本发明涉及食品技术领域,尤其是涉及一种用于婴幼儿的四段配方液态奶及其制备方法。
背景技术
婴儿阶段具有重要意义,这个时期的婴儿的生长发育非常快,对营养的需求非常高,不但需要喂食营养均衡、全面的食物,更需要易消化的食物,因为婴儿时期的消化和代谢系统发育还不是非常完善,特别是对那些由于工作需求或身体状况等导致母乳喂养缺乏的婴儿来说易消化的食物无疑是最适合的选择。但目前我国市场上的代乳食品种类很少,适合婴儿食用的营养补充食品种类也是有限,婴儿阶段主要以婴儿配方奶粉和米粉为主,产品主要是固态形式;由于生活和饮食习惯、物质条件等限制很难保证每日正常的营养摄入。婴儿配方奶粉又称母乳化奶粉,是指以乳牛或其它动物乳汁,或其它动植物提炼成份为基本组成,并适当添加营养素,使其总合成份能供给婴儿生长与发育所需要之一种人工食品,也就是俗称的婴儿奶粉。它是为了满足婴儿的营养需要,在普通奶粉的基础上加以调配的奶制品。婴儿配方奶粉以奶粉、乳清粉、大豆、饴糖等为主要原料,加入适量的维生素和矿物质以及其他营养物质,经加工后制成。
现有市场上的婴儿乳食品具有较多问题,如:奶源具有不可控性,奶源安全问题严峻;奶源安全和营养标准落后于国外;配方均为奶粉,采用湿法工艺,以鲜奶为原料直接添加各种营养成为,经喷雾干燥等工艺制成配方奶粉,其过程即为:“鲜奶-湿法工艺-喷雾干燥-奶粉”。因为长时间储存和多次高温热处理,奶粉中的蛋白质、乳糖、脂肪的营养价值都会大大降低。此外牛奶中有益于人体健康的溶菌酶在加工成全脂奶粉后,其活性也会降低,最终加工的奶粉营养成分也必将大打折扣。与婴儿奶粉相比,液态婴儿奶具有很多优点,如勿需冲调、浓度恒定、喂养方便、安全卫生等。婴儿代乳品向液态方向发展已成为大势所趋,目前液态婴儿乳在国内市场还处于空白,其发展前景广阔,预计到2020年,配方液态奶将会有3-5亿元的市场份额。

为了克服上述缺陷,本发明的技术目的是提供一种用于婴幼儿的四段配方液态奶及其制备方法。其具有生牛乳含量高、营养价值高、优选奶源、最大限度保留营养物质、易吸收、制作工艺复杂、灭菌工艺标准严格的技术效果。

其中所述全脂生牛乳的蛋白质含量应高于等于每100ml含2.3克,最好是每100克含3.0克以上。
本发明的用于婴幼儿的四段配方液态奶,其还包含适量的加工助剂。优选为氢氧化钾0.01-0.04。
本发明的用于婴幼儿的四段配方液态奶的制备方法,最优选的是,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂:将灭菌后的乳脂注入灭菌后的脱脂乳中,得到混合乳;再经3mm孔径膜过滤,预热后经超高温瞬时灭菌,冷却后加入其它原料混合均质;
(4)得到灭菌后液态奶,在无菌条件下包装即得所述的配方液态奶。
所述超高温瞬时灭菌(UHT,又称超级巴斯德灭菌法)的条件优选是136度、3秒。
所述无菌条件下包装优选为氮气条件下包装。
本发明得到的四段配方液态奶尤其适用于36-72月龄婴幼儿。具有以下技术效果:
(1)采用全脂生牛乳,严格控制奶源,保证蛋白质含量为较高标准,最大限度保留营养物质。以生牛乳为基础原料,利用制备方法工艺可最大程度将生牛乳与各种营养添加物混合均匀,同时也最大程度降低了超高温热处理引起营养成分变化的可能性,产品在颜色、溶解性、气味及蛋白质消化性等方面的表现,比复原乳、奶粉为原料生产的配方奶更优异。
(2)生牛乳含量高,高达94%以上,且工艺严格,保留营养物质充分,再通过添加适量营养物料辅加营养,使得营养更为丰富,易吸收,能全面满足4段幼儿成长。专门针对4段(36-72个月)的幼儿成长所需的营养,易吸收,能全面促进4段的幼儿成长。
具体实施方式
下面通过实施例来进一步说明本发明的技术方案。
实施例1:
一种用于婴幼儿的四段配方液态奶,其由以下重量百分比(%)的原料调配制成:
全脂生牛乳 | 97.109 |
脂肪酸蔗糖酯 | 0.05 |
菊粉 | 2.0 |
蔗糖 | 0.75 |
卡拉胶 | 0.03 |
抗坏血酸钠 | 0.03 |
DHA藻油 | 0.02 |
维生素E | 0.01 |
维生素D3 | 0.001 |
本实施例的全脂生牛乳优选奶源,要求蛋白质含量高于等于每100ml含2.3克。根据实际情况,选择来自法国奶制品集团COOPERATIVE AGRICOLE LAITIERE LES MAITRESLAITIERS DU COTENTIN(简称”MLC”)的奶牛牧场,其牧场遵守自然生态散养的原则,一公顷(15亩)养一头牛,科学饲养。对奶源严格把控质量,对牧场环境、牛棚卫生、动物健康、牛奶收集与运输都有系统的规范及管理。每48小时收集一次牛奶作为本实施例的奶源供应,保证了制作配方液态奶的营养来源可靠。
本实施例的用于婴幼儿的四段配方液态奶的制备方法,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂:将灭菌后的乳脂注入灭菌后的脱脂乳中,得到混合乳;再经3mm孔径膜过滤,预热后经超高温瞬时灭菌136度、3秒,冷却后加入其它原料均质、酶促;
(4)得到灭菌后液态奶,在无菌氮气条件下包装即得所述的用于婴幼儿的四段配方液态奶。
本实施例的用于婴幼儿的四段配方液态奶优选奶源,具有最大限度保留营养物质、添加营养物料丰富、易吸收、制作工艺复杂、灭菌工艺标准严格的技术效果。经检测其营养成分完全适用于婴幼儿的营养需求。
贮存条件:贮存于阴凉干燥处。开封后,冷藏后请于3天内饮用。
使用说明:打开包装前需摇匀。在室温加热后饮用。若加热,需用温奶器加热,但是加热温度不高于40℃。将奶倒入干净的容器中饮用,或将吸管从包装上部插入后直接饮用。

本实施例的液态奶配方用量与实施例1稍有区别,具体见下表,其他与实施例1一致。

Claims (9)
1.一种用于婴幼儿的四段配方液态奶,其特征在于,由以下重量百分比的原料调配制成:全脂生牛乳94-98,脂肪酸蔗糖酯0.009-0.06,菊粉1.4-2.6,蔗糖0.5-1,卡拉胶0.009-0.04,抗坏血酸钠0.01-0.05,DHA藻油0.009-0.03,维生素E 0.004-0.02,维生素D30.0006-0.001;
其中所述全脂生牛乳的蛋白质含量高于等于每100ml含2.3克。
2.根据权利要求1所述的用于婴幼儿的四段配方液态奶,其特征在于,还包含适量的加工助剂。
3.根据权利要求1所述的用于婴幼儿的四段配方液态奶,其特征在于,所述加工助剂是氢氧化钾0.01-0.04。
4.权利要求1-3任一项所述的用于婴幼儿的四段配方液态奶的制备方法,其特征在于,包括步骤:
(1)全脂生牛乳经采收验收合格后,经1mm孔径膜过滤,冷却后预热、脱脂;
(2)分别得到乳脂和脱脂乳:其中乳脂经巴氏灭菌、冷却后贮存备用;脱脂乳经巴氏灭菌、冷却后贮存备用;
(3)回注乳脂:将灭菌后的乳脂注入灭菌后的脱脂乳中,得到混合乳;再经3mm孔径膜过滤,预热后经超高温瞬时灭菌,冷却后加入其它原料混合均质;
(4)得到灭菌后液态奶,在无菌条件下包装即得所述的四段配方液态奶。
5.根据权利要求4所述的制备方法,其特征在于,所述超高温瞬时灭菌的条件是136度、3秒。
6.根据权利要求4所述的制备方法,其特征在于,所述无菌条件下包装为氮气条件下包装。
7.权利要求4-6任一项所述的制备方法制备得到的四段配方液态奶。
8.权利要求1-3任一项所述的四段配方液态奶用于36-72月龄婴幼儿。
9.权利要求7所述的四段配方液态奶用于36-72月龄婴幼儿。
