pretreating raw milk: inspecting and accepting fresh milk meeting the standard requirements, degassing, cooling, purifying the milk and pasteurizing, wherein the pasteurizing temperature is 85 +/-3 ℃ for 15s, and cooling and storing the pasteurized milk after pasteurization;
standardizing ingredients: mixing the skim milk powder, the milk mineral salt and the dietary fiber with water at 40-70 ℃ according to a formula, and fully stirring; adding the dissolved docosahexaenoic acid grease and phytosterol ester into the mixed feed liquid; dissolving the compound vitamin premix, the compound mineral premix and the selenium-enriched yeast in different containers at 30-50 ℃ respectively, and adding the dissolved substances into the mixed feed liquid respectively; adding a proper amount of pasteurized milk and/or whole milk powder into the mixed feed liquid according to the formula; homogenizing the mixed ingredient milk at high pressure of 18-20 Mpa;
sterilization and concentration: controlling the sterilization temperature to be 100-110 ℃, keeping the sterilization temperature for 10S, and performing vacuum evaporation to obtain concentrated milk;
spray drying: the concentrated milk is pressurized and atomized by a high-pressure pump for spray drying, the pressure of the high-pressure pump is 8-20 Mpa, the air inlet temperature is 150-190 ℃, and the air exhaust temperature is 80-90 ℃. The powder discharging temperature is less than or equal to 30 ℃;
filling and packaging: packaging the product, and detecting whether foreign matters exist by using an X-ray machine or a metal detector;
when whole milk powder is used and raw milk is not used, raw milk acceptance and raw milk pretreatment steps are omitted.

The invention provides a formula milk powder for middle-aged and elderly people, which contains protein, fat, carbohydrate, dietary fiber, vitamins, mineral substances, phytosterol ester and the like, wherein each 100g of formula milk powder comprises the following components in weight grams:
wherein, the whole milk powder can be partially or completely replaced by raw milk in the actual production, and when the raw milk is used, the raw milk needs to be converted into dry substance, and is generally converted into raw milk solid substance according to 12-13% of the raw milk.
The purity of docosahexaenoic acid (DHA) is 10%.
The dietary fiber is inulin.
Specifically, the compound vitamin premix comprises 300-900 mu gRE of vitamin A, 6.3-12.5 mu g of vitamin D, 10-31 mg α -TE of vitamin E and vitamin B in every 100g of formula milk powder6800-1600 mu g of taurine and 30-50 mg of taurine, and the balance of lactose or maltodextrin, wherein the source of vitamin A is preferably retinyl acetate, the source of vitamin D is preferably cholecalciferol, the source of vitamin E is preferably dl- α -tocopheryl acetate, and vitamin B6Pyridoxine hydrochloride is preferred.
Furthermore, every 100g of formula milk powder can be selectively added with the compound vitamin premix: one or more of vitamin C, folic acid and L-carnitine, and the addition amounts are respectively as follows: 30-100 mg of vitamin C, 200-500 mu g of folic acid and 30-40 mg of L-carnitine.
Specifically, in every 100g of formula milk powder, the compound mineral premix comprises: 6-20 mg of iron, 3-6 mg of zinc, and the balance of lactose or maltodextrin. Wherein, the iron source is preferably ferrous lactate, and the zinc strengthening source is preferably zinc sulfate.
Furthermore, in every 100g of formula milk powder, the compound mineral premix can be selectively added with: one or more of magnesium, copper and manganese, and the addition amounts are respectively as follows: 30-110 mg of magnesium, 300-750 mu g of copper and 30-430 mu g of manganese.
The nutritional functional properties of the product of the invention are mainly analyzed from the following aspects:
1. increasing human body bone density, preventing osteoporosis
The invention is 100% milk calcium: the calcium content in the formula of the invention is as high as 1000-1100 mg/100g, the reinforced calcium source is milk mineral salt, and 100% of calcium contained in the product is from milk. The milk mineral salt is derived from cow milk, and is milk white powder with high calcium content obtained by concentrating naturally-occurring calcium and mineral salt in cow milk by membrane separation technology. The calcium in the milk mineral salt is calcium phosphate, which can improve the bioavailability of calcium to human body, effectively increase the bone density of human body, and is helpful for preventing osteoporosis.
The invention also adds vitamin D: vitamin D is added into the compound vitamin premix, can promote the absorption of calcium, and is beneficial to the health of bones and teeth of middle-aged and elderly people.
2. Maintaining the health of the cardiovascular and cerebrovascular systems of the middle aged and the elderly
The invention particularly adds selenium-enriched yeast: selenium is a vital element which is as important as biochemical substances such as vitamin, beta-carotene and the like, is a trace element necessary for human and animals, is one of 15 nutrients in daily diet, is known as 'vital seeds of a fire', and has irreplaceable effects in the fields of medicine and biology. Local diseases such as keshan disease, Kaschin-Beck disease, cancer and the like are frequent due to selenium deficiency; in addition, selenium has effects of inhibiting in vivo cell oxidation, enhancing immunity, and resisting aging, and selenium deficiency can induce cardiovascular diseases. Selenium is supplemented in two forms, one is inorganic selenium such as sodium selenate and sodium selenite, and has low bioavailability and high toxicity; the other is organic selenium, such as selenium-enriched yeast. The invention adopts organic selenium-enriched yeast to supplement selenium, and the selenium-enriched yeast is an organic selenium source with highest bioavailability and far lower toxicity than inorganic selenium.
The invention also adds plant sterol ester: the phytosterol ester is prepared by esterification reaction of phytosterol and fatty acid, the phytosterol ester can be converted into the phytosterol and the fatty acid in vivo, the phytosterol has a remarkable function of reducing blood fat, and the chemical structure of the phytosterol ester is similar to that of cholesterol, so that the absorption of human bodies to cholesterol in diet can be reduced, the total cholesterol content and the low-density lipoprotein cholesterol content in blood are reduced, and the risk of suffering from coronary heart disease is reduced. The addition amount of the phytosterol ester in the product is 0.4-5 g.
The invention also adds docosahexaenoic acid grease (DHA) which is metabolized into docosahexaenoic acid in vivo, selenium-enriched yeast is matched with the DHA-enriched grease, the immunity of human body can be effectively improved, and simultaneously, the DHA-enriched grease is compounded with phytosterol ester, the synergistic interaction effect is obvious, and experiments prove that the DHA-enriched grease can obviously reduce blood fat, cholesterol and blood pressure in blood, reduce the risk of cardiovascular and cerebrovascular diseases, and maintain the cardiovascular and cerebrovascular health of middle-aged and elderly people.
3. Protecting intestinal health of the middle aged and the elderly
The invention also adds soluble dietary fiber-inulin: inulin is naturally occurring fructan in nature, and the inulin as natural water-soluble dietary fiber can improve digestion function, improve the comfort of intestines and stomach, and relieve constipation; promoting the activity, growth and reproduction of beneficial bacteria in human intestinal tracts and improving the intestinal microecological balance. In addition, the inulin is compounded with milk mineral salt, compound mineral substances and other components, has a synergistic effect, can effectively promote the absorption of calcium mineral substances in a human body, and increases the bone density.
The product is designed aiming at the physiological characteristics and nutritional requirements of middle-aged and elderly people, does not add sucrose, reduces the fat content, can provide balanced nutrition for the bodies of the middle-aged and elderly people, and meets the nutritional requirements of the middle-aged and elderly people. Experiments prove that the product of the invention obviously improves the bone and immunity of middle-aged and elderly people, reduces gastrointestinal disorder and obviously reduces the blood fat level.

The experimental procedures used above and in the examples below are conventional unless otherwise specified.
The materials, reagents and the like used above and in the following examples are commercially available unless otherwise specified.
Example 1
Every 100g of formula milk powder for middle-aged and elderly people comprises the following components in parts by weight:
53.50g of whole milk powder, 34.83g of skim milk powder, 7.45g of dietary fiber-inulin, 0.3g of docosahexaenoic acid grease (with the purity of 10%), 0.65g of milk mineral salt, 3.00g of phytosterol ester, 0.02g of selenium-enriched yeast, 0.15g of compound vitamin premix and 0.10g of compound mineral premix;
wherein the compound vitamin premix comprises the following components of vitamin A475 mu gRE, vitamin D8 mu g, vitamin E10mg α -TE and vitamin B60.92mg, taurine 30mg, the rest is filled with lactose or maltodextrin;
the compound mineral premix consists of the following components: iron 8.5mg, zinc 4.0mg, the remainder being filled with lactose or maltodextrin.
Example 2
Every 100g of formula milk powder for middle-aged and elderly people comprises the following components in parts by weight:
429.28g of raw milk (converting into raw milk solid according to 12.5 percent of the raw milk), 34.94g of skim milk powder, 7.48g of dietary fiber-inulin, 0.65g of milk mineral salt, 3.00g of phytosterol ester, 0.02g of selenium-enriched yeast, 0.15g of compound vitamin premix and 0.10g of compound mineral premix;
wherein the compound vitamin premix comprises the following components of vitamin A475 mu gRE, vitamin D8 mu g, vitamin E10mg α -TE and vitamin B60.92mg, taurine 30mg, the rest is filled with lactose or maltodextrin;
the compound mineral premix consists of the following components: iron 8.5mg, zinc 4.0mg, the remainder being filled with lactose or maltodextrin.
Example 3
Every 100g of formula milk powder for middle-aged and elderly people comprises the following components in parts by weight:
429.28g of raw milk (calculated according to 12.5 percent of raw milk solid), 34.94g of skim milk powder, 7.48g of dietary fiber-inulin, 0.65g of milk mineral salt, 3.00g of phytosterol ester, 0.02g of selenium-enriched yeast, 0.15g of compound vitamin premix and 0.10g of compound mineral premix.
Wherein the compound vitamin premix comprises the following components of vitamin A475 mu gRE, vitamin D8 mu g, vitamin E10mg α -TE and vitamin B60.92mg, taurine 30mg, vitamin C40 mg, the rest is filled with lactose or maltodextrin;
the compound mineral premix consists of the following components: iron 8.5mg, zinc 4.0mg, magnesium 40mg, the remainder being filled with lactose or maltodextrin.
Example 4
Preparation method of formula milk powder for old people in invention
The product adopts a pure wet process, and the specific process flow and parameters are as follows: raw milk acceptance → raw milk pretreatment → standardized ingredients → sterilization, concentration → spray drying → filling, packaging → inspection release.
Pretreating raw milk: inspecting and accepting raw fresh milk meeting the standard requirements, degassing, cooling, purifying the milk and pasteurizing, wherein the pasteurizing temperature is 85 +/-3 ℃ for 15s, and cooling and storing the pasteurized milk after pasteurization.
Standardizing ingredients: mixing the skim milk powder, the milk mineral salt and the inulin with water at 40-70 ℃ according to a formula, and fully stirring; adding the dissolved docosahexaenoic acid grease and phytosterol ester into the mixed feed liquid; dissolving the compound vitamin premix, the compound mineral premix and the selenium-enriched yeast in different containers at 30-50 ℃ respectively, and adding the dissolved substances into the mixed feed liquid respectively; adding a proper amount of pasteurized milk into the mixed feed liquid according to the formula; and (3) homogenizing the mixed ingredient milk at high pressure, wherein the homogenizing pressure is 18-20 MPa.
Sterilization and concentration: and controlling the sterilization temperature to be 100-110 ℃, keeping the sterilization temperature for 10S, and performing vacuum evaporation to obtain the concentrated milk.
Spray drying: the concentrated milk is pressurized and atomized by a high-pressure pump for spray drying, the pressure of the high-pressure pump is 8-20 Mpa, the air inlet temperature is 150-190 ℃, and the air exhaust temperature is 80-90 ℃. The powder discharging temperature is less than or equal to 30 ℃.
Filling and packaging: and packaging the product, and detecting whether foreign matters exist by using an X-ray machine or a metal detector.
If the whole milk powder is used for mixing during production and the raw fresh milk is not used, the links of raw milk acceptance, raw milk pretreatment and the like are not needed.
The products of examples 1-3 were all prepared according to the method of this example.
Example 5
Example 1 follow-up evaluation of the formula milk powder product for middle and old aged persons prepared
30 middle and old aged volunteers were selected, and the physical conditions of the volunteers were recorded before the test, and 25g of the prepared middle and old aged formula milk powder prepared in example 1 was drunk twice a day each time. During which time other related medications are not allowed. The nutrition, safety and product sensory characteristics of the food are tracked and evaluated after 3 months, and the return visit results are shown in tables 1 and 2:

As can be seen from Table 1, after the formula milk powder for middle-aged and old people is continuously taken for 3 months, no matter whether the bone state, the resistance and the blood fat level are normal or higher than the normal range, the number of 30 tested persons is obviously higher than the number of persons normal and higher before the formula milk powder is taken; after 3 months of administration, only one of diarrhea and constipation occurred occasionally, and the other 29 people never appeared, and the number of people who never appeared was greatly increased compared to that before administration. This shows that the body condition of the user is greatly improved after the continuous taking of the milk powder of the invention: the bone and resistance are obviously improved, the blood fat is obviously reduced, the gastrointestinal tract also tends to be normal, and the gastrointestinal tract disorder of diarrhea and constipation rarely occurs.
Table 2: evaluation of product sensory Properties
The statistics in the table 2 show that the milk powder prepared by the formula for middle-aged and old people has the advantages of normal tissue state, normal milk flavor, normal reconstitution property, normal or good acceptance degree and good product sensory characteristics. Can provide balanced nutrition for the bodies of the middle-aged and the elderly people and meet the nutritional requirements of the middle-aged and the elderly people.

4. A middle aged or elderly formula according to claim 3, wherein vitamin A is retinyl acetate, vitamin D is cholecalciferol, vitamin E is dl- α -tocopheryl acetate, vitamin B6Is pyridoxine hydrochloride.

The middle-aged and elderly formulated milk powder according to claim 3 or 4, wherein the vitamin premix compound further comprises, per 100g of the formulated milk powder: one or more of vitamin C, folic acid and L-carnitine, and the addition amounts are respectively as follows: 30-100 mg of vitamin C, 200-500 mu g of folic acid and 30-40 mg of L-carnitine.
6. The middle-aged and elderly-aged formula according to claim 1, wherein the compound mineral premix comprises, per 100g of the formula: 6-20 mg of iron, 3-6 mg of zinc, and the balance of lactose or maltodextrin.
7. The middle aged or elderly formula of claim 6, wherein the iron is ferrous lactate and the zinc is zinc sulfate.
8. The middle-aged and elderly formulated milk powder according to claim 6 or 7, wherein the compound mineral premix further comprises, per 100g of the formulated milk powder: one or more of magnesium, copper and manganese, and the addition amounts are respectively as follows: 30-110 mg of magnesium, 300-750 mu g of copper and 30-430 mu g of manganese.
9. The middle-aged and elderly-aged formula milk powder according to claim 1, wherein the whole milk powder is partially or completely replaced by raw milk, and is converted into raw milk solids by 12-13% of the raw milk; the purity of the docosahexaenoic acid oil is 10%.

The method for preparing the milk formula for middle-aged and elderly people as claimed in any one of claims 1-9, comprising the steps of raw milk acceptance → raw milk pretreatment → standardized ingredient → sterilization, concentration → spray drying → filling, packaging → inspection release:
pretreating raw milk: inspecting and accepting fresh milk meeting the standard requirements, degassing, cooling, purifying the milk and pasteurizing, wherein the pasteurizing temperature is 85 +/-3 ℃ for 15s, and cooling and storing the pasteurized milk after pasteurization;
standardizing ingredients: mixing the skim milk powder, the milk mineral salt and the dietary fiber with water at 40-70 ℃ according to a formula, and fully stirring; adding the dissolved docosahexaenoic acid grease and phytosterol ester into the mixed feed liquid; dissolving the compound vitamin premix, the compound mineral premix and the selenium-enriched yeast in different containers at 30-50 ℃ respectively, and adding the dissolved substances into the mixed feed liquid respectively; adding a proper amount of pasteurized milk and/or whole milk powder into the mixed feed liquid according to the formula; homogenizing the mixed ingredient milk at high pressure of 18-20 Mpa;
sterilization and concentration: controlling the sterilization temperature to be 100-110 ℃, keeping the sterilization temperature for 10S, and performing vacuum evaporation to obtain concentrated milk;
spray drying: the concentrated milk is pressurized and atomized by a high-pressure pump for spray drying, the pressure of the high-pressure pump is 8-20 Mpa, the air inlet temperature is 150-190 ℃, and the air exhaust temperature is 80-90 ℃. The powder discharging temperature is less than or equal to 30 ℃;
filling and packaging: packaging the product, and detecting whether foreign matters exist by using an X-ray machine or a metal detector;
when whole milk powder is used and raw milk is not used, raw milk acceptance and raw milk pretreatment steps are omitted.
