背景技术
随着社会经济的不断发展,人民群众的生活水平日益提高,膳食结构也越来越精细化。然而,营养能量的过度摄入和不规律的饮食习惯,使很多人患上了如肥胖症、高血压、糖尿病、冠心病等“现代病”。膳食纤维是一种不能被人体胃肠道消化吸收、也不能产生能量的多糖,但因其有着重要的生理功能,被营养学界认定为第七类营养素。
根据其溶解特性的不同,膳食纤维可被划分为水溶性膳食纤维和水不溶性膳食纤维,其中水溶性膳食纤维主要为果胶、β-葡聚糖、半乳甘露糖胶、菊糖和大量不易消化的低聚糖类。水溶性膳食纤维可参与影响人体内的碳水化合物代谢、脂肪代谢等多种代谢过程;还具有良好的持水吸水膨胀能力,有效促进肠道生物学蠕动。
尽管已出现使用膳食纤维作为改善机体生理功能的功能性食物的现有技术,但现有膳食纤维存在搭配过于单调、营养不全面的问题,长期服用易导致身体营养不良。
发明内容
针对现有技术膳食纤维搭配不合理、营养不全面的技术问题,本发明提供一种水溶性膳食纤维,可促进体内益生菌增殖,双向调节肠道菌群平衡,促进肠道健康,舒缓排便不畅,减少宿便;保持肠道蠕动,帮助消化,排毒减肚腩;减少脂肪吸收,利于减肥;控制血脂、降低血糖,有助于改善三高;促进矿物质吸收,促使肠道内有益菌迅速繁殖,增强体质健康。
第一方面,本发明提供一种水溶性膳食纤维,包括以下原料:菊粉、低聚果糖、低聚半乳糖、鳕鱼胶原蛋白肽。
进一步的,所述水溶性膳食纤维,还包括维生素、矿物质、增稠剂。通过添加维生素和矿物质,使本膳食纤维的营养成分更加均衡全面,从而更好地提升人体免疫力。
进一步的,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉55-85份、低聚果糖3-22份、低聚半乳糖10-18份、鳕鱼胶原蛋白肽15-30份、维生素0.2-0.8份、矿物质0.05-0.5份、增稠剂0.2-3份。
优选的,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉65-80份、低聚果糖8-15份、低聚半乳糖13-17份、鳕鱼胶原蛋白肽18-25份、维生素0.4-0.6份、矿物质0.1-0.35份、增稠剂0.5-1.5份。
更优选的,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉72份、低聚果糖11份、低聚半乳糖14份、鳕鱼胶原蛋白肽22份、维生素0.5份、矿物质0.25份、增稠剂0.75份。
进一步的,所述菊粉的制备方法包括以下步骤:
(1)将菊芋洗净,待干燥后切块磨粉,过80目筛;
(2)将菊芋粉末加入蒸馏水中,机械搅拌10min后调节溶液pH值至6;
(3)将α-淀粉酶加入步骤(2)所得混合液,恒温振荡0.5-1.5h,振荡温度为90-95℃,振荡速率为80-200r/min,结束后进行高温灭酶处理;
(4)将沉淀物水洗后加入到碳酸钠溶液中浸提1-2h,浸提温度为90-95℃,碳酸钠溶液浓度为15-35g/L,结束后离心分离;
(5)向离心液中加入乙醇得到沉淀,烘干得到菊粉。
进一步的,所述鳕鱼胶原蛋白肽的制备方法包括以下步骤:
(1)将鳕鱼鱼皮和鱼鳞洗净后烘干,磨粉,过40目筛;
(2)将鳕鱼粉末加入蒸馏水中,机械搅拌使鳕鱼粉末均匀分散于水中,调节pH值至6.5;
(3)向步骤(2)所得混合液中加入蛋白酶,恒温振荡3-5h,振荡温度为30-50℃,振荡速度为120-200r/min,结束后进行高温灭酶处理;
(4)抽滤步骤(3)所得混合液得到固体残渣和鳕鱼胶原蛋白肽液体;
(5)冷冻干燥鳕鱼胶原蛋白肽液体得到鳕鱼胶原蛋白肽。
进一步的,所述维生素为维生素A、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、维生素C、维生素D、维生素E中的一种或几种。

菊粉:菊粉是以菊芋为原料加工而成的功能性果聚糖,也是最易溶解的水溶性膳食纤维;其主要功效有:
(1)菊粉可以和胆汁结合,阻碍脂肪被分解吸收,从而起到降血脂作用;
(2)促使葡萄糖代谢接收器增生,促进葡萄糖正常代谢,快速降低进食完的升糖指数;
(3)进入小肠形成保护层,阻碍糖分吸收,改善肠道环境;
(4)促进益生菌增殖,防治便秘,预防结肠癌,促进矿物质吸收,预防肥胖症,双向调节血糖,高血糖和低血糖的患者也适宜食用;
(5)增加饱足感,不易饥饿,促进好菌增值,快速排便,减少热量吸收时间。
低聚果糖:低聚果糖是一种水溶性膳食纤维,长期服用可以降低血清胆固醇,改善脂质代谢,经动物和人体实验证实;其主要功效有:
(1)低热能值,由于低聚果糖不能被人体直接消化吸收,只能被肠道细菌吸收利用,故其热值低,不会导致肥胖,间接也有减肥作用,对糖尿病患者来说也是一种良好的甜味剂;
(2)由于其不能被口腔细菌(突变链球菌S.mutans)利用,因而具有防龋齿作用;
(3)低聚果糖对肠道中的有益菌群有选择性增殖作用,如双岐杆菌、乳酸杆菌等,使有益菌群在肠道中占有优势,抑制有害菌的生长,减少有毒物质(如内毒素、氨类等)的形成,对肝和肠粘膜细胞具有保护作用,从而防止病变肠癌的发生,增强机体免疫力;
(4)双向调节功能,舒缓排便不畅,控制血脂、降低血糖,促使肠道内有益菌迅速繁殖,增强体质健康;
(5)可降低血清中胆固醇和甘油三酯的含量;
(6)促进营养的吸收,尤其是钙的吸收;
(7)防治腹泻和便秘。
低聚半乳糖:低聚半乳糖味道比较甘甜,热量值很低,保湿性比较强,它对于婴儿的肠道健康有一定的作用,尤其是对构建身体里面的双歧杆菌的菌群上,有很大的帮助,是一种新型的功能性食品,能够在一定程度上改善人体肠道的吸收和消化,尤其是改善新生儿的消化功能。
鳕鱼胶原蛋白肽:鳕鱼胶原蛋白肽不但能够被人体无障碍吸收利用,而且可以修复受损的皮肤组织,及时补充人体流失的胶原蛋白;其作用包括紧肤祛纹、修复妊娠纹、补水美白、祛斑退黄、丰胸美乳、淡化黑眼圈。

本发明提供一种水溶性膳食纤维,包括菊粉、低聚果糖、低聚半乳糖、鳕鱼胶原蛋白肽;
本水溶性膳食纤维可以选择性的促进肠道内有益菌双歧杆菌和乳杆菌的生长,使其产生有机酸和抗菌物质,降低肠道PH值,构建有害菌不能生长的肠道环境,从而辅助益生菌抑制有害菌,在肠道定植,维持肠道菌群平衡,改善肠道问题,提高免疫力,保持人体健康;
本可溶性膳食纤维在肠道既可改善腹泻,又可改善便秘:腹泻,多由致病菌(金黄色葡萄球菌、沙门菌等)或条件致病菌(大肠杆菌等)过度繁殖,破坏肠黏膜,使肠壁过多分泌肠液,且不能吸收水分而致,益生菌通过在肠内的定植抗力以及代谢产物,能调节肠道pH,抑制致病菌,从而调整菌群结构,恢复微生态的平衡,起到治疗腹泻的作用;便秘,多由腐败菌过度繁殖,破坏肠黏膜使肠壁过度吸收水分,肠壁肌肉失去收缩功能而致,益生菌通过在肠内的同样作用可抑制腐败菌,从而调整菌群结构,恢复微生态的平衡,同时益生菌代谢产生的醋酸、乳酸能润滑肠壁,刺激肠壁肌肉运动,从而防治便秘;

一种水溶性膳食纤维,包括以下重量份数的原料:菊粉60份、低聚果糖7份、低聚半乳糖11份、鳕鱼胶原蛋白肽16份、维生素0.3份、矿物质0.075份、增稠剂0.3份;
菊粉的制备方法包括以下步骤:
(1)将菊芋洗净,待干燥后切块磨粉,过80目筛;
(2)将菊芋粉末加入蒸馏水中,机械搅拌10min后调节溶液pH值至6;
(3)将α-淀粉酶加入步骤(2)所得混合液,恒温振荡1h,振荡温度为92℃,振荡速率为100r/min,结束后进行高温灭酶处理;
(4)将沉淀物水洗后加入到碳酸钠溶液中浸提1h,浸提温度为92℃,碳酸钠溶液浓度为20g/L,结束后离心分离;
(5)向离心液中加入乙醇得到沉淀,烘干得到菊粉。
进一步的,所述鳕鱼胶原蛋白肽的制备方法包括以下步骤:
(1)将鳕鱼鱼皮和鱼鳞洗净后烘干,磨粉,过40目筛;
(2)将鳕鱼粉末加入蒸馏水中,机械搅拌使鳕鱼粉末均匀分散于水中,调节pH值至6.5;
(3)向步骤(2)所得混合液中加入蛋白酶,恒温振荡4h,振荡温度为35℃,振荡速度为180r/min,结束后进行高温灭酶处理;
(4)抽滤步骤(3)所得混合液得到固体残渣和鳕鱼胶原蛋白肽液体;
(5)冷冻干燥鳕鱼胶原蛋白肽液体得到鳕鱼胶原蛋白肽。
实施例2
一种水溶性膳食纤维,包括以下重量份数的原料:菊粉82份、低聚果糖17份、低聚半乳糖17份、鳕鱼胶原蛋白肽27份、维生素0.7份、矿物质0.4份、增稠剂2份;
菊粉的制备方法包括以下步骤:
(1)将菊芋洗净,待干燥后切块磨粉,过80目筛;
(2)将菊芋粉末加入蒸馏水中,机械搅拌10min后调节溶液pH值至6;
(3)将α-淀粉酶加入步骤(2)所得混合液,恒温振荡1.25h,振荡温度为93℃,振荡速率为170r/min,结束后进行高温灭酶处理;
(4)将沉淀物水洗后加入到碳酸钠溶液中浸提1.5h,浸提温度为93℃,碳酸钠溶液浓度为30g/L,结束后离心分离;
(5)向离心液中加入乙醇得到沉淀,烘干得到菊粉。
进一步的,所述鳕鱼胶原蛋白肽的制备方法包括以下步骤:
(1)将鳕鱼鱼皮和鱼鳞洗净后烘干,磨粉,过40目筛;
(2)将鳕鱼粉末加入蒸馏水中,机械搅拌使鳕鱼粉末均匀分散于水中,调节pH值至6.5;
(3)向步骤(2)所得混合液中加入蛋白酶,恒温振荡4.5h,振荡温度为45℃,振荡速度为120r/min,结束后进行高温灭酶处理;
(4)抽滤步骤(3)所得混合液得到固体残渣和鳕鱼胶原蛋白肽液体;
(5)冷冻干燥鳕鱼胶原蛋白肽液体得到鳕鱼胶原蛋白肽。
实施例3
一种水溶性膳食纤维,包括以下重量份数的原料:菊粉72份、低聚果糖11份、低聚半乳糖14份、鳕鱼胶原蛋白肽22份、维生素0.5份、矿物质0.25份、增稠剂0.75份;
菊粉的制备方法包括以下步骤:
(1)将菊芋洗净,待干燥后切块磨粉,过80目筛;
(2)将菊芋粉末加入蒸馏水中,机械搅拌10min后调节溶液pH值至6;
(3)将α-淀粉酶加入步骤(2)所得混合液,恒温振荡1h,振荡温度为94℃,振荡速率为150r/min,结束后进行高温灭酶处理;

(4)抽滤步骤(3)所得混合液得到固体残渣和鳕鱼胶原蛋白肽液体;
(5)冷冻干燥鳕鱼胶原蛋白肽液体得到鳕鱼胶原蛋白肽。
尽管通过优选实施例的方式对本发明进行了详细描述,但本发明并不限于此。在不脱离本发明的精神和实质的前提下,本领域普通技术人员可以对本发明的实施例进行各种等效的修改或替换,而这些修改或替换都应在本发明的涵盖范围内/任何熟悉本技术领域的技术人员在本发明揭露的技术范围内,可轻易想到变化或替换,都应涵盖在本发明的保护范围之内。因此,本发明的保护范围应以权利要求所述的保护范围为准。
Claims (10)
1.一种水溶性膳食纤维,其特征在于,包括以下原料:菊粉、低聚果糖、低聚半乳糖、鳕鱼胶原蛋白肽。
2.如权利要求1所述的一种水溶性膳食纤维,其特征在于,所述菊粉的制备方法包括以下步骤:
(1)将菊芋洗净,待干燥后切块磨粉,过80目筛;
(2)将菊芋粉末加入蒸馏水中,机械搅拌10min后调节溶液pH值至6;
(3)将α-淀粉酶加入步骤(2)所得混合液,恒温振荡0.5-1.5h,振荡温度为90-95℃,振荡速率为80-200r/min,结束后进行高温灭酶处理;
(4)将沉淀物水洗后加入到碳酸钠溶液中浸提1-2h,浸提温度为90-95℃,碳酸钠溶液浓度为15-35g/L,结束后离心分离;
(5)向离心液中加入乙醇得到沉淀,烘干得到菊粉。
3.如权利要求1所述的一种水溶性膳食纤维,其特征在于,所述鳕鱼胶原蛋白肽的制备方法包括以下步骤:
(1)将鳕鱼鱼皮和鱼鳞洗净后烘干,磨粉,过40目筛;
(2)将鳕鱼粉末加入蒸馏水中,机械搅拌使鳕鱼粉末均匀分散于水中,调节pH值至6.5;
(3)向步骤(2)所得混合液中加入蛋白酶,恒温振荡3-5h,振荡温度为30-50℃,振荡速度为120-200r/min,结束后进行高温灭酶处理;
(4)抽滤步骤(3)所得混合液得到固体残渣和鳕鱼胶原蛋白肽液体;
(5)冷冻干燥鳕鱼胶原蛋白肽液体得到鳕鱼胶原蛋白肽。
4.如权利要求1所述的一种水溶性膳食纤维,其特征在于,所述水溶性膳食纤维,还包括维生素、矿物质、增稠剂。
5.如权利要求4所述的一种水溶性膳食纤维,其特征在于,所述维生素为维生素A、维生素B1、维生素B2、维生素B6、维生素B12、叶酸、烟酸、维生素C、维生素D、维生素E中的一种或几种。
6.如权利要求4所述的一种水溶性膳食纤维,其特征在于,所述矿物质包括钙、锌、镁、铁。
7.如权利要求4所述的一种水溶性膳食纤维,其特征在于,所属增稠剂为海藻酸钠、卡拉胶中的一种或其组合。
8.如权利要求4所述的一种水溶性膳食纤维,其特征在于,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉55-85份、低聚果糖3-22份、低聚半乳糖10-18份、鳕鱼胶原蛋白肽15-30份、维生素0.2-0.8份、矿物质0.05-0.5份、增稠剂0.2-3份。
9.如权利要求8所述的一种水溶性膳食纤维,其特征在于,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉65-80份、低聚果糖8-15份、低聚半乳糖13-17份、鳕鱼胶原蛋白肽18-25份、维生素0.4-0.6份、矿物质0.1-0.35份、增稠剂0.5-1.5份。
10.如权利要求9所述的一种水溶性膳食纤维,其特征在于,所述水溶性膳食纤维,包括以下重量份数的原料:菊粉72份、低聚果糖11份、低聚半乳糖14份、鳕鱼胶原蛋白肽22份、维生素0.5份、矿物质0.25份、增稠剂0.75份。
