本发明公开了一种莼菜饮料及其制备方法,其特征在于:包括莼菜水提取液。所述莼菜提取液为将新鲜粉莼菜,捣碎后采用微波杀青,微波加热,强机械搅拌,超声波分散,经离心、过滤处理后,经过浓缩得到莼菜提取液。本发明莼菜采用微波杀青,因微波具有穿透强、升温快、加热均匀等特点,可快速钝化莼菜中酶类活性,最大限度地保留莼菜中活性物质的含量。生产的莼菜饮料,最大限度的保持莼菜的天然活性,含有丰富的胶原蛋白、活性多糖、维生素和微量元素等营养成分,具有清热解毒、杀菌消炎、降三高、防癌抗癌的作用,以及提高人体免疫力的功效,是一种适合各年龄段的大众化保健饮料。

本发明涉及一种饮料,特别是涉及一种以天然莼菜作为主要原料的莼菜保健饮料。
背景技术
莼菜,又名马蹄菜、湖菜,属睡莲科是一种多年的野生浮叶植物,叶子呈椭圆形、深绿色,背面分泌出一种类似琼脂的粘液,含有丰富的蛋白质、葡萄糖、碳水化合物、脂肪、多种维生素和矿物质等多种成份,不仅是风味独特的珍贵蔬菜,而且有清热、润肺、利尿、消肿、解毒、健胃、止泻、降血糖等功效,是一种药食两用的保健作用。目前对莼菜的利用只是进行了初级加工,制备成简易罐头,销往全国及出口日本、韩国等地。目前为止,但还未对莼菜进行深加工,制造高附加值的产品。现阶段莼菜产业发展存在的主要问题:管理粗放、科技含量低、未形成自身独特的莼菜文化等。因此,开发廉价高效的高附加值莼菜产品是亟待解决的关键问题。
目前,将莼菜加工成莼菜饮料逐渐引起人们的重视,但是目前公布的大多数发明专利是将莼菜经过杀青,然后将莼菜长时间高温处理杀菌处理,破坏了莼菜的营养价值。
发明内容
针对现有的问题,本发明的目的在于提供一种天然莼菜饮料,充分用莼菜的有效成分,能起到有效清热解渴、杀菌消毒、补中益气的的效果。为了实现上述目的,本发明的即使方案为:一种天然莼菜饮料,其特征在于:包含莼菜水提取液成分。
技术方案:本发明公开的一种天然莼菜饮料,所述的莼菜饮料由以下原料按重量百分比制成莼菜水提取液5-60%,枸杞汁1-10%,甘草汁0.1-10%,薄荷醇0.0001-0.1%,蜂蜜0.5-15%,山梨酸钾0.01-2%,果糖浆0.1-10%,单晶冰糖0.1-10%,六偏磷酸钠0.01-1%,然后纯化水补充至100%。
所述莼菜提取液具体制备:
(1)选材:将当天采摘精选后的新鲜嫩芽莼菜,除杂、洗涤、过滤掉水后
(2)微波杀青:加入纯水中,莼菜与水重量比为1-5:1捣碎,采用微波杀青,微波加热至50-95℃范围同时加强搅拌,超声波分散;
(3)过滤:经过0.1-120分钟后离心后,真空抽滤,获得莼菜提取液。
(4)混料:将莼菜提取液与甘草汁、枸杞汁等经超声波或机械搅拌均匀混合,3000r/min离心处理,取上清液,然后采用柠檬酸调节pH值至4。
(5)灭菌处理:采用脉冲微波杀菌处理,温度为70-110℃,0.1-0.5MPa压强脉冲微波灭菌,处理时间为1-10000S。
同时,莼菜老叶和茎、根含有更多的锌元素,因此可以优化为含锌丰富的莼菜提取液,具体制备为:
(1)选材:将当天采摘精选后的新鲜莼菜老叶、茎秆和根,除杂、洗涤、过滤掉水后
(2)微波杀青:加入纯水中,莼菜与水重量比为1-5:1捣碎,采用微波杀青,微波加热至50-95℃范围同时加强搅拌,超声波分散;
(3)过滤:经过0.1-120分钟后离心后,真空抽滤,获得莼菜提取液。
(4)混料:将莼菜提取液与甘草汁、枸杞汁等经超声波或机械搅拌均匀混合,3000r/min离心处理,取上清液,然后采用柠檬酸调节pH值至4。
(5)灭菌处理:采用脉冲微波杀菌处理,温度为70-110℃,0.1-0.5MPa压强脉冲微波灭菌,处理时间为1-10000S。

所述莼菜水提取液采用微波脉冲杀菌经过70-110℃温度和0.1-0.5MPa压强高温脉冲微波灭菌,杀菌时间为1-1000S,得到的莼菜原汁。所述微波杀青采用的微波频率为:2450±50MHz。所述微波杀菌、保鲜是微波热效应和非热效应共同作用的结果。微波杀菌温度低于常规方法,所需温度低,时间短,可以最大限度保留了莼菜中营养物质。
本发明天然莼菜饮料,相对现有技术,具有如下特点:
(1)具有清热解毒、杀菌消炎、补中益气的功效,由于莼菜的透明胶质层中含有多种营养物质及多缩戊糖,具有较好清热解毒作用,能抑制细菌的生长,并且还具有防癌抗癌,对癌毒的活化性具有较强的抑制作用;
(2)莼菜中含有丰富的锌,是儿童较佳的益智健体食品,可以防止小儿多动症,同时含有硒、富含氨基酸等,是一种较好的免疫促进剂,可以增强机体的免疫功能,预防疾病;
(3)生产过程采用微波杀青和灭菌处理,最大限度保留莼菜的原有风味和营养价值;
(4)制备莼菜饮料过程简单方便,容易进行产业化。

一种天然莼菜饮料,包含重量百分数的以下组分:
莼菜水提取液30%,枸杞汁2%,甘草汁1%,薄荷醇0.001%,蜂蜜2%,山梨酸钾0.5%,果糖浆3%,单晶冰糖2%,六偏磷酸钠0.05%,然后纯化水补充至100%。
本发明不局限于上述实施例,应当理解,本领域的普通技术人员无需创造性劳动就可以根据发明的构思做出诸多修改和变化。因此,凡本技术领域中技术人员依本发明的构思在现有技术的基础上通过逻辑分析、推理或者有限的实验可以得到的技术方案,皆应在有权利要求书所确定的保护范围内。
Claims (5)
1.一种莼菜保健饮料及其制备方法,其特征在于:包含莼菜提取液。
2.根据权利要求1所述莼菜保健饮料,包含重量百分比的以下组分:
莼菜水提取液5-60%,枸杞汁1-10%,甘草汁0.1-10%,蜂蜜0.5-15%,然后纯化水补充至100%。
3.根据权利要求1所述莼菜保健饮料,包含重量百分比的以下组分:
莼菜水提取液5-60%,枸杞汁1-10%,甘草汁0.1-10%,蜂蜜0.5-15%,薄荷醇0.0001-0.1%,山梨酸钾0.01-2%,果糖浆0.1-10%,单晶冰糖0.1-10%,六偏磷酸钠0.01-1%,然后纯化水补充至100%。
4.根据权利要求1-3任一所述莼菜保健饮料,其特征在于所述莼菜提取液具体制备步骤:
(1)选材:将当天采摘精选后的新鲜嫩芽莼菜,除杂、洗涤、过滤掉水;
(2)微波杀青:加入纯水中,莼菜与水重量比为1-5:1捣碎,采用微波杀青,微波加热至50-95℃范围同时加强搅拌,超声波分散,微波频率为:2450±50MHz;
(3)过滤:经过0.1-120分钟后离心后,真空抽滤,获得莼菜提取液;
(4)混料:将莼菜提取液与甘草汁、枸杞汁等经超声波或机械搅拌均匀混合,3000r/min离心处理,取上清液,然后采用柠檬酸调节pH值至4;
(5)灭菌处理:采用脉冲微波杀菌处理,温度为70-110℃,处理时间为1-10000S。
5.根据权利要求1-3任一所述莼菜保健饮料,可以优化成含锌更加丰富的莼菜提取液,具体制备为:
(1)选材:将当天采摘精选后的新鲜莼菜老叶、茎秆和根,除杂、洗涤、过滤掉水;
(2)微波杀青:加入纯水中,莼菜与水重量比为1-5:1捣碎,采用微波杀青,微波加热至50-95℃范围同时加强搅拌,超声波分散,微波频率为:2450±50MHz;
(3)过滤:经过0.1-120分钟后离心后,真空抽滤,获得莼菜提取液;
(4)混料:将莼菜提取液与甘草汁、枸杞汁等经超声波或机械搅拌均匀混合,3000r/min离心处理,取上清液,然后采用柠檬酸调节pH值至4;
(5)灭菌处理:采用脉冲微波杀菌处理,温度为70-110℃,0.1-0.5MPa压强脉冲微波灭菌,处理时间为1-10000S。
