Abstract
本发明公开了一种糖尿病三合一酵素,涉及营养食品及食品加工技术领域。所述三合一酵素由水果酵素5~8份、醋蛋液1~3份、醋浸中药液1~3份调配制得,所述醋浸中药液为陈醋浸泡黄芪、当归、党参、枸杞、干木瓜片、洋葱、生姜、大蒜所得的中药浸出液,所述陈醋的用量以淹过所述全部中药2寸为止。所述醋浸中药液联合水果酵素共同作用,可达到长期控制血糖的功效;而枸杞、洋葱、生姜、大蒜和水果酵素组合可掩盖醋酸的异味和蛋腥味,口感和香气的协调性好;特别适于二型糖尿病患者以及轻度并发症患者,坚持服用一定时间,可有效控制血糖,改善或消除并发症,并缓解降血糖药物对糖尿病患者肾、胃造成的损伤。

本发明涉及营养食品及食品加工技术领域,具体涉及一种用于糖尿病患者控制血糖的三合一酵素。
背景技术
糖尿病是一组以高血糖为特征的代谢性疾病。高血糖则是由于胰岛素分泌缺陷或其生物作用受损,或两者兼有引起。糖尿病长期存在的高血糖,导致各种组织,特别是眼、肾、心脏、血管、神经的慢性损害、功能障碍。无论糖尿病处于何种阶段、采用何种药物治疗,饮食控制都是最基本、最常用的的方法;对于一些轻症患者,仅采用饮食控制即可长期保持血糖正常。饮食控制包括控制总热量、营养均衡、少量多餐、高纤维饮食、口味清淡,旨在减轻胰岛负担,纠正代谢紊乱,消除由代谢紊乱引起的并发症。
醋蛋液即醋浸泡溶壳后的禽蛋混合液,是具有预防、治疗功能的传统食疗保健饮品。醋蛋液不但具备醋、蛋的营养和食疗作用,而且在醋蛋的制作过程中,鸡蛋中的蛋清在酸性条件下降解,生成了具有生物学活性的低分子量的氨基酸和寡肽,醋酸和蛋壳中的碳酸钙生成了可溶性的醋酸钙,醋蛋的食疗功效因而得到提高,具有提高免疫力、抗氧化、降血脂、降血压、补钙,防治心血管疾病等保健作用。
现有的专用于糖尿病患者的醋蛋液饮品相比传统的醋蛋液饮品,在血糖控制和风味方面取得了一定程度的进步,但仍然存在以下不足之处:为了掩盖或去除醋酸的异味和蛋腥味,添加了牛乳、蜂蜜、红枣、中草药提取液等风味成分,但仍不能很好地去除气味,口感、香气的协调性差;为了控制糖尿病患者的血糖,添加了黄芪、黄精、益智仁、枸杞、党参等降糖成分,但控制血糖效果不明显,只能起到短期稳定血糖的作用,对糖尿病并发症也没有很好的改善作用。
发明内容
为了克服现有的专用于糖尿病患者的醋蛋液饮品的以上不足,本发明提供一种由醋蛋液、水果酵素和醋浸中药液调配的糖尿病三合一酵素。醋浸中药液中以黄芪、当归、党参、干木瓜片、枸杞、洋葱、生姜、大蒜配伍,联合水果酵素共同作用,可达到长期控制血糖的功效;而枸杞、洋葱、生姜、大蒜和水果酵素组合可掩盖醋酸的异味和蛋腥味,口感和香气的协调性好。
所述糖尿病三合一酵素特别适于二型糖尿病患者以及轻度并发症患者,坚持服用一定时间,可有效控制血糖,改善或消除并发症,并缓解降血糖药物对糖尿病患者肾、胃造成的损伤。

所述醋浸中药液中各中药成分的功效与作用如下:
黄芪,味甘,性温。有补气健脾,托毒排脓,敛疮生肌的功效。为治疗虚证的主药,亦常用于气血不足所致痈疽、久不溃破或溃入不敛等症。
当归,味甘,性温。有补血养心,补益虚损,祛瘀生新的功效,常用于治疗血虚头晕心悸、跌打肿痛、痈疽疮疡及肠燥便秘等症。
党参,味甘,性平,归脾、肺经。具有健脾益气,养血生津的功效。常用于治疗中气不足的体虚倦怠,食少便溏,以及肺气亏虚的嗽气促,语声低弱,还可以治疗热病引起的气短口渴,以及虚不能生血或血虚无从化气而导致的面色苍白或者萎黄,乏力,头晕,心悸等症。
木瓜,味酸,性温。能平肝,和胃,化湿,舒筋,可用于湿邪流注,肢体酸痛重,脚气水肿,足膝无力,霍乱吐泻,经脉挛急等症。
枸杞,味甘,性温。能补精益髓,明目祛风,既可滋阴亦可助阳,凡肝肾虚亏所致头昏目暗,腰膝酸软等病症。
生姜,辛,微温,归肺、脾、胃经。解表散寒,温中止呕,化痰止咳,解鱼蟹毒。用于风寒感冒,胃寒呕吐,寒痰咳嗽,鱼蟹中毒。
大蒜,味辛,性温。能消食积,肉积,以及解毒,杀虫,消痈肿,可治痈肿疮毒,皮肤癣痒等症。
洋葱,味辛辣。洋葱中的洋葱蒜辣素和挥发油具有刺激消化腺分泌,从而起到健胃和促进消化的功效;洋葱含有的植物杀菌素有抑菌防腐的作用,可有效杀灭葡萄球菌、链球菌、痢疾杆菌及喉杆菌;洋葱所含有的环蒜氨酸是降血脂的有效成份,是抗动脉粥样硬化的良药。在本发明的三合一酵素中,它配合其他组分,能帮助细胞更有效地利用葡萄糖,起到控制血糖的作用。
生姜、大蒜和洋葱除了上述功效和作用外,都属于香辛料,含有挥发油、有机酸、纤维、淀粉粒、树脂、粘液物质、胶质等成分,具有芳香和辛香等典型风味,能改善食品风味,还有杀菌防腐功能。
陈醋,味酸,苦,性温。能消肿解毒,散瘀,止血,可治胸腹疼痛,痈疽疮肿等症。
三合一酵素中的醋蛋液,由米醋浸泡禽蛋至蛋壳溶化,经过滤、均质后所得的醋蛋混合液,所述米醋的使用量以淹过所述全部禽蛋2寸为止。
进一步地,所述禽蛋为鸡蛋、鸭蛋、鹅蛋、鸽子蛋、鹌鹑蛋中一种或几种。
更进一步地,所述禽蛋包含鸡蛋、鸭蛋、鹅蛋、鸽子蛋、鹌鹑蛋,其重量份的比例为1~2:2~4:3~5:4~7:4~8。
优选地,所述鸡蛋、鸭蛋、鹅蛋、鸽子蛋、鹌鹑蛋重量份的比例为1:2:3:4:4。

各类禽蛋的功效与作用如下:

米醋是一种调味品,可以增加食物的酸味使食物别有风味,喝醋增加胃酸,促进食物消化,促进食欲,有助于食物维生素C的保持和杀菌的作用;也是中医中的一味中药,其性温,味酸、苦,有活血散淤,开胃消食,消肿软坚,散瘀破结,解毒杀虫,治疗疮癣等功效。
三合一酵素中的水果酵素,是以水果为原料,经微生物发酵后制得的含有特定生物活性的产品,包含菌体,葡萄糖、甘油、氨基酸、维生素、脂肪酸、辅酶、醇类、酯类等菌类代谢产物,以及没有被分解的抗氧化物质和药物有效成份。水果酵素的上述营养成分,既能满足机体对相应营养素的需求,又在一定程度上起到润肠通便、促进新陈代谢的作用。

各水果营养成份和功效与作用如下:
苹果所含苹果酸,柠檬酸,酒石酸等有机酸,为身体提供能量的果糖及葡萄糖。它含有丰富的水溶性食物纤维——果胶,有助于肠道蠕动,消除有害的肠内菌,防治便秘。苹果中的果酸,纤维素和半纤维素可吸附蛋固醇,并使之随粪便排出体外,从而降低血液中蛋固醇含量。

本发明的三合一酵素中,水果酵素保留了水果大部分果香味,且发酵产生的酯类和醇类物质带来了独特的芳香味,配合枸杞、洋葱、生姜、大蒜的气味融合在一起,可掩盖醋酸的异味和蛋腥味,形成一种酸甜、醇香的风味,使得蛋醋液的风味得到改善。
本发明的三合一酵素中,醋浸中药液中以黄芪、当归、党参、干木瓜片、枸杞、洋葱、生姜、大蒜配伍,联合水果酵素共同作用,以黄芪、干木瓜片为君药,以当归、党参为臣药,以枸杞、洋葱、生姜、大蒜为佐使进行配伍,可达到长期控制血糖的功效,改善并发症;适用于大部分糖尿病人群,不用服用其他降糖药物即可很好地控制血糖,对身体无毒副作用,可长期饮用。

功效试验
1.受试者情况
年龄40~60岁;病程2年~12年。
降血糖功效试验分为试验组1~4(每组6例,共24例)、功效对照组(4例)、阳性对照组(4例),六组共计32例。
上述组别均采取随机分组法,无显著性差异,具有可比性。
2.纳入病例标准
(1)经全面系统检查,符合二型糖尿病和各类轻度糖尿病并发症的判断标准;(2)自愿接受饮食干预措施者。
3.排除病例标准
(1)对相应药物、食物过敏者;(2)正在参加其他药物临床试验。
4.试验方法
(1)血糖控制
试验组1:给予实施例1的三合一酵素。
试验组2:给予实施例4的三合一酵素。
试验组3:给予实施例6的三合一酵素。
试验组4:给予实施例7的三合一酵素。
上述四组试验中,酵素的服用方法:在遵循糖尿病科学饮食的基础上,以相应的三合一酵素代替少量正餐,每次食用4~8ml,可用水稀释后饮用。
从食疗之日起,糖尿病患者每日进餐前自查血糖三次(早上6点30分,中午11点30分,下午5点30分)并做好记录,根据血糖变化调整三合一酵素的用量,血糖持续降低时,适当减少三合一酵素的食用量。
阳性对照组:给予参芪降糖颗粒(鲁南厚普制药有限公司生产),按药品说明书服用。
功效对照组:给予现有的黄芪蛋醋液,和三合一酵素的饮用方法一致。
以上试验的试验时间均为8周;试验期间定期测定受试者的空腹血糖值、糖化血红蛋白指标;试验期间禁服其他药物,合理膳食,规律作息,适量运动等。实验结果见表1。
(2)风味评价
以上述六组试验者对本发明三合一酵素、参芪降糖颗粒、黄芪蛋醋液进行风味评价,参照感官评价的国标设计试验,实验结果见表2。
评价标准如下:
0:不存在;1:刚好可识别;2:中等;3:强;4:很强。
5.试验结果
表1显示本发明的糖尿病三合一酵素具有控制血糖的作用,相比现有的专用于糖尿病患者的醋蛋液的血糖控制效果更好。
表2显示本发明的糖尿病三合一酵素酸甜适中,中药味轻,基本上不存在蛋腥味和醋酸异味。

6.典型案例
案例1
林××,男,50岁,患二型糖尿病6年。血糖值长期偏高,最高血糖达26.2mmol/L,有头痛、肩颈、手足麻木等并发症。从2018年11月15日开始进行膳食干预,即在遵循糖尿病科学饮食的基础上,坚持服用本发明的三合一酵素,血糖6个多月连续稳定在正常值内,并发症也明显改善。
案例2
刘××,女,54岁,患二型糖尿病12年。血糖长期偏高,最高血糖达22.0mmol/L,有盗汗、膝关节变型、脸浮肿、双足水肿、视力下降等并发症。,从2018年12月24日开始进行膳食干预,即在遵循糖尿病科学饮食的基础上,服用本发明的三合一酵素。18天后,血糖降到4.8mmol/L。血糖连续4个多月维持在正常值之间,平均值为5.6mmol/L,部分并发症已得到改善,视力恢复正常,水肿消失,身体恢复较快。

2.根据权利要求1所述的一种糖尿病三合一酵素,其特征在于:包含以下重量份配比的组分:水果酵素3份、醋蛋液1份、醋浸中药液1份。
3.根据权利要求1或2所述的一种糖尿病三合一酵素,其特征在于:所述黄芪、当归、党参、枸杞、干木瓜片、洋葱、生姜、大蒜的重量份比例为3~5:3~5:2~3:3~5:2~3:7~10:1~2:1~2,所述醋浸中药液的浸泡时间大于一个月。
4.根据权利要求3所述的一种糖尿病三合一酵素,其特征在于:所述醋蛋液,由米醋浸泡禽蛋至蛋壳溶化,经过滤、均质后所得的醋蛋混合液,所述米醋的使用量以淹过所述全部禽蛋2寸为止。
