Abstract
本发明公开了一种生姜黑糖调味酱,按重量份数计,包括以下组分:黑糖40~60份,生姜汁5~20份,水10~60份,补充剂0~30份。所述补充剂包括以下组分:葡萄籽提取物2~10份,哈密瓜籽提取物2~10份,枸杞子1~8份,决明子2~10份,龙眼0.5~5份,蜂胶1~5份,山楂0.1~5份。本发明的生姜黑糖调味酱含有的补充剂组分添加到奶茶等易诱发肥胖的饮料中后,可以减少奶茶本身所带来的一些危害,起到降低血清胆固醇,防止高血压、高血脂,增强人体免疫力等作用。

本发明涉及食品领域,具体涉及饮品辅料,尤其是一种生姜黑糖调味酱。
背景技术
随着物质条件的改善和生活方式的改变,现代年轻人普遍喜欢饮用奶茶、红茶等特饮。但是奶茶中普遍含有反式脂肪酸和奶精,经常饮用奶茶容易导致肥胖,并且会导致血脂和胆固醇升高,也会增加患上心血管疾病的危险。特别是奶精多数是由椰子油制成,而椰子油中含大量饱和脂肪酸,会加速机体制造胆固醇,血脂也会伴随着急速上升,形成血管硬化,长期大量饮用,容易罹患高血压、糖尿病等慢性病,对人体健康十分不利。很多奶茶为了保鲜,在制作的时候会加入一些防腐剂,而大部分防腐剂对人体是有害的,不利于健康。
肥胖是指一定程度的明显超重与脂肪层过厚,是体内脂肪,尤其是甘油三酯积聚过多而导致的一种状态。由于食物摄入过多或机体代谢的改变而导致体内脂肪积聚过多造成体重过度增长并引起人体病理、生理改变或潜伏。肥胖会增加高血压、冠心病、中风、心力衰竭等心脑血管疾病以及糖尿病、高血脂等代谢性疾病的发生风险。而长期饮用奶茶就容易导致肥胖,对于喜欢饮用奶茶的人而言除了需要较大的运动量来消耗多余的热量外,并无其它更好的办法,但是较大的运动量需要特别强的意志力和自制力,而在喜好饮用奶茶的人群当中只有很少一分部人进行经常性的定期运动。
生姜,是姜科多年生草本植物姜的新鲜根茎,别名有姜根、百辣云、勾装指、因地辛、炎凉小子、鲜生姜。姜的根茎(干姜)、栓皮(姜皮)、叶(姜叶)均可入药。生姜味辛,性微温,归肺、脾、胃经,具有解表散寒、温中止呕、温肺止咳、解毒的功效,常用于风寒感冒,脾胃寒症,胃寒呕吐,肺寒咳嗽。因为口味原因,很少有奶茶会含有生姜成分。
市场上现有的奶茶等饮品只注重口感和是否受消费者欢迎,并不注重健康等因素,很多消费者也知道过度饮用奶茶会对健康产生不利的影响,但由于生活方式或习惯等问题,并不能采用实质性的方式去解决或最小化这些弊端,因此,现在需要找到一种能降低或最小化奶茶等饮品带来的不良影响的方式。
发明内容
鉴于现有技术存在的问题,本发明的目的之一在于提供一种生姜黑糖调味酱,作为一种饮品辅料,以降低或最小化奶茶等饮品带来的不良影响,同时尽量避免迫使消费者改变其原有的经常喝奶茶的生活方式或习惯。
本发明的另一目的在于提供一种生姜黑糖调味酱的制备方法。
本发明的又一目的在于提供一种生姜黑糖调味酱的用途。

本文中使用的术语“黑糖”是指没有经过精炼的蔗糖,是禾本科草本植物甘蔗的茎经压榨取汁炼制而成的赤色结晶体,不含化学添加剂和添加色素,含有丰富的糖份、矿物质(钙、钠、镁、磷、铁、锌等)及甘醇酸,颜色较深,带有焦香味。黑糖中蕴含着大量的营养物质,可加速皮肤细胞的代谢,为细胞提供能量,补充营养,促进再生,黑糖中含独特的天然酸类和色素调节物质,可有效调节各种色素代谢过程,平衡皮肤内色素分泌数量和色素分布,减少局部色素的异常堆积,对皮肤的健康有益。对于普遍喜欢饮用奶茶的女性而言,具有额外附加的健康价值。

本文中使用的术语“葡萄籽”是葡萄的种子,经晒干后分离葡萄皮、葡萄梗后所得产物。葡萄籽含有丰富的氨基酸、维生素、矿物质、生物类黄酮、醇、酚、萜类等物质,都具有较高的生物活性。葡萄籽中含有的多酚类物质,主要是儿茶素类和原花青素类。儿茶素类化合物包括儿茶素、表儿茶素及其没食子酸酯,是葡萄籽中主要的单聚体,也是原花青素寡聚体和多聚体的构成单位。葡萄籽中含有丰富的油脂,其中有大量的不饱和脂肪酸,其中亚油酸的含量在58%~78%之间,亚油酸是一种人体必需的但不能合成的物质,它由不饱和到饱和状态要消耗20%的胆固醇,因此能够有效的降低血脂。
葡萄籽提取物具有非常强的体内活性,体内和体外试验表明,葡萄籽提取物的抗氧化效果,是维生素C和维生素E的30-50倍。葡萄籽提取物能有效清除体内多余的自由基,保护人体细胞组织免受自由基的氧化损伤,防治过敏、癌症、衰老等,还具有加强和保护人体活性组织、稳定细胞膜以及抗酶活性(组胺脱羧酶)等生物特性。
本文中使用的术语“自由基”是指共价键发生均裂而形成的具有不成对电子的原子或基团,包括但不限于以下:超氧阴离子自由基(O2 -)、过氧化氢(H2O2)、羟基自由基(·OH)、单线态氧(1O2)、碳中心(·CH-R)脂质自由基或L·自由基,等等。人体内的自由基是活性很强的原子或基团,能够对人体内其它物质进行氧化。

本文中使用的术语“哈密瓜籽”是哈密瓜的种子,存在于哈密瓜的果肉里面。哈密瓜籽中含有丰富的不饱合脂肪酸,高达90%左右,富含亚油酸、油酸、棕榈酸、硬脂酸、肉豆蔻酸的甘油脂、卵磷酯、胆甾醇、尚含球蛋白及谷蛋白,半乳聚糖、树酸、树脂及丰富的矿物元素钾、铁、钙、锌、镁、钠、磷、铜等,具有很高的营养价值,能有效防止高血压、高血脂、糖尿病,可以调节人体生理平衡,减轻疲劳,改善睡眠,同时有助于维持细胞和组织健康运作,增强人体免疫力,尤其对经常食用高脂肪、高蛋白、高糖分的群体有明显的助消化分解的功效。本发明得到的哈密瓜籽提取物具有超强的抗氧化能力,该提取物不易酸败,稳定性强。

本文中使用的术语“超临界CO2萃取”(Supercritical Fluids Extraction,SFE),是指利用超临界状态下的流体(CO2)作为萃取溶剂,从固体或液体原料中萃取出部分组分的分离技术。超临界流体不仅具有较高的溶解能力,还具有较高的传质速率、较好的流动性能和很快达到平衡的能力。而且,由于温度和压力在临界点附近的微小变化能够引起溶解能力的显著变化,这使得超临界流体具有良好的可调节性和选择性。

本文中使用的术语“决明子”是指豆科植物决明(CassiaobtusifoliaL.)或小决明(CassiatoraL.)的干燥成熟种子,其性味甘、苦、咸、微寒,归肝、大肠经,具有清热明目,润肠通便的功效,是一种药食同源物质,富含大黄酚、大黄素、决明素、芦荟大黄素、钝叶素、黄决明素、橙黄决明素及它们的甙类和大黄酸等等物质。决明子中的主要成分分为蒽醌类和多糖类化合物,具有抗衰老、调节免疫、降血脂、降血压、降胆固醇和抗氧化等作用,是决明子发挥活性的主要成分。

本文中使用的术语“蜂胶”是指蜜蜂采集物形成的一种芳香性胶状固形物,富含黄酮类化合物、萜烯类化合物、酸类、醇类、脂类化合物、三十多种人体必需的微量元素及二十多种氨基酸等营养成分和活性物质,能增强机体抵抗力,调节免疫、降血脂、降血糖、抗氧化、保护血管的作用,可控制糖尿病及其并发症。蜂胶中的黄酮类、萜烯类物质,具有促进外源程序性葡萄糖合成肝糖源和双向调节血糖作用,改善血液循环状态及造血功能。

本发明的生姜汁与补充剂组合以后可以有效地减少肥胖(或肥胖程度)的发生。

(2)将装有各原料混合物的煮锅放到加热源上,开中高档位火力,将混合物加热至沸腾,加热时间为1min-30min,期间不停搅拌,以免粘锅,沸腾后转至中小档位火力,继续搅拌加热,加热时间为1min-30min;

(3)本发明的生姜黑糖调味酱作为一种饮品辅料,可以降低或最小化奶茶等饮品带来的不良影响,同时尽量避免迫使消费者改变其原有的经常喝奶茶的生活方式或习惯。

一种生姜黑糖调味酱,按总量100克计,包括以下原料:

(1)在煮锅中按组分比例放入(不分顺序)黑糖、生姜汁、纯净水,用勺子搅拌均匀;
(2)将装有各原料混合物的煮锅放到加热源上,开中高档位火力,将混合物加热至沸腾,加热时间为1min-30min,期间不停搅拌,以免粘锅,沸腾后转至中小档位火力,继续搅拌加热,加热时间为1min-30min;
(3)关火后待自然冷却,密封好,放入冰箱2至8摄氏度冷藏待用。

随机选取40名经常喝奶茶的志愿者(年龄18~25岁)进行饮用测试,每人每2天饮用一杯市售珍珠奶茶(普通型,300mL),其中20人的奶茶中不添加其它成分(对照组),另外20人的奶茶中添加本发明实施例2的生姜黑糖调味酱(添加量5g/300mL)(试验组),持续测试3个月后,结果发现对照组的体重增加的平均值高于试验组,而试验组的体重增加相较于测试前并无明显变化。本发明的生姜黑糖调味酱作为一种饮品辅料,可以降低或最小化奶茶等饮品带来的不良影响,同时避免了迫使消费者改变其原有的经常喝奶茶的生活方式或习惯。

1.生姜黑糖调味酱,其特征在于,按重量份数计,包括以下组分:

3.根据权利要求2所述的生姜黑糖调味酱,其特征在于,所述葡萄籽提取物是通过将葡萄籽粉碎得到粒径不超过1mm的葡萄籽粉末,再将得到的葡萄籽粉末采用超临界CO2萃取工艺进行萃取得到,其中萃取压力为30~40MPa,萃取温度为40℃~45℃,出口分离温度为50℃~55℃,萃取时间为1~3h,CO2流速为1~2L/min。
4.根据权利要求2所述的生姜黑糖调味酱,其特征在于,所述哈密瓜籽提取物是通过将哈密瓜籽粉碎得到粒径不超过1mm的哈密瓜籽粉末,再将得到的哈密瓜籽粉末采用超临界CO2萃取工艺进行萃取得到,其中萃取压力为40~45MPa,萃取温度为45℃~50℃,出口分离温度为52℃~58℃,萃取时间为1~3h,CO2流速为2~3L/min。
5.根据权利要求2所述的生姜黑糖调味酱,其特征在于,所述枸杞子是通过将枸杞子粉碎后得到的粒径不超过1mm的枸杞子粉末;所述决明子是通过将决明子炒熟之后粉碎得到的粒径不超过1mm的决明子粉末。
6.根据权利要求2所述的生姜黑糖调味酱,其特征在于,所述龙眼是去核、去皮龙眼。
7.根据权利要求1所述的生姜黑糖调味酱,其特征在于,所述生姜汁是将生姜直接榨汁得到。
8.权利要求1-7中任一项所述的生姜黑糖调味酱的制备方法,其特征在于,包括以下步骤:根据配方将各组分混合均匀,将混合物加热至沸腾后继续加热1min-60min,同时不停搅拌。
9.权利要求1-7中任一项所述的生姜黑糖调味酱的用途,其特征在于,将所述生姜黑糖调味酱加入饮品中用于调味。
10.根据权利要求9所述的用途,其特征在于,所述饮品包括红茶、奶茶、黑糖饮料中的至少一种。
