本发明提供一种皮蛋腌制剂及其制备方法,使用天然植物原料加入腌制剂中进行皮蛋加工,使皮蛋具有箬竹的清香味。腌制剂中含有:箬竹叶3.5%-4.5%、生石灰13.5%-14.5%、食用纯碱3.8%-4.2%、食用盐3.8%-4.2%、其余为水。本发明具有的有益效果是皮蛋具有在口感上比传统的皮蛋更鲜、生津、无腥味、具有箬竹的清香味、清凉的感觉。

本发明涉及食品制备领域,具体是一种皮蛋腌制剂及其制备方法。
背景技术
皮蛋是人们爱吃的一种菜肴,随着人民生活水平的提高皮蛋的品种也逐渐多起来,加工也伴随着科技进步逐步从有泥有铅向无泥无铅方向发展。以后又有了含铁补血皮蛋、含锌皮蛋等,这些皮蛋通过加铁、锌元素使皮蛋的营养成分有所增加。
传统的皮蛋加工方法是用食盐、生石灰、碱、粘土、黄丹粉、水配成稠料,将蛋包严密封20天后,取出滚上一层稻糠晾晒15天,最后贮藏10天才可成熟。这种工艺生产皮蛋,时间长、易臭蛋、易破碎且劳动强度大,含铅量高。
发明内容
本发明的目的是提供一种皮蛋腌制剂及其制备方法,使用天然植物原料加入腌制剂中进行皮蛋加工,使皮蛋具有植物的清香味。
本发明皮蛋的腌制剂含有:箬竹叶3.5%-4.5%、生石灰13.5%-14.5%、食用纯碱3.8%-4.2%、食用盐3.8%-4.2%、其余为水。
本发明皮蛋的腌制剂最佳配方比例含有:箬竹叶4%、生石灰14%、食用纯碱4%、食用盐4%、其余为水。腌制剂用水为开水。
本发明具有的有益效果是皮蛋具有在口感上比传统的皮蛋更鲜、生津、无腥味、具有箬竹的清香味、清凉的感觉。

实施例1
按最佳配方比例箬竹叶4千克、生石灰14千克、食用纯碱4千克、食用盐4千克、生姜0.13千克、分析纯硫酸铜0.33千克、干柴灰4千克、加开水至总量100千克。将配置好的腌制剂100千克中加入100千克左右的鸭蛋,腌制30天-40天即可食用。

2.按照权利要求1所述的皮蛋的腌制剂,其特征在于最佳配方比例含有:箬竹叶4%、生石灰14%、食用纯碱4%、食用盐4%、其余为水。
