Description
技术领域
本发明涉及食品技术领域,尤其是涉及一种婴幼儿配方液态奶及其制备方法。
背景技术
婴儿阶段具有重要意义,这个时期的婴儿的生长发育非常快,对营养的需求非常高,不但需要喂食营养均衡、全面的食物,更需要易消化的食物,因为婴儿时期的消化和代谢系统发育还不是非常完善,特别是对那些由于工作需求或身体状况等导致母乳喂养缺乏的婴儿来说易消化的食物无疑是最适合的选择。但目前我国市场上的代乳食品种类很少,适合婴儿食用的营养补充食品种类也是有限,婴儿阶段主要以婴儿配方奶粉和米粉为主,产品主要是固态形式;由于生活和饮食习惯、物质条件等限制很难保证每日正常的营养摄入。婴儿配方奶粉又称母乳化奶粉,是指以乳牛或其它动物乳汁,或其它动植物提炼成份为基本组成,并适当添加营养素,使其总合成份能供给婴儿生长与发育所需要之一种人工食品,也就是俗称的婴儿奶粉。它是为了满足婴儿的营养需要,在普通奶粉的基础上加以调配的奶制品。婴儿配方奶粉以奶粉、乳清粉、大豆、饴糖等为主要原料,加入适量的维生素和矿物质以及其他营养物质,经加工后制成。
现有市场上的婴儿乳食品具有较多问题,如:奶源具有不可控性,奶源安全问题严峻;奶源安全和营养标准落后于国外;配方均为奶粉,采用湿法工艺,以鲜奶为原料直接添加各种营养成为,经喷雾干燥等工艺制成配方奶粉,其过程即为:“鲜奶-湿法工艺-喷雾干燥-奶粉”。因为长时间储存和多次高温热处理,奶粉中的蛋白质、乳糖、脂肪的营养价值都会大大降低。此外牛奶中有益于人体健康的溶菌酶在加工成全脂奶粉后,其活性也会降低,最终加工的奶粉营养成分也必将大打折扣。与婴儿奶粉相比,液态婴儿奶具有很多优点,如勿需冲调、浓度恒定、喂养方便、安全卫生等。婴儿代乳品向液态方向发展已成为大势所趋,目前液态婴儿乳在国内市场还处于空白,其发展前景广阔,预计到2020年,配方液态奶将会有3-5亿元的市场份额。
发明内容
为了克服上述缺陷,本发明的技术目的是提供一种婴幼儿配方液态奶制品及其制备方法。其具有优选奶源、以生牛乳为基础、最大限度保留营养物质、添加营养物料丰富、易吸收、制作工艺复杂、灭菌工艺标准严格的技术效果。
为了实现上述技术目的,本发明采用的技术方案是:
一种婴幼儿配方液态奶,其由以下重量百分比(%)的原料调配制成:

其中所述全脂生牛乳的蛋白质含量应高于等于每100ml含2.3克,最好是每100克含3.0克以上。
本发明的婴幼儿配方液态奶,其中所述植物油优选是菜籽油、葵花籽油和磷脂中的一种或几种的组合。根据本发明的优选实施方式,所述植物油可以由以下比例(重量百分比%)的原料调配制成:

本发明的婴幼儿配方液态奶,其中所述混合维生素包括:醋酸维生素A,DL-α-醋酸生育酚(维生素E),维生素D3,植物甲萘醌(维生素K1),叶酸(维生素B9),氰钴胺(维生素B12),硝酸硫胺素(维生素B1),核黄素(维生素B2),盐酸吡哆醇(维生素B6),烟酰胺(维生素B3),D-泛酸钙(维生素B5),D-生物素(维生素B8)。所述各种维生素的用量可以是按照常规已知的维生素混合量将上述各种维生素混合起来后得到混合维生素,再按上述添加量添加到配方奶中;根据本发明的优选实施方式,所述混合维生素由以下比例(重量百分比%)的原料调配制成:
本发明的婴幼儿配方液态奶,其中所述助剂优选是氢氧化钾。
本发明的婴幼儿配方液态奶的制备方法,最优选的是,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂,即将灭菌后乳脂注入灭菌后的脱脂乳中,得到混合乳;再向混合乳中加入已经混合好的营养配料,充分混合后经2mm孔径膜过滤,得到浓缩乳;其中所述的营养配料为上述表格中除全脂生牛乳、纯化水之外的所有原料的混合物;
(4)浓缩乳均质后巴氏杀菌,加入纯化水混合,经3mm孔径膜过滤,后经超高温瞬时灭菌、冷却、均质后得到灭菌后液态奶,在无菌条件下包装即得所述的婴幼儿配方液态奶。
所述超高温瞬时灭菌(UHT,又称超级巴斯德灭菌法)的条件优选是136度、3秒。
所述无菌条件下包装优选为氮气条件下包装。
本发明得到的婴幼儿配方液态奶尤其适用于12-36月龄婴幼儿。具有以下技术效果:
(1)采用全脂生牛乳,严格控制奶源,保证蛋白质含量为较高标准,最大限度保留营养物质。以生牛乳为基础原料,利用制备方法工艺可最大程度将生牛乳与各种营养添加物混合均匀,同时也最大程度降低了超高温热处理引起营养成分变化的可能性,产品在颜色、溶解性、气味及蛋白质消化性等方面的表现,比复原乳、奶粉为原料生产的配方奶更优异。
(2)添加营养物料丰富,易吸收,能全面满足3段幼儿成长。本配方中含有脱脂乳,水,稀奶油,乳糖,脱盐乳清粉,植物油(菜籽油,葵花籽油,磷脂),L-抗坏血酸钠,DHA藻油,柠檬酸脂肪酸甘油酯,柠檬酸钠,硫酸镁,硫酸亚铁,硫酸锌,碘化钾,亚硒酸钠,硫酸铜,硫酸锰,醋酸维生素A,DL-α-醋酸生育酚,维生素D3,植物甲萘醌,叶酸,氰钴胺,硝酸硫胺素,核黄素,盐酸吡哆醇,烟酰胺,D-泛酸钙,D-生物素等配料丰富的营养物质,专门针对3段(12-36个月)的幼儿成长所需的营养,易吸收,能全面促进3段(12-36个月)的幼儿成长。
(3)制作工艺复杂,难度高、灭菌工艺标准严格。
具体实施方式
下面通过实施例来进一步说明本发明的技术方案。
实施例1:
一种婴幼儿配方液态奶,其由以下重量百分比(%)的原料调配制成:
本实施例的全脂生牛乳优选奶源,要求蛋白质含量高于等于每100ml含2.3克。根据实际情况,选择来自法国奶制品集团COOPERATIVE AGRICOLE LAITIERE LES MAITRESLAITIERS DU COTENTIN(简称”MLC”)的奶牛牧场,其牧场遵守自然生态散养的原则,一公顷(15亩)养一头牛,科学饲养。对奶源严格把控质量,对牧场环境、牛棚卫生、动物健康、牛奶收集与运输都有系统的规范及管理。每48小时收集一次牛奶作为本实施例的奶源供应,保证了制作配方液态奶的营养来源可靠。

本实施例的婴幼儿配方液态奶的制备方法,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂,即将灭菌后乳脂注入灭菌后的脱脂乳中,得到混合乳;再向混合乳中加入已经混合好的营养配料,充分混合后经2mm孔径膜过滤,得到浓缩乳;其中所述的营养配料为上述表格中除全脂生牛乳、纯化水之外的所有原料的混合物;
(4)浓缩乳均质后巴氏杀菌,加入纯化水混合,经3mm孔径膜过滤,后经超高温瞬时灭菌(136度、3秒)、冷却、均质后得到灭菌后液态奶,在氮气条件下无菌包装即得所述的婴幼儿配方液态奶。
本实施例的婴幼儿配方液态奶优选奶源,具有最大限度保留营养物质、添加营养物料丰富、易吸收、制作工艺复杂、灭菌工艺标准严格的技术效果。经检测其营养成分,如下表所示:
贮存条件:贮存于阴凉干燥处。开封后,冷藏后请于3天内饮用。
使用说明:打开包装前需摇匀。在室温加热后饮用。若加热,需用温奶器加热,但是加热温度不高于40℃。将奶倒入干净的容器中饮用,或将吸管从包装上部插入后直接饮用。

1.一种婴幼儿配方液态奶,其特征在于,由以下重量百分比的原料调配制成:全脂生牛乳60-70,纯化水25-35,90%脱盐乳清粉1-2,乳糖3-4,植物油0.5-1.5,DNA藻油0.0128-0.192,柠檬酸和脂肪酸甘油酯0.008-0.012,L-抗坏血酸钠0.021-0.032,碘化钾0.00056-0.0008,硫酸铜0.00011-0.00017,亚硒酸钠0.0004-0.0006,硫酸锰0.000016-0.000024,硫酸亚铁0.003-0.005,硫酸锌0.0017-0.0025,硫酸镁0.004-0.006,柠檬酸钠0.004-0.0066,混合维生素0.008-0.012,助剂0.02-0.03;
其中所述全脂生牛乳的蛋白质含量高于等于每100ml含2.3克。
2.根据权利要求1所述的婴幼儿配方液态奶,其特征在于,所述植物油是菜籽油、葵花籽油和磷脂中的一种或几种的组合。
3.根据权利要求1所述的婴幼儿配方液态奶,其特征在于,所述混合维生素包括:醋酸维生素A,DL-α-醋酸生育酚,维生素D3,植物甲萘醌,叶酸,氰钴胺,硝酸硫胺素,核黄素,盐酸吡哆醇,烟酰胺,D-泛酸钙,D-生物素。
4.根据权利要求1所述的婴幼儿配方液态奶,其特征在于,所述助剂是氢氧化钾。
5.权利要求1-4任一项所述的婴幼儿配方液态奶的制备方法,其特征在于,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂,即将灭菌后乳脂注入灭菌后的脱脂乳中,得到混合乳;再向混合乳中加入已经混合好的营养配料,充分混合后经2mm孔径膜过滤,得到浓缩乳;其中所述的营养配料为权利要求1中除全脂生牛乳、纯化水之外的所有原料的混合物;
(4)浓缩乳均质后巴氏杀菌,加入纯化水混合,经3mm孔径膜过滤,后经超高温瞬时灭菌、冷却、均质后得到灭菌后液态奶,在无菌条件下包装即得所述的婴幼儿配方液态奶。
6.根据权利要求5所述的制备方法,其特征在于,所述超高温瞬时灭菌的条件是136度、3秒。
7.根据权利要求5所述的制备方法,其特征在于,所述无菌条件下包装为氮气条件下包装。
8.权利要求5-7任一项所述的制备方法制备得到的婴幼儿配方液态奶。
9.权利要求1-4任一项所述的婴幼儿配方液态奶用于12-36月龄婴幼儿。
10.权利要求8所述的婴幼儿配方液态奶用于12-36月龄婴幼儿。
