玉米是一年生禾本科草本植物,是重要的粮食作物和重要的饲料来源,也是全世界总产量最高的粮食作物。素有长寿食品的美称,含有丰富的蛋白质、脂肪、维生素、微量元素、纤维素及多糖等,具有开发高营养、高生物学功能食品的巨大潜力。目前,玉米不仅是人类粮食的主要来源,已成为一种热门的保健食品,经常出现于餐桌上,并风靡曾经以食物精细著称的欧美世界。膳食纤维对人体的作用很多:1、辅助消化:膳食纤维被肠道细菌分解,产生酸性物质,促进胃肠蠕动,刺激消化液的分泌,具有辅助消化功能。2、通便:能吸附从体外进入的有害物质和体内制造出的有害物质,吸收并保持大量的水分,使粪便的体积增大,并可促进肠道蠕动,提高人体的排便功能,减少因排便不畅而引起的疾病。3、预防压挤病:肠内过分干结的粪便存留,会导致盲肠炎、痔疮等挤压病的形成,合理地食用膳食纤维,可有效地预防这类挤压病的发生。4、防癌:动物性的食物缺乏膳食纤维,肠内厌氧菌在未消化的残渣中大量繁殖,可产生促癌的有害物质。另外,可致癌的有害物质在肠道中与肠粘膜接触过久,容易诱发结肠癌。膳食纤维有促进排便的功能,可将这些有害物质随粪便及时排出体外,预防癌症的发生。5、防治高血压、糖尿病:膳食纤维与脂类、胆酸盐粘合在一起,通过粪便排出,减少了血液中甘油三酯和胆固醇的水平;膳食纤维可延缓葡萄糖的吸收,并推迟消化糖在小肠的出现,膳食纤维减轻了胰岛素的负担,使餐后血糖处于平稳状态,对糖尿病有稳定作用。6、预防肥胖:膳食纤维不被人体所消化吸收,热量极低,同时可增加肠胃的饱腹感,有助于预防过多的食物摄入,对控制体重有作用。7、能吸附某些添加剂、农药、等化学物质,对健康有利。玉米作物中含有大量的不溶性膳食纤维,但是可溶性膳食纤维的含量却是极低的,对于糖尿病患者来说还是无法大量食用。

(1)将步骤四中预处理后的玉米棒用定位器固定住,并利用注射器抽取纤维液,注射在玉米棒的孔中,且防止在-10~-1℃下冷冻;
步骤六:包装密封
(1)将步骤五中的玉米棒放入密封袋中进行密封;
步骤七:蒸煮
(1)将密封后的玉米放入122~125℃的蒸煮28~60min,制得即食型膳食纤维玉米。
优选的,在步骤一中,加入水和果胶裂解酶混合后并水浴加热到40~50℃,并保持1~3h。
优选的,磨成料浆的原料粒度为130~135目,料浆放入自动提料脱水机经过循环粗洗、破碎清洗和漂洗两遍之后得到料浆渣。
优选的,在步骤二中,将燕麦和黄豆先放入粉碎机中先打磨至80~95目后倒出备用,然后向粉碎机中加入去皮的柑橘果肉,并过滤掉多余的果肉,同时将燕麦黄豆粉放入柑橘汁中混合,最后向混合物中加入牛奶和适量的食用胶混合,并静置,得到混合液。
优选的,在步骤四中,打孔机在玉米棒上横向打3个,纵向打两个孔。
本发明的有益技术效果:按照本发明的即食型膳食纤维玉米及其加工方法,将玉米棒打孔并向玉米棒中注入不溶性膳食纤维,当玉米棒密封蒸熟加热时不溶性膳食纤维加热融化后渗透进玉米内,能够增加玉米的不溶性膳食纤维的含量,能够满足糖尿病病人想吃玉米的愿望,同时也不会影响身体健康;在不溶性膳食纤维内添加柑橘和牛奶既能增加玉米的口味和蛋白质的含量,使玉米的营养成份更加的丰富。
具体实施方式
为使本领域技术人员更加清楚和明确本发明的技术方案,下面结合实施例对本发明作进一步详细的描述,但本发明的实施方式不限于此。
本实施例提供的一种即食型膳食纤维玉米,包括主料:玉米棒、玉米副产物和马铃薯;辅料:燕麦、黄豆、柑橘、牛奶和食用胶。主料:玉米棒50~80份、玉米副产物100~150份和马铃薯50~80份;辅料:燕麦10~20份、黄豆10~20份、柑橘10~20份、牛奶50~80份和食用胶30~60份,将玉米棒打孔并向玉米棒中注入不溶性膳食纤维,当玉米棒密封蒸熟加热时不溶性膳食纤维加热融化后渗透进玉米内,能够增加玉米的不溶性膳食纤维的含量,能够满足糖尿病病人想吃玉米的愿望,同时也不会影响身体健康;在不溶性膳食纤维内添加柑橘和牛奶既能增加玉米的口味和蛋白质的含量,使玉米的营养成份更加的丰富。
一种即食型膳食纤维玉米的加工方法,包括如下步骤:制取不溶性碳纤维粉、制取混合液、纤维液的预制、玉米棒预处理、纤维液的注入、包装密封和蒸煮。
加工方法包括如下步骤:
步骤一:制取不溶性碳纤维粉
(1)将玉米副产物和马铃薯中放入碘酸钾水溶液中浸泡后捞出粉碎,碘酸钾能够保持玉米副产物和马铃薯的新鲜性,玉米副产物是指玉米瓤和玉米皮;
(2)加入水和果胶裂解酶混合并磨成料浆;
(3)将料浆放入脱水机脱水和洗涤,并重复脱水和洗涤2~3次,得到料浆渣,玉米是指黑玉米、糯玉米和黄玉米;
(4)将料浆渣放置在烘干机中烘干,并磨成粉,制备不溶性纤维粉;
步骤二:制取混合液
(1)取适量的燕麦、黄豆和柑橘加入粉碎机中混合粉碎,燕麦中含有极其丰富的亚油酸,对脂肪肝、糖尿病、浮肿、便秘等也有辅助疗效,对老年人增强体力,黄豆含有大量的蛋白质,能够提供满足人体的营养成份,柑橘含有类黄酮、单萜、香豆素、类胡萝卜素、类丙醇、吖啶酮和甘油糖脂质;
(2)将粉碎后的混合物中加入牛奶和适量的食用胶混合,并静置,得到混合液;
步骤三:纤维液的预制
(1)在不溶性纤维粉中加入混合液,并加热到40~55℃,并保温,制得纤维液;
步骤四:玉米棒预处理
(1)将玉米棒清洗后,利用打孔机在玉米棒上打多个孔;

本实施例提供的一种即食型膳食纤维玉米及其加工方法的制备过程如下:
步骤一:将玉米副产物和马铃薯中放入碘酸钾水溶液中浸泡后捞出粉碎;加入水和果胶裂解酶混合后并水浴加热到40~50℃,并保持1~3h,磨成料浆的原料粒度为130~135目,料浆放入自动提料脱水机经过循环粗洗、破碎清洗和漂洗两遍之后得到料浆渣;将料浆渣放置在烘干机中烘干,并磨成粉,制备不溶性纤维粉;

综上所述,在本实施例中,按照本实施例的即食型膳食纤维玉米及其加工方法,将玉米棒打孔并向玉米棒中注入不溶性膳食纤维,当玉米棒密封蒸熟加热时不溶性膳食纤维加热融化后渗透进玉米内,能够增加玉米的不溶性膳食纤维的含量,能够满足糖尿病病人想吃玉米的愿望,同时也不会影响身体健康;在不溶性膳食纤维内添加柑橘和牛奶既能增加玉米的口味和蛋白质的含量,使玉米的营养成份更加的丰富,燕麦中含有极其丰富的亚油酸,对脂肪肝、糖尿病、浮肿、便秘等也有辅助疗效,对老年人增强体力,黄豆含有大量的蛋白质,能够提供满足人体的营养成份,柑橘含有类黄酮、单萜、香豆素、类胡萝卜素、类丙醇、吖啶酮和甘油糖脂质。

Claims (8)
1.一种即食型膳食纤维玉米,其特征在于,包括主料:玉米棒、玉米副产物和马铃薯;辅料:燕麦、黄豆、柑橘、牛奶和食用胶。
2.如权利要求1所述的一种即食型膳食纤维玉米,其特征在于,所述主料:玉米棒50~80份、玉米副产物100~150份和马铃薯50~80份;辅料:燕麦10~20份、黄豆10~20份、柑橘10~20份、牛奶50~80份和食用胶30~60份。
3.一种即食型膳食纤维玉米的加工方法,其特征在于,包括如下步骤:制取不溶性碳纤维粉、制取混合液、纤维液的预制、玉米棒预处理、纤维液的注入、包装密封和蒸煮。
4.如权利要求3所述的一种即食型膳食纤维玉米的加工方法,其特征在于,加工方法包括如下步骤:
步骤一:制取不溶性碳纤维粉
(1)将玉米副产物和马铃薯中放入碘酸钾水溶液中浸泡后捞出粉碎;
(2)加入水和果胶裂解酶混合并磨成料浆;
(3)将料浆放入脱水机脱水和洗涤,并重复脱水和洗涤2~3次,得到料浆渣;
(4)将料浆渣放置在烘干机中烘干,并磨成粉,制备不溶性纤维粉;
步骤二:制取混合液
(1)取适量的燕麦、黄豆和柑橘加入粉碎机中混合粉碎;
(2)将粉碎后的混合物中加入牛奶和适量的食用胶混合,并静置,得到混合液;
步骤三:纤维液的预制
(1)在不溶性纤维粉中加入混合液,并加热到40~55℃,并保温,制得纤维液;
步骤四:玉米棒预处理
(1)将玉米棒清洗后,利用打孔机在玉米棒上打多个孔;
步骤五:纤维液的注入
(1)将步骤四中预处理后的玉米棒用定位器固定住,并利用注射器抽取纤维液,注射在玉米棒的孔中,且防止在-10~-1℃下冷冻;
