Abstract
本发明公开了一种全营养配方食品的制备方法,包括原料:营养源A、营养源B、能量营养源和食品添加剂;其方法包括步骤:(1)将营养源A所有物料过40目筛网后混合,得预混料①;(2)将营养源B中的谷氨酰胺、肌醇、牛磺酸、氯化钾、酒石酸氢胆碱、左旋肉碱酒石酸盐和柠檬酸钠过40目筛网,再加入营养源B中的剩余物料混合,得预混料②;(3)将能量营养源、食品添加剂、预混料①、预混料②混合,即得。本发明通过优化各物料的混合方式,经混合均一性检测结果显示,各关注指标的RSD值均小于9%,表明本方法能使全营养配方食品满足混合均一性的要求,解决了目前干法直混方法制备全营养粉不能达到混合均一要求的难题,且方法稳定、简单可行。
Description
技术领域
本发明属于保健品、食品技术领域,具体涉及一种全营养配方食品的制备方法。
背景技术
随着人们饮食结构的改变、生活节奏的不断加快、全球环境的不断恶化,我国乃至世界各国的慢性病及患者数量在急剧上升,全球范围内疾病患者因营养得不到充足的补充而“饿死”的也不在少数。营养不良不仅对疾病临床结局造成不良影响,更增加了政府医疗经济成本。口服营养补充是一种有效的营养支持方式,可以加强食物中的蛋白质、碳水化合物、脂肪、矿物质和维生素含量,提供均衡的营养素以满足机体对营养物质的需求。
根据《中国居民膳食营养素参考摄入量》,居民每日需要各种营养素的量差异巨大,比如轻体力活动水平18岁以上人群,每日需要能量为2100Kcal,按最大能量折算系数(37KJ/g)计算,所需要能量物质为237g/d,而生物素的推荐摄入量为40μg/d、铬的推荐摄入量为30μg/d,供能物质与生物素的需要量相差了将近600万倍,而且根据中国居民的膳食需求,每日需要的营养素将近40多种,因各种营养素的化合物来源有不同的特性,目前通过干法直混方法制备的全营养配方粉混合均一性无法达到要求,混合均一性一直是行业内的一大难题。
发明内容
为了克服上述现有技术的不足,本发明的目的在于提供一种全营养配方食品的制备方法,该方法能使40多种物料达到混合均一性的要求。
本发明是通过以下技术方案实现:
一种全营养配方食品的制备方法,该全营养配方食品包括以下原料:营养源A、营养源B、能量营养源和食品添加剂;
所述营养源A包含以下物料:碳酸镁、焦磷酸铁、维生素C、富硒酵母粉、柠檬酸锌、富铬酵母粉、维生素B12、维生素B1、维生素B2、维生素B6、维生素K1、叶酸、D-生物素;
所述营养源B包含以下物料:磷酸氢钙或碳酸钙、谷氨酰胺、烟酰胺、氯化钾、酒石酸氢胆碱或氯化胆碱、柠檬酸钠、左旋肉碱酒石酸盐、肌醇、牛磺酸、天然维生素E醋酸酯粉、碘化钾、硫酸锰、硫酸铜、维生素A、D-泛酸钙、维生素D3;
所述能量营养源包含以下物料:麦芽糊精、乳清蛋白、酪蛋白酸钙、植物油脂肪粉、辛,癸酸甘油酯粉、低聚果糖、燕麦纤维、低聚半乳糖、果糖、抗性糊精;
其特征在于,该制备方法包括如下步骤:
(1)将营养源A所有物料过40目筛网后混合,得预混料①;
(2)将营养源B中的谷氨酰胺、肌醇、牛磺酸、氯化钾、酒石酸氢胆碱或氯化胆碱、左旋肉碱酒石酸盐和柠檬酸钠过40目筛网,再加入营养源B中的剩余物料混合,得预混料②;
(3)将能量营养源、食品添加剂、预混料①、预混料②混合,即得。
本发明全营养配方食品由40多种营养素组成,各营养物质的添加量可根据本领域的常规用量添加。因各种营养素的化合物来源有不同的特性,通过干法直混方法制备全营养配方粉,混合均一性一直是业界的一大难题。本发明通过优化各物料的混合方式,经混合均一性检测结果显示,本发明方法各关注指标的RSD值均小于9%,表明本发明方法能使全营养配方食品满足混合均一性的要求。
为保证物料混合的均一性,本发明的物料需要控制在一定的要求内或根据物料本身特性进行预处理。
作为本发明进一步优选的技术方案,所述营养源A所有物料要求100%过80目筛网;所述营养源B中磷酸氢钙或碳酸钙、谷氨酰胺、烟酰胺、肌醇、牛磺酸、天然维生素E醋酸酯粉、维生素A和维生素D3的物料要求90~100%过60目筛网且100%过40目筛网。
作为本发明进一步优选的技术方案,由于D-生物素、叶酸添加量太小,步骤(1)中,营养源A中的叶酸和D-生物素在混合前与碳酸镁按1:2~20逐级预混2~6次。
为避免物料吸潮影响混合均一性,作为本发明进一步优选的技术方案,步骤(2)中,营养源B中的碘化钾、硫酸锰、酒石酸氢胆碱或氯化胆碱和硫酸铜在混合前与麦芽糊精或乳糖按1:10~100预混后过60目筛网。
作为本发明进一步优选的技术方案,由于果糖粉碎后容易吸潮结块,影响混合的均一性,步骤(3)中,能量营养源中的果糖和抗性糊精在混合前先过20目筛网。
作为本发明进一步优选的技术方案,步骤(1)、步骤(2)或步骤(3)中混合时间均为10-30min。
本发明与现有技术相比,具有如下有益效果:
本发明通过优化各物料的混合方式,经混合均一性检测结果显示,各关注指标的RSD值均小于9%,表明本发明方法能使全营养配方食品满足混合均一性的要求,解决了目前干法直混方法制备全营养粉不能达到混合均一要求的难题,且方法稳定、简单可行。
具体实施方式
下面通过具体实施方式来进一步说明本发明,以下实施例为本发明具体的实施方式,但本发明的实施方式并不受下述实施例的限制。
本发明的原料均来源于市购。
实施例1:
一、产品配方如下表1所示:

二、全营养配方食品的制备方法,包括如下步骤:
(1)各物料配比、控制要求及预处理按表1要求处理,其中:
营养源A所有物料要求100%过80目筛网;叶酸和D-生物素在混合前与碳酸镁按1:20逐级预混2次;
营养源B中磷酸氢钙或碳酸钙、谷氨酰胺、烟酰胺、肌醇、牛磺酸、天然维生素E醋酸酯粉、维生素A和维生素D3的物料要求90~100%过60目筛网且100%过40目筛网;碘化钾、硫酸锰、酒石酸氢胆碱或氯化胆碱和硫酸铜在混合前与麦芽糊精或乳糖按1:50预混后过60目筛网。
能量营养源和食品添加剂中所有物料均为粉末状不结块;果糖粉碎后过80目。
(2)将营养源A所有物料过40目筛网后混合,混合时间20min,得预混料①;
(3)营养源B中柠檬酸钠、氯化钾、酒石酸氢胆碱或氯化胆碱、左旋肉碱酒石酸盐备料前需粉碎,然后将营养源B中的谷氨酰胺、肌醇、牛磺酸、氯化钾、酒石酸氢胆碱或氯化胆碱、左旋肉碱酒石酸盐和柠檬酸钠过40目筛网,再加入营养源B中的剩余物料混合20min,得预混料②;
(4)果糖和抗性糊精混合后过20目筛网,将麦芽糊精、乳清蛋白、酪蛋白酸钙、植物油脂肪粉、辛,癸酸甘油酯粉、低聚果糖、燕麦纤维、低聚半乳糖、黄原胶、食品用香精、过筛后的果糖和抗性糊精、预混料①、预混料②混合30min,即得全营养配方食品。
三、混合物料的混合均一性测定:
取上中下各两个点,从多个维度选定了多个指标,根据工艺要求及实验室内各含量指标的变异系数的控制,产品混合均一的判定要求为各关注指标的RSD<9%,测试结果如表2所示,各关注指标的RSD值均小于9%,表明本发明方法能使全营养配方食品满足混合均一性的要求。

四、稳定性验证
为确认工艺的稳定性,连续验证了2个批次产品,从多个维度选定了多个指标,确认混合物料的均一性,验证结果如下表3-4所示,结果表明,本发明方法稳定性良好,且简单可行。

按表1中各物料配比称量各物料用量;先将天然维生素E醋酸酯粉、富铬酵母粉、烟酰胺、硫酸铜、碘化钾、维生素A粉、D-泛酸钙、维生素D3粉、维生素B12、维生素B1、维生素B2、维生素B6、维生素K1、叶酸、D-生物素与麦芽糊精等量递增混合2次,每次混合5min,过60目筛网,得预混料①;将预混料①与磷酸氢钙、谷氨酰胺、碳酸镁、低聚半乳糖、黄原胶、食品用香精、酒石酸氢胆碱或氯化胆碱、硫酸锰、焦磷酸铁、维生素C、肌醇、左旋肉碱酒石酸盐、富硒酵母、牛磺酸、柠檬酸锌、天然维生素E醋酸酯粉混合20min,过60目筛网并用碳酸镁清洗筛网,得预混料②;再将剩余物料及预混料②投入三维混合机混合,设定转速8转/分钟,混合10~30分钟至物料色泽均匀后出料。
混合均一性测定结果如表5所示,结果表明该工艺制备的全营养粉混合均一性无法达到要求:

按表1中各物料配比称量各物料用量;先将维生素C、肌醇、烟酰胺、维生素B1(硝酸硫胺素)、维生素B2(核黄素)、维生素B6(盐酸吡哆醇)、维生素B12、D-泛酸钙、叶酸、生物素、柠檬酸锌预混合10min,过60目筛网,用配方量的磷酸氢钙/碳酸钙清洗筛网,得预混料①;在预混料①中加入柠檬酸钠、氯化钾、谷氨酰胺、碳酸镁、酒石酸氢胆碱或氯化胆碱、低聚半乳糖、黄原胶、食品用香精、硫酸锰粉、焦磷酸铁、左旋肉碱酒石酸盐、富硒酵母粉、牛磺酸、富铬酵母粉、天然维生素E醋酸酯粉、硫酸铜粉、碘化钾粉、维生素A粉、维生素D粉、维生素K1混合20min后,得预混料②;再将麦芽糊精、植物油脂肪粉、乳清蛋白、果糖、酪蛋白酸钙、辛,癸酸甘油酯粉、抗性糊、低聚果糖及预混料②投入三维混合机混合,设定转速8转/分钟,混合30分钟至物料色泽均匀后出料。
混合均一性测定结果如表6所示,结果表明该工艺制备的全营养粉混合均一性无法达到要求:

1.一种全营养配方食品的制备方法,该全营养配方食品包括以下原料:营养源A、营
养源B、能量营养源和食品添加剂;
所述营养源A包含以下物料:碳酸镁、焦磷酸铁、维生素C、富硒酵母粉、柠檬酸锌、富铬酵母粉、维生素B12、维生素B1、维生素B2、维生素B6、维生素K1、叶酸、D-生物素;
所述营养源B包含以下物料:磷酸氢钙或碳酸钙、谷氨酰胺、烟酰胺、氯化钾、酒石酸氢胆碱或氯化胆碱、柠檬酸钠、左旋肉碱酒石酸盐、肌醇、牛磺酸、天然维生素E醋酸酯粉、碘化钾、硫酸锰、硫酸铜、维生素A、D-泛酸钙、维生素D3;
所述能量营养源包含以下物料:麦芽糊精、乳清蛋白、酪蛋白酸钙、植物油脂肪粉、辛,癸酸甘油酯粉、低聚果糖、燕麦纤维、低聚半乳糖、果糖、抗性糊精;
其特征在于,该制备方法包括如下步骤:
(1)将营养源A所有物料过40目筛网后混合,得预混料①;
(2)将营养源B中的谷氨酰胺、肌醇、牛磺酸、氯化钾、酒石酸氢胆碱或氯化胆碱、左旋肉碱酒石酸盐和柠檬酸钠过40目筛网,再加入营养源B中的剩余物料混合,得预混料②;
(3)将能量营养源、食品添加剂、预混料①、预混料②混合,即得。
2.根据权利要求1所述的全营养配方食品的制备方法,其特征在于,所述营养源A所有物料要求100%过80目筛网;所述营养源B中磷酸氢钙或碳酸钙、谷氨酰胺、烟酰胺、肌醇、牛磺酸、天然维生素E醋酸酯粉、维生素A和维生素D3的物料要求90~100%过60目筛网且100%过40目筛网。
3.根据权利要求1所述的全营养配方食品的制备方法,其特征在于,步骤(1)中,营养源A中的叶酸和D-生物素在混合前与碳酸镁按1:1~20逐级预混2~6次。
4.根据权利要求1所述的全营养配方食品的制备方法,其特征在于,步骤(2)中,营养源B中的碘化钾、硫酸锰、酒石酸氢胆碱或氯化胆碱和硫酸铜在混合前与麦芽糊精或乳糖按1:10~100预混后过60目筛网。
5.根据权利要求1所述的全营养配方食品的制备方法,其特征在于,步骤(3)中,能量营养源中的果糖和抗性糊精在混合前先过20目筛网。
6.根据权利要求1所述的全营养配方食品的制备方法,其特征在于,步骤(1)、步骤(2)或步骤(3)中混合时间均为10-30min。
