Abstract

一种樱桃快递全程冷链工艺,分为1、采收;2、分级、分装、预冷;3、装箱、装载、运输;4、最后一公里运输;5、接收、验收、回收;采用本发明的工艺,能通过规范的预冷操作、吸水材料的湿度保证、严格把控与冷藏运输,延迟运输保温箱内相变材料的工作时间,实现快递运输的全过程冷链。本发明的优点是:不仅能够保证包装内的樱桃减少挤压伤害,还能够提供包装内的高湿度无结露的环境;不仅能够提供田间预冷,还能够提供田间预冷设备与冷藏运输车的连接;同时,将运输包装内的相变材料工作时间推迟到最后一公里时段,实现快递全过程冷链。

樱桃快递全程冷链工艺
技术领域
本发明涉及一种冷链运输工艺,尤其是一种樱桃快递全程冷链工艺。
背景技术
众所周知,樱桃的销售以电商和本地销售为主,运往外地销售的渠道以冷藏运输为主,果农或消费者采摘,装入泡沫保温箱内,保温箱底部和樱桃上方平铺吸水纸,加隔层、放冰袋,封装后置于阴凉遮阴棚内,等到运输量达到运输车容量,装车运往集散地,配送分装到冷藏车,运往目的地。整个过程,没有采收时间的选择,没有果的分级,没有预冷,没有包装工序的优化,樱桃运达目的地后,有一定程度的失鲜,有甚者出现了腐烂,因此研究一种集采摘、分装、装箱、运输于一体的冷链运输工艺势在必行。
发明内容
本发明针对现有技术中存在的问题,提供了一种优化的樱桃快递全程冷链工艺,不仅能够保证包装内的樱桃减少挤压伤害,还能够提供包装内的高湿度无结露的环境;不仅能够提供田间预冷,还能够提供田间预冷设备与冷藏运输车的连接;同时,将运输包装内的相变材料工作时间推迟到最后一公里时段,实现快递全过程冷链。
本发明樱桃全程冷链工艺如下:
1.采收:采收时间段设定为下午16:00之后;
2.分级、分装、预冷:分级是对烂果、碰伤果、差形果进行剔除;分装是伴随分级过程进行,将好果分装入袋,袋子的容量为1.25-1.5斤,袋子采用纸质材料,纸质材料分为四层,基质层为牛皮纸,其上附有无纺布层,无纺布层上是多个圆柱形凸起,凸起为空腔,凸起和无纺布之间是高分子吸水材料(硅藻土-聚丙烯酸钠树脂),凸起材料为木质纤维素,经过食品防腐剂(琥珀酸20%,玻璃酸钠25%,单甘油酯10%,山梨酸0.05%,抗坏血酸0.05%,余量为乙醇)处理;预冷是对分级分装的樱桃小包装、运输保温泡沫箱进行预冷;将二者放入移动真空预冷集装箱,设置预冷温度为5℃;
3.装箱、装载、运输:预冷结束,将小包装,直接放入运输保温泡沫包装箱内,泡沫保温箱内部采用十字夹层分隔结构,每个区域可放于一个小包装,十字夹层分隔装置选用的是硬塑料(PP材质,塑料板面均匀打孔),夹层宽度内径10mm,放入冰袋,冰袋内容物为硫酸钠水合盐体系:75.5%Na2SO4·10H2O+3%硼砂+1.25%聚丙烯酸钠+16%NH4Cl+4%KCl+0.25%去离子水,相变温度为6.4℃,保温箱箱体顶部放置隔板层,上方放置冰袋;
4.最后一公里运输:运输包装脱离冷藏运输车后,进入棚式货车,开始最后一公里的送货;温度设置为0℃~6℃,相变材料,冰袋选择相变温度为:6.4℃的相变材料(75.5%Na2SO4·10H2O+3%硼砂+1.25%聚丙烯酸钠+16%NH4Cl+4%KCl+0.25%去离子水),相变冷能透过隔板空隙均匀分布至保温箱内;
5.接货、验收、回收:送货至顾客家中,消费者对樱桃进行接货验收,樱桃小包装取出,运输泡沫保温箱及冰袋材料回收,供二次利用。
采用本发明的工艺,能通过规范的预冷操作、吸水材料的湿度保证、严格把控与冷藏运输,延迟运输保温箱内相变材料的工作时间,实现快递运输的全过程冷链。
本发明的优点是:不仅能够保证包装内的樱桃减少挤压伤害,还能够提供包装内的高湿度无结露的环境;不仅能够提供田间预冷,还能够提供田间预冷设备与冷藏运输车的连接;同时,将运输包装内的相变材料工作时间推迟到最后一公里时段,实现快递全过程冷链。

具体实施方式
下面结合图1对本发明的具体实施方式进行详细描述。
如图1所示,一种樱桃全程冷链工艺如下:
1.采收
研究表明,对于水果采收的最佳时间段为早上8点前无露水和下午16:00后无露水。本工艺采收时间段设定为下午16:00无露水时段,此时大气温度处在相对低温,在后续工序的工作时间里,温度处在下降趋势,田间热少,呼吸强度相对降低,为后续的工艺解决节约能源问题。
2.分级、分装、预冷
樱桃脱离植株之后,带有田间热,呼吸作用和蒸腾作用仍然比较旺盛,如果不及时控制,会导致樱桃失水、失鲜直至腐烂;作为植物类商品,容易遭受微生物的侵袭而腐败。采收后对樱桃进行分级、分装和预冷能有效保证大樱桃的鲜度。
分级主要是对烂果、碰伤果、差形果进行剔除。樱桃鲜嫩多汁,烂果、碰伤果的呼吸作用强,微生物易入侵,会造成其它好果的加速变质。差形果影响果的整体等级,降低大连大樱桃的品牌识别度。
分装是伴随分级过程进行,将好果分装入袋。袋子的容量为1.25~1.5斤,袋子采用纸质材料,纸质材料分为四层,基质层为牛皮纸,其上附有无纺布层,无纺布层上是多个圆柱形凸起,凸起为空腔,凸起和无纺布之间是高分子吸水材料(硅藻土-聚丙烯酸钠树脂),凸起材料为木质纤维素,经过食品防腐剂(琥珀酸20%,玻璃酸钠25%,单甘油酯10%,山梨酸0.05%,抗坏血酸0.05%,余量为乙醇)处理。通过小包装分装减少了果蔬的挤压伤,防腐剂抑制了微生物的活动。
预冷是对分级分装的樱桃小包装、运输保温泡沫箱进行预冷。将二者放入移动真空预冷集装箱,设置预冷温度为5℃。研究显示樱桃预冷常见方法有真空预冷、风预冷、压差预冷、水预冷,真空预冷集装箱技术成熟,果蔬的失水率为1%~3%,本工艺采用吸水材料置于小包装袋内部,能吸收部分水分,保证包装空间内的高湿度环境,降低了后期运输过程中的蒸腾作用;樱桃的最佳低温储藏温度时-1℃~1℃,5℃预冷后,常温运输可保证高品质3天,对于快递运输来讲,5℃预冷在加上后面的冷藏运输,既节能又能时间由田间到餐桌的保鲜。
3.装箱、装载、运输
预冷结束,将小包装,直接放入运输保温泡沫包装箱内,减少了二次翻到,避免了因翻到带来的挤压伤,更好的保证了大樱桃的品质。泡沫保温箱内部采用十字夹层分隔结构,每个区域可放于一个小包装。十字夹层分隔装置选用的是硬塑料(PP材质,塑料板面均匀打孔),夹层宽度内径10mm,可放入标准尺寸冰袋,冰袋内容物为硫酸钠水合盐体系:75.5%Na2SO4·10H2O+3%硼砂+1.25%聚丙烯酸钠+16%NH4Cl+4%KCl+0.25%去离子水,相变温度为6.4℃(《农业工程学报》2017年第33卷第22期刊载的徐笑风等人的研究),保温箱箱体顶部放置隔板层,上方放置冰袋。
4.最后一公里运输
运输包装脱离冷藏运输车后,进入棚式货车,开始最后一公里的送货。最后一公里冷链的关键是相变材料的选取和冷藏运输的低温。现公路果蔬运输冷藏车的温区为低温0℃~10℃,可将温度设置为0℃~6℃,相变材料,可保证在运输冷藏车内不工作,冰袋选择相变温度为:6.4℃的相变材料(75.5%Na2SO4·10H2O+3%硼砂+1.25%聚丙烯酸钠+16%NH4Cl+4%KCl+0.25%去离子水),让相变材料在脱离运输冷藏车后开始工作,相变冷能透过隔板空隙均匀分布至保温箱内。更好的保证配送环节最后一公里24小时内的保冷保鲜工作。
5.接货、验收、回收
送货至顾客家中,消费者对樱桃进行接货验收,大连大樱桃小包装取出,运输泡沫保温箱及冰袋材料回收,供二次利用。

1.一种樱桃快递全程冷链工艺:
1.采收:采收时间段设定为下午16:00之后;
