本发明提供了一种复合果浆,其由以下重量份的组分制成:海洋鱼低聚肽4‑5份,核桃多肽0.6‑0.9份,牡蛎肽0.6‑1份,水果浓缩汁30‑40份,r氨基丁酸(GABA)1‑1.5份,白蛋白肽0.5‑1份,茯苓粉0.9‑1.2份,酸枣仁1份,水50‑60份,山梨酸钾0.5‑1份。本发明还提供了该复合果浆的制备方法。本发明提供的复合果浆具有丰富的营养成分,对人体健康具有多种有益功效。

技术领域
本发明涉及一种果浆,特别是涉及一种复合果浆及其制备方法。
背景技术
果浆是指用水果或水果的可食用部分经打浆工艺制得的含汁液、未发酵的浆状产品,或在浓缩果浆中加入该种原果浆在浓缩过程中失去的天然等量水分所得的产品,如香蕉原浆、芒果原浆等。果浆作为休闲食品及软饮料的原料取得了空前的成功。
果浆可以作为软饮料的原料,也可以用来制作调味用的沙司、果酱等食品,还可以用来制酒,甚至可以直接用来制作果味蛋糕、夹心巧克力、果味冰淇淋等,因此广受年轻人喜爱的休闲食品。除了作为食品及软饮料的原料外,果浆还可以用来生产壁纸、制造洗发水、沐浴露等,用途相当广泛。
中国专利申请CN200910111291.0公开了“一种水果浆的制备与提取方法”,属于食品中的水果浆,配料与配比为:新鲜水果85~90%;果胶酶10~15%,所述的水果为青梅果,李果和桃果其中的一种或三种及任意两种的混合作为主原料。该发明的酶解工艺为:首先将新鲜水果洗净晾干,消毒,然后将上述水果放入储存罐内,一层水果洒一层果胶酶,逐层安放,储存罐装满后密封,酶解30天至60天,提取酶解的果实,经过搅拌机搅拌分离,去之果核和果渣便成果浆,可以食用也可以作为食品加工原料。该发明存在的缺陷是营养和功效不够丰富。
发明内容
本发明要解决的技术问题是提供一种复合果浆,其具有丰富的营养成分,对人体健康具有多种有益功效。
为解决上述技术问题,本发明的技术方案是:
一种复合果浆,其由以下重量份的组分制成:海洋鱼低聚肽4-5份,核桃多肽0.6-0.9份,牡蛎肽0.6-1份,水果浓缩汁30-40份,r氨基丁酸(GABA)1-1.5份,白蛋白肽0.5-1份,茯苓粉0.9-1.2份,酸枣仁1份,水50-60份,山梨酸钾0.5-1份。
进一步地,本发明所述水果浓缩汁由等质量的美国野樱莓(不老莓)浓缩汁、美国蓝莓浓缩汁、美国波森莓浓缩汁、美国蔓越莓浓缩汁组成。
进一步地,本发明所述水果浓缩汁的制备步骤为:
将各水果原料洗净后去皮,用粉碎机粉碎至60目得到水果肉粉,将水果肉粉加入螺杆式榨汁机中榨汁得到水果原汁,将水果原汁送入离心机中,1350rpm转速下离心5分钟得到水果汁,将水果汁60℃下巴氏杀菌后用真空浓缩系统浓缩即得。
进一步地,本发明所述水为纯净水。
进一步地,本发明所述茯苓粉的制备步骤为:
将茯苓放入药材粉碎机中粉碎至30目,60℃下干燥2小时后得到茯苓粉。
进一步地,本发明所述酸枣仁的制备步骤为:
将酸枣放入药材粉碎机中粉碎至30目,60℃下干燥2小时后得到酸枣粉,将酸枣分加入10倍重量的0.6%质量浓度的纤维素酶溶液中,调节pH值至6后加热至55℃,搅拌提取55分钟后得到提取液,将提取液过滤后得到滤液,将滤液真空浓缩干燥后得到酸枣仁。
本发明要解决的另一技术问题是提供上述复合果浆的制备方法。
为解决上述技术问题,技术方案是:
一种复合果浆的制备方法,包括以下步骤:
按重量份称取各组分,将水果浓缩汁加入搅拌器中,加热至40℃后搅拌8分钟,然后将其余组分加入搅拌器中,40℃下搅拌12分钟得到混合液,将混合液加入均质机中25MPa压力下均质后取出,60℃下巴氏杀菌后得到复合果浆。
与现有技术相比,本发明具有以下有益效果:
(1)海洋鱼低聚肽营养丰富,含有人体所需的胶原蛋白,具有人体需要胶原蛋白、保护血管、保护眼睛、呵护骨骼等有益功效。
(2)白蛋白肽人体血浆中的一种功能大分子蛋白质,是维持血浆渗透压、增加血容量,提供平衡氨基酸的重要成分,是人体不可或缺的营养物质,具有恢复肝脏功能、增强抗病能力、提高机体的细胞免疫功能等有益功效。
(3)核桃多肽富含含有丰富的谷氨酸及人体必需的18种氨基酸,具有防止记忆力减退、缓解脑部神经紧张、紊乱状态,更容易入睡等有益功效。
(4)牡蛎肽富含维生素B12、丰富的牛黄酸、微量元素和糖元及多种优良的氨基酸,具有抑制血小板聚集作用、保肝利胆、有利于钙的吸收等有益功效。
(5)美国野樱莓(不老莓)浓缩汁含有丰富的维生素、矿物质、抗氧化物和一些其他重要的多酚类物质,具有抗氧化、降血脂血压、增强免疫力等有益功效。
(6)美国蓝莓浓缩汁富含VE、VA、VB、SOD、熊果苷、蛋白质、花青苷、食用纤维以及丰富的K、Fe、Zn、Ca等矿质元素,具有保护视力、抗氧化、降血脂、增强心脑功能、增强免疫力等有益功效。
(7)美国蔓越莓浓缩汁具有抗氧化、抑菌抗炎、改善肠道功能、减少心血管老化病变、保健美容等有益功效。
(8)波森莓浓缩汁(美国)含有的多酚和花青素,具有可抑制血液和淋巴管血管功能障碍,并有助于维持血管的稳定性等有益功效。
(9)r氨基丁酸(GABA)是一种天然存在的非蛋白质功能性氨基酸,一种天然活性等营养成分,具有抗焦虑、抑郁、改善睡眠、提高脑活力、改善记忆等有益功效。
(10)酸枣仁富含含多量脂肪油和蛋白质,并含甾醇、三萜类、酸枣仁皂甙、多量维生素C等营养成分,具有有镇静、催眠、镇痛、抗惊厥等有益功效。
(11)茯苓粉富含有硬烷、纤维素、含多种矿物质元素等营养成分,具有利水消肿、提高人体免疫力、心悸失眠功能等有益功效。

下面将结合具体实施例来详细说明本发明,在此本发明的示意性实施例及其说明用来解释本发明,但并不作为对本发明的限定。
实施例1-4
按照表1比例(以重量份数计)制备复合果浆:

其中,水果浓缩汁由等质量的美国野樱莓(不老莓)浓缩汁、美国蓝莓浓缩汁、美国波森莓浓缩汁、美国蔓越莓浓缩汁组成。水果浓缩汁的制备步骤为:
将各水果原料洗净后去皮,用粉碎机粉碎至60目得到水果肉粉,将水果肉粉加入螺杆式榨汁机中榨汁得到水果原汁,将水果原汁送入离心机中,1350rpm转速下离心5分钟得到水果汁,将水果汁60℃下巴氏杀菌后用真空浓缩系统浓缩即得。
实施例1-4的制备方法包括以下步骤:
(1)将茯苓放入药材粉碎机中粉碎至30目,60℃下干燥2小时后得到茯苓粉。
(2)将酸枣放入药材粉碎机中粉碎至30目,60℃下干燥2小时后得到酸枣粉,将酸枣分加入10倍重量的0.6%质量浓度的纤维素酶溶液中,调节pH值至6后加热至55℃,搅拌提取55分钟后得到提取液,将提取液过滤后得到滤液,将滤液真空浓缩干燥后得到酸枣仁。
(3)按重量份称取各组分,将水果浓缩汁加入搅拌器中,加热至40℃后搅拌8分钟,然后将其余组分加入搅拌器中,40℃下搅拌12分钟得到混合液,将混合液加入均质机中25MPa压力下均质后取出,60℃下巴氏杀菌后得到复合果浆。

对比例是申请号为CN200910111291.0的中国专利的实施例1。
实验例一:抗氧化性能测试
通过FRAP法测定实施例1-4、参比实施例1-7、对比例的总抗氧化能力,总抗氧化能力的数值越高表明抗氧化性能越好,测试结果如表2所示:

由表2可看出,本发明实施例1-4的总抗氧化能力均明显高于对比例,表明本发明具有较好的抗氧化性能,其中实施例4的抗氧化性能最好。参比实施例1-6的部分组分与实施例4不同,其中参比实施例1-3、5-6的总抗氧化能力均降低不少,说明美国野樱莓(不老莓)浓缩汁、美国蓝莓浓缩汁、美国波森莓浓缩汁、美国蔓越莓浓缩汁均能有效提高抗氧化性能;参比实施例6的总抗氧化能力的降幅比参比实施例1-3、5-6小,说明茯苓粉能有效提高各组分在水中的分散性。
实验例二:降血脂效果测试
测试方法为:选取144名成人空腹12小时血清总胆固醇TC>5.72mmol·L-1的高脂血症患者,平均分成12组,每组患者分别每天食用实施例1-4、参比实施例1-6、对比例两次,每次6g,6周后观察患者的临床疗效:(1)显效:TC降幅≥20%;(2)有效:TC降幅为10-20%;(3)无效:TC降幅小于10%。计算出降血脂有效率,降血脂有效率=(显效+有效)的患者数/患者总数×100%,测试结果如表3所示:

实验例三:肠道功能改善测试
测试方法为:选取144名年龄段为21-70岁的十二指肠溃疡患者,病程2-9年,平均分成12组,每组患者分别每天食用实施例1-4、参比实施例1-6、对比例两次,4周后观察患者的临床情况:(1)治愈:溃疡及周围炎性反应完全消失;(2)显效:溃疡消失,周围仍有炎性反应;(3)有效:溃疡面积缩小50%以上;(4)无效:溃疡面积缩小50%以下。计算出肠道功能改善有效率,肠道功能改善有效率=(治愈+显效+有效)的患者数/患者总数×100%,测试结果如表4所示:

实验例四:排毒养颜效果测试
测试方法为:选取144名年龄段为21-70岁的黄褐斑患者,平均分成12组,每组患者分别每天食用实施例1-4、参比实施例1-6、对比例两次,4周后观察患者的临床情况:(1)治愈:黄褐斑基本消失;(2)有效:只留有少部分黄褐斑;(3):黄褐斑无明显变化。计算出排毒养颜有效率,排毒养颜有效率=(治愈+显效+有效)的患者数/患者总数×100%,测试结果如表5所示:

实验例五:分散性测试
测试方法为:将实施例1-4、参比实施例1-6、对比例500rpm转速下搅拌30分钟,静置1小时后观察果浆情况,测试结果如表6所示:

由表6可看出,本发明实施例1-4在水中具有较好的分散性。参比实施例1-6的部分组分与实施例4不同,其中,参比实施例1-5在水中的分散性与实施例1-4一样,说明水果浓缩汁对分散性没有影响;参比实施例6在水中的分散性比实施例1-4差,说明茯苓粉是提高果浆在水中的分散性的关键。

1.一种复合果浆,其特征在于:其由以下重量份的组分制成:海洋鱼低聚肽4-5份,核桃多肽0.6-0.9份,牡蛎肽0.6-1份,水果浓缩汁30-40份,r氨基丁酸(GABA)1-1.5份,白蛋白肽0.5-1份,茯苓粉0.9-1.2份,酸枣仁1份,水50-60份,山梨酸钾0.5-1份。
2.根据权利要求1所述的一种复合果浆,其特征在于:所述水果浓缩汁由等质量的美国野樱莓(不老莓)浓缩汁、美国蓝莓浓缩汁、美国波森莓浓缩汁、美国蔓越莓浓缩汁组成。
3.根据权利要求2所述的一种复合果浆,其特征在于:所述水果浓缩汁的制备步骤为:

将酸枣放入药材粉碎机中粉碎至30目,60℃下干燥2小时后得到酸枣粉,将酸枣分加入10倍重量的0.6%质量浓度的纤维素酶溶液中,调节pH值至6后加热至55℃,搅拌提取55分钟后得到提取液,将提取液过滤后得到滤液,将滤液真空浓缩干燥后得到酸枣仁。
7.一种权利要求1~5任意一项所述的复合果浆的制备方法,其特征在于:包括以下步骤:
