节、心血管保护等多种生物活性作用。
番茄红素,是植物中所含的一种天然色素,主要存在于茄科植物西红柿的成熟果实中,是迄今为止自然界中被发现的最强抗氧化剂之一,番茄红素清除自由基的功效远胜于其他类胡萝卜素和维生素E。
玫瑰中含有丰富的黄酮类物质、多酚类物质以及多糖类物质,黄酮类物质具有极强的抗氧化性,可以有效地减少和清除自由基,降低胆固醇、抗肿瘤、抗炎、抗衰老等,还有降血糖的功效。多酚类物质也具有一定的抗氧化活性、还原性,具有SOD抗氧化活性,可以有效地清除自由基及色素沉淀,还可用于美容养颜等。玫瑰多糖可以有效地提高免疫力,抗衰老、降血脂、抗辐射和抗炎等。
蓝莓含有花青苷、绿原酸、黄酮素、亚麻油酸、蝶二苯乙烯、白藜芦醇及不同维生素等生物活性成分。近年的研究显示蓝莓因具有抗压力、抗氧化、抗发炎、抗血管新生而对癌症、糖尿病、高血脂、高血压、神经退化、肥胖、骨质疏松等老化有关的慢性病有益处,被认为是最有营养价值的食物之一。
黑枸杞含有丰富的枸杞多糖、脂肪、蛋白质、游离氨基酸、牛磺酸、维生素以及大量的矿物质元素,枸杞多糖具有抗衰老、调节免疫、降血糖、降血脂等多种生物活性作用。
本发明组合物通过将上述几种原料进行联合使用,使得各种原料相互配合,功效互补,进而收到较好的美容养颜、调理体质以及控制体重的作用。
为了提高本发明组合物的综合口感,作为一种优选的实施方案,本发明组合物中还可以添加2-6重量份的甜味剂组分,包括但不限于冰糖、乳糖、赤藓糖醇以及罗汉果糖中的任意一种或几种。
为了最大限度保证本发明组合物的效果,本发明还对白芸豆提取物、荷叶提取物、玫瑰花提取物中的代表性功效成分,以及蓝莓提取物和黑枸杞提取物的制备方法,提供进一步优选的实施方案,具体的,白芸豆提取物优选α-淀粉酶的抑制活性≧1000U/g,蛋白质含量≧75g/100g;荷叶提取物优选荷叶碱含量≧50%;玫瑰花提取物优选总黄酮含量≥5%。蓝莓提取物以及黑枸杞提取物优选按如下方法制备得到:(1)选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入4-6倍重量浓度为50-80%v/v的乙醇进行超声提取,优选60-80kHz,40-50℃,15-20min;之后浓缩除去乙醇,得到提取物;按提取物:水=1:5-8的比例加水稀释得到提物液;(2)向所述提取液中加入占所述提取液0.3-0.6wt%牛肉膏粉、0.3-0.6wt%酵母粉、1-2wt%乳糖、0.02-0.1wt%磷酸氢二钾、0.05-0.2wt%乙酸钠、0.01-0.03wt%硫酸镁,混匀后灭菌,接种乳酸菌,于120-200r/min,28-32℃条件下培养30-60h,完毕后过滤除菌,即得。本发明提供的蓝莓提取物以及黑枸杞提取物制备方法,采用了先以有机溶剂进行提取,然后发酵的方法,前期试验结果表明,与仅仅采用有机溶剂提取或发酵的方法相比,采用本发明方法制得的组合物,具有明显更优的减肥效果。初步分析认为,本申请所述制备方法能够充分提取蓝莓以及黑枸杞中的有效活性成分,并通过发酵得到了人体易于吸收的组分。
本发明燕窝减肥组合物的制备方法,可先按重量份称取各原料,然后充分混合均匀,即得。
作为本发明的变形,本领域技术人员还可以根据常规的技术,将本发明所述燕窝减肥组合物作为功能助剂,通过加入辅助性成分,将其制成各种类型的功能食品,所述功能食品包括但不限于液体饮料(例如燕窝饮品)、固体饮料(例如燕窝固体饮料)、方便食品以及冷冻甜品(例如冰淇凌、雪糕类)、果冻(例如燕窝果冻)等,以用于提供具有美容养颜、辅助减肥、调节免疫等相关的功能宣称。
本发明的有益效果为:
1、本发明所述的燕窝减肥组合物,含有燕窝以及多种植物提取成分,原料来源天然、安全,具有美容养颜、辅助减肥、调节免疫等多种作用。
2、本发明组合物在辅助减肥方面,不会引起食欲的显著降低、腹泻以及腹泻所带来的各种其它身体问题,符合世界卫生组织所规定的健康减肥三大标准:不厌食、不腹泻、不乏力。
3、本发明组合物能制成固体或液体饮料、方便食品、冷冻甜品以及果冻,具有较宽的使用范围,符合现代快节奏生活下,亚健康人群对高营养价值以及形式多样的功能食品的需求,因而具有较好的市场应用前景。
具体实施方式
为使本发明的目的、技术方案和优点更加清楚,下面将对本发明的技术方案进行详细的描述。显然,所描述的实施例仅仅是本发明的一部分实施例,而不是全部的实施例。基于本发明中的实施例,本领域普通技术人员在没有做出创造性劳动的前提下所得到的所有其它实施方式,都属于本发明所保护的范围。以下实施例中以1重量份代表1g。本实施例中所采用的原料,白芸豆提取物中α-淀粉酶的抑制活性≧1000U/g,蛋白质含量≧75g/100g,购自陕西博林生物技术有限公司;荷叶提取物中的荷叶碱含量≧50%,购自陕西博林生物技术有限公司;玫瑰花提取物中的总黄酮含量≥5%,购自陕西博林生物技术有限公司。
实施例1
本实施例提供一种燕窝减肥组合物,由以下重量份原料组成:
燕窝5重量份、左旋肉碱15重量份、白芸豆提取物5重量份、荷叶提取物10重量份、鱼胶原蛋白肽2重量份、弹性蛋白肽8重量份、综合果蔬酵素粉8重量份、白藜芦醇2重量份、番茄红素1重量份、玫瑰花提取物1重量份、蓝莓提取物5重量份、黑枸杞提取物1重量份、冰糖4重量份;
所述蓝莓提取物、黑枸杞提取物均按如下方法制备得到:
(1)选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入4倍重量浓度为80%v/v的乙醇进行超声提取(60kHz,50℃,15min),之后浓缩除去乙醇,得到提取物;按提取物:水=1:5的比例加水稀释得到提物液;
(2)向所述提取液中加入占所述提取液0.3wt%牛肉膏粉、0.3wt%酵母粉、1wt%乳糖、0.02wt%磷酸氢二钾、0.05wt%乙酸钠、0.01wt%硫酸镁,混匀后灭菌,接种乳酸菌(罗伊氏乳杆菌ATCC 23272),于120r/min,32℃条件下培养30h,完毕后过滤除菌,即得。
本实施例燕窝减肥组合物的制备方法为:按重量份称取各原料,充分混合均匀,即得。
实施例2
本实施例提供一种燕窝减肥组合物,由以下重量份原料组成:
燕窝20重量份、左旋肉碱5重量份、白芸豆提取物10重量份、荷叶提取物5重量份、鱼胶原蛋白肽8重量份、弹性蛋白肽2重量份、综合果蔬酵素粉2重量份、白藜芦醇8重量份、番茄红素0.5重量份、玫瑰花提取物5重量份、蓝莓提取物1重量份、黑枸杞提取物5重量份、罗汉果糖2重量份;
所述蓝莓提取物、黑枸杞提取物均按如下方法制备得到:
(1)选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入6倍重量浓度为50%v/v的乙醇进行超声提取(80kHz,40℃,20min),之后浓缩除去乙醇,得到提取物;按提取物:水=1:8的比例加水稀释得到提物液;
(2)向所述提取液中加入占所述提取液0.6wt%牛肉膏粉、0.6wt%酵母粉、2wt%乳糖、0.1wt%磷酸氢二钾、0.2wt%乙酸钠、0.03wt%硫酸镁,混匀后灭菌,接种乳酸菌,于200r/min,28℃条件下培养60h,完毕后过滤除菌,即得。
本实施例燕窝减肥组合物的制备方法为:按重量份称取各原料,充分混合均匀,即得。
实施例3
本实施例提供一种燕窝减肥组合物,由以下重量份原料组成:
燕窝10重量份、左旋肉碱10重量份、白芸豆提取物8重量份、荷叶提取物8重量份、鱼胶原蛋白肽5重量份、弹性蛋白肽5重量份、综合果蔬酵素粉5重量份、白藜芦醇5重量份、番茄红素0.5重量份、玫瑰花提取物2重量份、蓝莓提取物3重量份、黑枸杞提取物3重量份、乳糖2重量份、赤藓糖醇4重量份;
所述蓝莓提取物、黑枸杞提取物均按如下方法制备得到:
(1)选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入5倍重量浓度为70%v/v的乙醇进行超声提取(60kHz,40℃,20min),之后浓缩除去乙醇,得到提取物;按提取物:水=1:6的比例加水稀释得到提物液;
(2)向所述提取液中加入占所述提取液0.5wt%牛肉膏粉、0.5wt%酵母粉、1wt%乳糖、0.06wt%磷酸氢二钾、0.06wt%乙酸钠、0.02wt%硫酸镁,混匀后灭菌,接种乳酸菌,于200r/min,30℃条件下培养40h,完毕后过滤除菌,即得。
本实施例燕窝减肥组合物的制备方法为:按重量份称取各原料,充分混合均匀,即得。
对比例1
与实施例3的区别仅在于采用以下方法制备蓝莓提取物以及黑枸杞提取物:选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入5倍重量浓度为70%v/v的乙醇进行超声提取(60kHz,40℃,20min),之后浓缩除去乙醇,即得。
对比例2
与实施例3的区别仅在于采用以下方法制备蓝莓提取物以及黑枸杞提取物:选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉,加入6倍重量的水打成浆液,向所述浆液中加入占所述浆液0.5wt%牛肉膏粉、0.5wt%酵母粉、1wt%乳糖、0.06wt%磷酸氢二钾、0.06wt%乙酸钠、0.02wt%硫酸镁,混匀后灭菌,接种乳酸菌,于200r/min,30℃条件下培养40h,完毕后过滤除菌,即得。
对比例3
与实施例3的区别仅在于配比不同,具体的,本对比例由以下重量份原料组成:
燕窝10重量份、左旋肉碱10重量份、白芸豆提取物4重量份、荷叶提取物12重量份、鱼胶原蛋白肽5重量份、弹性蛋白肽5重量份、综合果蔬酵素粉5重量份、白藜芦醇5重量份、番茄红素0.5重量份、玫瑰花提取物4.5重量份、蓝莓提取物0.5重量份、黑枸杞提取物3重量份、乳糖2重量份、赤藓糖醇4重量份。
减肥效果试验
招募40名女性肥胖志愿者,肥胖标准为符合BMI指数大于24,腰围大于85cm,排除患有系统性疾病以及其他正在服药人群。将所有志愿者随机分为4组,每组10人,各组分别给予本发明实施例3以及对比例1-3制备得到的组合物,于每日三餐前20-30min食用,每次10g,连续食用3个月,试验期间正常饮食,但不得服用其他减肥相关产品,比较所有志愿者食用前后体重变化情况,结果见表1。

与初始值比,*p<0.05。
从上述结果可以看出,各组食用减肥组合物以前,各项指数均无明显差异(p>0.05),连续食用3个月以后,与对比例1-3组相比,本发明实施例1组在体重、腰围、BMI值各项数据方面明显降低(p<0.05),说明本发明各原料配比合理,制备工艺独特,因而具有较好的辅助减肥作用。
以上所述,仅为本发明的具体实施方式,但本发明的保护范围并不局限于此,任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,可轻易想到变化或替换,都应涵盖在本发明的保护范围之内。因此,本发明的保护范围应以所述权利要求的保护范围为准。
Claims (10)
1.一种燕窝减肥组合物,其特征在于,原料组分包括:
燕窝5-20重量份、左旋肉碱5-15重量份、白芸豆提取物5-10重量份、荷叶提取物5-10重量份、鱼胶原蛋白肽2-8重量份、弹性蛋白肽2-8重量份。
2.根据权利要求1所述的燕窝减肥组合物,其特征在于,所述白芸豆提取物中α-淀粉酶的抑制活性≧1000U/g,蛋白质含量≧75g/100g;所述荷叶提取物中的荷叶碱含量≧50%。
3.根据权利要求1所述的燕窝减肥组合物,其特征在于,原料组分还包括:综合果蔬酵素粉2-8重量份、白藜芦醇2-8重量份、番茄红素0.5-1重量份、玫瑰花提取物1-5重量份、蓝莓提取物1-5重量份、黑枸杞提取物1-5重量份。
4.根据权利要求3所述的燕窝减肥组合物,其特征在于,所述玫瑰花提取物中的总黄酮含量≥5%。
5.根据权利要求3所述的燕窝减肥组合物,其特征在于,原料组分还包括:2-6重量份的冰糖、乳糖、赤藓糖醇以及罗汉果糖中的任意一种或几种。
6.根据权利要求3所述的燕窝减肥组合物,其特征在于,所述蓝莓提取物以及黑枸杞提取物均按如下方法制备得到:
(1)选取蓝莓果或黑枸杞,冻干后粉碎,得到原料粉;向所述原料粉中加入4-6倍重量浓度为50-80%v/v的乙醇进行超声提取,之后浓缩除去乙醇,得到提取物;按提取物:水=1:5-8的比例加水稀释得到提物液;
(2)向所述提取液中加入占所述提取液0.3-0.6wt%牛肉膏粉、0.3-0.6wt%酵母粉、1-2wt%乳糖、0.02-0.1wt%磷酸氢二钾、0.05-0.2wt%乙酸钠、0.01-0.03wt%硫酸镁,混匀后灭菌,接种乳酸菌,于120-200r/min,28-32℃条件下培养30-60h,完毕后过滤除菌,即得。
7.根据权利要求6所述的燕窝减肥组合物,其特征在于,步骤(1)中,所述超声提取的条件为60-80kHz,40-50℃,15-20min。
8.权利要求1-7任一项所述燕窝减肥组合物的制备方法,其特征在于,具体步骤为,按重量份称取各原料,充分混合均匀,即得。
9.一种包括权利要求1-7任一项所述燕窝减肥组合物的功能食品,其特征在于,所述功能食品为液体饮料、固体饮料、方便食品、冷冻甜品以及果冻中的任意一种。
10.权利要求1-7任一项所述燕窝减肥组合物在制备用于美容养颜、辅助减肥的食品以及保健品中的应用。
